Shrimp scampi just got better with a blast of Cajun flavor. Jen shows you how to make this simple delicious recipe.

INGREDIENTS
For the rice:
2 ½ cups chicken broth
1 cup long grain rice
½ cup onion, minced
¼ cup celery, minced
¼ cup green bell pepper, minced
1 garlic clove, minced
3 tbsp butter
¼ tsp paprika
¼ tsp cayenne pepper
½ tsp dried oregano
½ tsp dried basil
Salt & pepper to taste
For the shrimp:
1 lb large shrimp, peeled and deveined
2 tsp Cajun seasoning
1 tbsp olive oil
2 tsp garlic, minced
2 tbsp butter
¼ cup white wine
1 tbsp freshly squeezed lemon juice
Lemon zest
Salt & pepper to taste
Finely chopped parsley
RECIPE
In a pot over medium heat, add butter, onion, celery, bell pepper, and garlic. Saute the vegetables for about 5 minutes, and then add the seasonings. Stir in the rice and toss well to coat.
Once the grains are lightly golden, stir in the chicken broth. Cover and let simmer to cook for about 15-20 minutes. Once cooked and all the liquid has absorbed, fluff with a fork.
Rub the shrimp with Cajun seasoning, salt, and pepper. Heat olive oil in a pan on medium heat. Add shrimp and cook for 2-3 minutes, just until seared but not fully cooked. Remove from pan and set aside.
Add garlic to the pan, sauté for a minute, and then stir in the butter. Pour the white wine and lemon juice and allow to slightly thicken.
Turn off the heat and toss the shrimp and parsley in the sauce. Serve over the rice.

Here is what you'll need!
Servings: 2-3
INGREDIENTS
Dressing
⅓ cup minced shallots
⅓ cup olive oil
1 tablespoon mustard
1 tablespoon lemon juice
1 teaspoon pepper
1 teaspoon salt
½ teaspoon lemon zest
Salad
3 cups water
1 cup wild rice
2 cups arugula
1 cup pomegranate seeds
1/3 cup pine nuts
1/4 cup feta cheese
PREPARATION
1. Whisk dressing ingredients together in a small bowl, set aside until ready to use.
2. Bring 3 cups of water to a boil. Add wild rice and bring back to a boil. Cover and let simmer for 45 minutes. Once all of the water has been absorbed, fluff rice and transfer to large salad bowl.
3. Allow the rice to come to room temperature so it doesn’t wilt the rest of the salad ingredients.
4. Add all salad ingredients to the salad bowl. Add as much dressing as you like, toss and serve. Top with more feta cheese (optional).
5. Enjoy!

Angourie is a small coastal village in the Clarence Valley Council of New South Wales, Australia. It is south of Yamba, New South Wales.
In 2006, Angourie had a population of 170 people (excluding visitors). The median age of the population was 47.
Towns that surround Angourie are Yamba and Wooloweyah.
A local attraction of note is the Blue and Green Pools, freshwater pools created when the old quarries hit underground springs. The story goes that the miners working on the quarries went home one night and came back the next morning to find the quarries filled with water. The pools are less than 20 metres from the ocean, and the two bodies of water are separated by mounds of quarried rock and earth.

Rice is the seed of the monocot plants Oryza sativa (Asian rice) or Oryza glaberrima (African rice). Here is what you'll need! Servings: 2-3 INGREDIENTS Dressing ⅓ cup minced shallots ⅓ cup olive oil 1 tablespoon mustard 1 tablespoon lemon juice 1 teaspoon pepper 1 teaspoon salt ½ teaspoon lemon zest Salad 3 cups water 1 cup wild rice 2 cups arugula 1 cup pomegranate seeds 1/3 cup pine nuts 1/4 cup feta cheese PREPARATION 1. INGREDIENTS
For the rice:
2 ½ cups chicken broth
1 cup long grain rice
½ cup onion, minced
¼ cup celery, minced
¼ cup green bell pepper, minced
1 garlic clove, minced
3 tbsp butter
¼ tsp paprika
¼ tsp cayenne pepper
½ tsp dried oregano
½ tsp dried basil
Salt & pepper to taste
For the shrimp:
1 lb large shrimp, peeled and deveined
2 tsp Cajun seasoning
1 tbsp olive oil
2 tsp garlic, minced
2 tbsp butter
¼ cup white wine
1 tbsp freshly squeezed lemon juice
Lemon zest
Salt & pepper to taste
Finely chopped parsley
RECIPE
In a pot over medium heat, add butter, onion, celery, bell pepper, and garlic. Saute the vegetables for about 5 minutes, and then add the seasonings. Stir in the rice and toss well to coat.
Once the grains are lightly golden, stir in the chicken broth. Cover and let simmer to cook for about 15-20 minutes. Once cooked and all the liquid has absorbed, fluff with a fork.
Rub the shrimp with Cajun seasoning, salt, and pepper. Heat olive oil in a pan on medium heat. Add shrimp and cook for 2-3 minutes, just until seared but not fully cooked. Remove from pan and set aside.
Add garlic to the pan, sauté for a minute, and then stir in the butter. Pour the white wine and lemon juice and allow to slightly thicken.
Turn off the heat and toss the shrimp and parsley in the sauce. Serve over the rice.
