Why you should be eating sweet and perfectly ripe tomatoes during the summer.

Thanks to a rich concentration of lycopene, Tomatoes have been shown to reduce the risk of heart disease. Research also shows that the lycopene present in ocular tissues helps prevent light-induced damage to the retina and other areas of the eye. Unlike many vitamins and minerals, absorption of lycopene increases with temperature, so eating cooked tomato sauce is even more beneficial.

Harvest time for tomatoes is generally from the third week in July and continues into late September.
