Easy indulgent chocolate mousse

This recipe is a real winner and so quick to make. People don’t believe me when I tell them I make my chocolate mousse in a blender but trust me it works every time

Serves: 4

  • Prep: 15 minutes
  • Cooking: 5 minutes (+ 4 hours setting time)


Ingredients:
1/4 cup (55g) caster sugar
1/2 cup (125ml) water
2 tablespoons brandy
2 teaspoon instant coffee
200g pkt Nestle Plaistowe 70% dark cooking chocolate, finely chopped
3 egg whites
3/4 cup (185ml) thickened cream
Whipped cream, to serve
Dark and white chocolate curls, to serve

Step 1

Place the sugar, water, brandy and coffee in a medium saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves.

Step 2

Meanwhile, place the chocolate in the jug of a blender and blend until finely chopped. Pour the hot liquid over the chocolate (its important that the liquid is very hot when you pour it over the chocolate) and blend until mixture is smooth and chocolate melts. Add the egg whites and blend until just combined. Add the cream and blend until smooth.

Step 3

Pour chocolate mixture evenly among 4 serving glasses. Place on an oven tray and place in fridge for 4 hours or until set. To serve, dollop with extra cream and sprinkle with shaved chocolate.
