Chablis é o vinho branco mais conhecido no mundo juntamente com o Champagne. Fruto de uma única uva, a Chardonnay, encontrada no mundo inteiro, é uma casta que se exprime nas formas mais variadas mas, mesmo assim, um Chablis é imediatamente reconhecível.
Localizado no departamento de Yonne, ao norte da Borgonha, a menos de 200 quilômetros de Paris, os vinhedos de Chablis tem 5.000 hectares, distribuídos por vinte cidades e vilarejos ao longo do vale do rio Serein.
São 300 pequenas propriedades que produzem 40 milhões de garrafas, dividas em quatro níveis hierárquicos: Petit Chablis, Chablis, Chablis Premier Cru e os Chablis Grand Cru.
A apelação Chablis foi oficializada em 1938, em um decreto que estabelece todos os limites da apelação, e principalmente os 7 climats Grands Crus: Blanchot, Bougros, Les Clos, Grenouilles, Les Preuses, Valmur e Vaudésir. Um mosaico de 104 hectares que os monges cistecienses da abadia de Pontigny já haviam claramente determinado desde o século XIII.
De lá para cá o perímetro não mudou, mas um oitavo Grand Cru não foi mantido em 1938, La Moutonne, um climat de 2,35ha situado 95% no Grand Cru Vaudésir e 5% sobre Les Preuses. La Moutonne produz uma garrafa mítica, elaborada por Matthieu MANGENOT, enólogo e diretor do Domaine Long-Depaquit, que neste filme conta a fantástica historia deste Grand Cru e ainda explica em detalhes a elaboração do Chablis.

Chablis
Chablis (pronounced: [ʃa.bli]) is a town and commune in the Yonne department in Burgundy in north-central France.
It lies in the valley of the River Serein.
Wine
The village of Chablis gives its name to one of the most famous French white wines. Chablis is made with Chardonnay, a grape that grows particularly well in the region.
Events
Each year the Festival du Chablisien is held May to June in Chablis, featuring classical, jazz, and world music.
The fifth stage of the 2007 Tour de France departed from Chablis towards Autun.
