Glace icing is a thin mixture which will harden on the cake to give it a smooth glossy finish.

Fondant icing has a dough-like consistency and is commonly used to decorate wedding or Christmas cakes.

To make buttercream icing, use an electric mixer to beat together 200g of unsalted butter until very pale.

Step 8

Gradually add 6 cups of icing sugar while beating.

Step 9

Add half a cup of milk and beat until well combined.

Step 10

If you would like to colour the icing, divide the frosting into small bowls.

Add colouring gradually until you've reached the desired shade. Paste colouring offers a greater variety of shades and a more intense hue than liquids.

Use a small palette knife or round-bladed knife to spread the icing.
