History
The history of the Tepebağ tumulus in the middle of Adana dates to the Neolithic Period, 6000 B.C., and the time of the first human settlements. It is considered to be the oldest city of the Çukurova region. A place called Adana is mentioned by name in a Sumerian epic, the Epic of Gilgamesh, but the geography of this work is too imprecise to identify its location.
According to the Hittite inscription of Kava, found in Hattusa (Boğazkale), Kizzuwatna was the first kingdom that ruled Adana, under the protection of the Hittites by 1335 BC. At that time, the name of the city was Uru Adaniyya, and the inhabitants were called Danuna. Beginning with the collapse of the Hittite Empire, c. 1191-1189 BC, invasions from the west caused a number of small kingdoms to take control of the plain, as follows: Quwê Assyrians, 9th century BC; Persians, 6th century BC; Alexander the Great in 333 BC; Seleucids; the pirates of Cilicia; Roman statesman Pompey the Great; and the Armenian Kingdom of Cilicia (Cilician Kingdom).

Adana kebabı (colloquially known as Kıyma kebabı) is a long, hand-minced meat kebab mounted on a wide iron skewer and grilled on an open mangal filled with burning charcoal. The culinary item is named after Adana, the fifth largest city of Turkey and was originally known as the "Kıyma kebabı" (lit: minced meat kebab) or Kıyma in Adana-Mersin and the southeastern provinces of Turkey.
The kebab is served over the flatbread used to catch the drippings. It is accompanied by roasted tomatoes, green or red peppers and julienned onions with parsley and sumac. Other typical mezes in Adana-Mersin served with the kebab include red pepper ezme with pomegranate molasses, fresh mint and estragon leaves, braised shallot hearts with olive oil and pomegranate molasses, pickled small green chili peppers, and, around Mersin, green shallot stems with slices of bitter orange, citron, lime and lemon. Many restaurants around Adana will also bring hot hummus with butter topped with pastırma on the side.[3]
The way to eat "Porsiyon" is to skin and crush the charred tomatoes and peppers into a paste, to put them in a piece of flatbread with part of the kebab, topped by a generous pinch of the onion-sumac-parsley mixture, and to wrap the whole thing into a few small thick dürüms.
Ayran and Şalgam are two staple beverages consumed with kebab in daytime. On hot summer evenings, ice-cold Rakı alongside Şalgam is often preferred.

Adana
Adana (pronounced [aˈda.na]) is a major city in southern Turkey. The city is situated on the Seyhan river, 35 km (22 mi) inland from the Mediterranean Sea, in south-central Anatolia. It is the administrative seat of the Adana Province and has a population of 1.71 million, making it the fifth most populous city in Turkey. Adana-Mersin polycentric metropolitan area, with a population of 3 million, stretches over 70 km (43 mi) east-west and 25 km (16 mi) north-south; encompassing the cities of Mersin, Tarsus and Adana.
Adana lies in the heart of Çukurova, a geo-cultural region that covers the provinces of Mersin, Adana, Osmaniye, and Hatay. Home to 6 million people, Çukurova is one of the largest population concentrations in Turkey, as well as the most agriculturally productive area, owing to its large stretch of flat, fertile land.
Etymology
According to numerous sources, the name Adana is derived from the Hittite URUAdaniya of Kizzuwatna, while others assert that it is related to the legendary character Danaus, or to the Danaoi, a mythological Greek tribe who came from Egypt and established themselves in the Greek city Argos. The earlier Egyptian texts for a country Danaja are inscriptions from Thutmosis II (1437 BC) and Amenophis III (1390-1352 BC). After the collapse of the Mycenean civilization (1200 BC) some refugeees from the Aegean area went to the coast of Cilicia. The inhabitants Dananayim or Danuna are identified as one group of the sea-peoples who attacked Egypt on 1191 BC during the reign of Ramesses III. Denyen are identified as inhabitants of the city Adana. It is also possible that the name is connected with the PIE da-nu (river) Da-na-vo (people living by the river), Scythian nomad people, water demons in Rigveda (Danavas).

The Seljuk Turks began migrating into the area in the 11th century, starting the process of Turkification, which was greatly accelerated by the Seljuk victory over the Byzantines at the Battle of Manzikert in 1071. The Seljuk Sultanate of Rûm ruled Anatolia until the Mongol invasion in 1243, upon which it disintegrated into several small Turkish beyliks.

Especially in the western parts of Turkey, where olive trees grow abundantly, olive oil is the major type of oil used for cooking.[3] The cuisines of the Aegean, Marmara and Mediterranean regions are rich in vegetables, herbs, and fish. Central Anatolia has many famous specialties, such as keşkek (kashkak), mantı (especially from Kayseri) and gözleme.
A specialty's name sometimes includes that of a city or region, either in or outside of Turkey, and may refer to the specific technique or ingredients used in that area. For example, the difference between urfa kebab and adana kebab is the thickness of the skewer and the amount of hot pepper that kebab contains. Urfa kebab is less spicy and thicker than adana kebab.

Adana is a city in southeastern Turkey in the middle of the fertile Cilician (Çukurova) Plain. Its history is ancient; this was the area of the Hittite empire (c. 1800 B.C.). The cuisine of Adana has some influence from nearby Syria, but its most famous contribution to Turkish cuisine is the Adana kebap or köfte, a spicy hot mixture of ground lamb that is grilled. When you come across very spicy Turkish food in western Anatolia, it is a sure sign that it is imported from eastern Anatolia, where they enjoy hotter foods. Adana's interest in spicy foods might have a medieval origin for in the time of Marco Polo the nearby port of Ayas was an important transhipment place for Asiatic spices and wares; the Venetians, perpetually mesmerized by spices, even had a bailo (consul) there. I've changed the basic recipe so one is using ground meat instead of chunks of meat.
The people of this region have a passion for spicy hot food. By far its best-known dish is the namesake Adana Kebap -- a hot, grilled meat specialty. And when the cooking of it begins, guests gather round the 'mangal' grill to engage in pleasant conversation.
Serve the grilled meat, tomato, and green peppers on an oblong platter surrounded by chopped parsley and fine onion slivers seasoned with sumac.
