An oil is any neutral, nonpolar chemical substance that is a viscous liquid at ambient temperatures and is both hydrophobic (immiscible with water, literally "water fearing") and lipophilic (miscible with other oils, literally "fat loving"). Oils have a high carbon and hydrogen content and are usually flammable and slippery.
The general definition of oil includes classes of chemical compounds that may be otherwise unrelated in structure, properties, and uses. Oils may be animal, vegetable, or petrochemical in origin, and may be volatile or non-volatile. They are used for food, fuel, lubrication, and the manufacture of paints, plastics, and other materials. Specially prepared oils are used in some religious ceremonies as purifying agents.
First attested in English 1176, the word oil comes from Old French oile, from Latin oleum, which in turn comes from the Greek ἔλαιον (elaion), "olive oil, oil" and that from ἐλαία (elaia), "olive tree", "olive fruit". The earliest attested forms of the word are the Mycenaean Greek 𐀁𐀨𐀺, e-ra-wo and 𐀁𐁉𐀺, e-rai-wo, written in the Linear B syllabic script.
An oil spill is the release of a liquid petroleum hydrocarbon into the environment, especially marine areas, due to human activity, and is a form of pollution. The term is usually applied to marine oil spills, where oil is released into the ocean or coastal waters, but spills may also occur on land. Oil spills may be due to releases of crude oil from tankers, offshore platforms, drilling rigs and wells, as well as spills of refined petroleum products (such as gasoline, diesel) and their by-products, heavier fuels used by large ships such as bunker fuel, or the spill of any oily refuse or waste oil.
Oil spills penetrate into the structure of the plumage of birds and the fur of mammals, reducing its insulating ability, and making them more vulnerable to temperature fluctuations and much less buoyant in the water. Cleanup and recovery from an oil spill is difficult and depends upon many factors, including the type of oil spilled, the temperature of the water (affecting evaporation and biodegradation), and the types of shorelines and beaches involved. Spills may take weeks, months or even years to clean up.
An oil platform, offshore platform, or (colloquially) oil rig is a large structure with facilities to drill wells, to extract and process oil and natural gas, or to temporarily store product until it can be brought to shore for refining and marketing. In many cases, the platform contains facilities to house the workforce as well.
Depending on the circumstances, the platform may be fixed to the ocean floor, may consist of an artificial island, or may float. Remote subsea wells may also be connected to a platform by flow lines and by umbilical connections. These subsea solutions may consist of one or more subsea wells, or of one or more manifold centres for multiple wells.
Around 1891, the first submerged oil wells were drilled from platforms built on piles in the fresh waters of the Grand Lake St. Marys (a.k.a. Mercer County Reservoir) in Ohio. The wide but shallow reservoir was built from 1837 to 1845 to provide water to the Miami and Erie Canal.
Around 1896, the first submerged oil wells in salt water were drilled in the portion of the Summerland field extending under the Santa Barbara Channel in California. The wells were drilled from piers extending from land out into the channel.

Peak oil, an event based on M. King Hubbert's theory, is the point in time when the maximum rate of extraction of petroleum is reached, after which the rate of production is expected to enter terminal decline. Peak oil theory is based on the observed rise, peak, (sometimes rapid) fall, and depletion of aggregate production rate in oil fields over time. Mostly due to the development of new production techniques and the exploitation of unconventional supplies, Hubbert's original predictions for world production proved premature. Peak oil is often confused with oil depletion; peak oil is the point of maximum production, while depletion refers to a period of falling reserves and supply.

Nearly 9,000 gallons of crude oil has spilled into the Gulf of Mexico off the coast of Louisiana. The spill came from a group of subsea wells run by Shell near the Shell’s Glider field, an underwater pipe system that connects four subsea wells to the Brutus platform. The oil and gas company has reported that the leak has been contained and that two separate companies are contracted to begin cleanup. Since the 2010 BP oil spill The Bureau of Safety and Environmental Enforcement has been more stringent about restrictions, tightening regulations on offshore drilling and cleanup. Perdido is the deepest floating oil rig (platform) in the world at a water depth of about 2450 meters operated by the Shell Oil Company in the Gulf of Mexico. The Perdido is located in the Perdido fold belt which is a rich discovery of crude oil and natural gas that lies in water that is nearly 8000 feet deep. The platform's peak production will be 100,000 barrels of oil equivalent per day. At 267 meters, the Perdido is nearly as tall as the Eiffel Tower. The Troll A platform is a condeep offshore natural gas platform in the Troll gas field off the west coast of Norway. It is the tallest structure that has ever been moved to another position, relative to the surface of the Earth, and is among the largest and most complex engineering projects in history. The platform was a televised sensation when it was towed into the North Sea in 1996, where it is now operated by Statoil. Troll A was built by Norwegian Contractors for Norske Shell, with base construction beginning in July 1991 at a cost of 4150 million NOK, or approximately US$650,000,000 at the time. Vega oil field is located in the Sicilian Channel, 20 km south of Pozzallo (Italy). In production since 1987, Vega platform was developed with 24 wells, and located in 130 metres of water. The platform can process 60.000 barrels of oil per day. Close to Vega platform there’s a floating storage and offloading tanker (Leonis) with a capacity of 110,000 tons to temporary store production. The crude oil is transported from the Leonis to refineries by tankers shuttles.
