How to make mole sauce. This mole sauce recipe is spectacular. It does take some work but it is well worth it. Use it for Mexican mole dishes. You can freeze it for up to six months.

Makes 6 cups
6 ancho chili pods
6 guajillo chili pods
6 arbol chili pods
½ cup raisins
8 garlic cloves
1 medium white onion – peeled and quartered
3 medium plum tomato
3 to 4 medium tomatillo
1 inch piece cinnamon stick
1/8th tsp. anise seeds
1/8th tsp. coriander seeds
1 TBS sesame seeds
4 cloves
1 tsp. dried oregano
½ tsp. dried thyme
1 TBS vegetable shortening or lard
½ cup raw almonds
½ cup walnuts
¼ cup raw peanuts
1 corn tortilla
½ cup soaking liquid
2 cups chicken stock
5.5 oz. Mexican drinking chocolate (1 round tablet) or 2 oz. bittersweet chocolate
Remove the seeds and stem from the dry chili pods. Place them in a dry skillet and toast them until starting to blister. Place in a bowl. Add the raisins to the skillet and cook for a few minutes until puffed. Add to the chilies. Cover with boiling water and weigh down with a plate. Allow soaking for about 30 minutes.
While the pods are soaking, add the garlic and onion to the skillet. Cook until charred on all sides. Set aside. When garlic is cool enough, peel it. Add the tomatoes to the skillet. Repeat the process.
Add the sesame seeds, anise, coriander and cinnamon to the pan. Toast for a couple of minutes – until fragrant – stirring constantly. Place in a mortar or coffee-grinder with the cloves and turn into a powder.
Add shortening to the skillet and melt. Add the nuts and brown. Set aside. Add the tortilla to the shortening and brown well.
Place the hydrated chilies and raisins in a blender with ½ a cup of soaking liquid. Blend well. Transfer to a sieve and strain into a bowl. Rinse the blender and add all of the other ingredients – except the chocolate – and blend. Pass through a sieve into the same bowl where the chilies are. Mix sauce well.
Place the sauce in a large pot – it will spatter so be careful – and bring to a simmer. Simmer for 20 minutes. Add the chocolate and stir until melted. Simmer for another 15 to 20 minutes. Season with salt and pepper.
You can keep this sauce for up to 6 months in the freezer.

Making Mole From Coatzacoalcos, Veracruz
Ingredients:
9lbs chicken breast with or without bones
pepper to taste
sugar to taste
1 medium onion
half head of garlic
10 chile huajillos
10 chile anchos
2 tomatoes
1/4 cup peanuts
1/4 cup almonds
1 fried tortilla or 10 tortilla chips
2 abuelita chocolate rounds
15-20 raisins
3 very ripe plantains
Summary:
1. Boil chicken with half onion, garlic, & pepper until cooked thoroughly (approx. 20-30 min)
2. Remove seeds and veins from chiles
3. Peal and fry plantains
4. Slice and fry tomatoes and other half of onion
5. Fry chiles
6. Separate chicken from broth
7. Blend batches or broth and all other ingredients except for chocolate and chicken
8. Add mole sauce to pot and cook 10 minutes while adding in chocolate pieces
9. Add sugar to taste
10. Add chicken pieces
10. Enjoy with a side of rice and/or warm tortillas

Here is my recipe for a mildly spicy, sweet and rich mole sauce. This chicken mole recipe is a great make ahead dinner idea. For a spicier sauce you can add some chipotle chiles. I love mole.
Well, the mole sauce is a combination of different ingredients, starting with the peppers. We have the chile ancho, and we have the chile guajillo. And there's a couple of other dried chilies, too, in the mole. Those are the ones that I have to bring today. Also chocolate.
And we have some pine nuts, sesame seeds. It has onion. It has a little bit of garlic. It has different oils in it. And it's a very rich and healthy sauce. And you can actually use it for chicken. You can use it for venison. You can use it for any dish that you like.
And this is the mole here?
That is the mole that we have already, that one. Yeah. We have it already cooked. You want to cook the mole sauce like a creamy consistency. You don't want it too thick, because otherwise it will be too heavy for the dish.
Yeah, it's actually-- there are a good variety of different moles. This one is a chocolate.
Do they always have chocolate in them?
No, nope. Sometimes you get the mole verde. That will not have chocolate in it.
So what's in that mole verde?
That will be very heavy on the cilantro, on the pine nuts, paso, Serrano peppers. It will be more on the high side of garlic and onions.
So mole is like a Mexican curry? The way it changes and had different flavors and different--
Correct. Yeah, this sauce is specifically from Puebla. So that--
The chocolate one?
The chocolate one, yes. Then you sprinkle a little bit of the sesame seed on top of it. And then you're going to sprinkle a little bit of raw onions. You can use the red onions or white onions.
But you have to tell me what mole means.
What it means in ancient word the Aztecs have, and it means sauce.
And there are many sauces. There are many moles.
Yeah. That's what these moles are. Yeah, it's pretty funny. Mole verde.

Directions:
Chicken marinate with chilly powder, salt and pan fry them till chicken is tender.
Cut Tomatoes into half and char on a griddle till it is soft.
In a pan dry roast the following ingredients Coriander seeds, cumin seeds, cinnamon sticks, cloves and then add allspice, add fennel seeds, almonds, raisins, chopped garlic, add chopped onions, cook this and add oil, oregano, add roasted tomatoes, chicken stock, salt and let it cool down, put it in the blender and make a paste. Heat olive oil and add red chilly paste, cook it for a minute and add made masala paste cook this mixture for some time, and add melted bitter chocolate, salt, Mix it well cook for some more minutes. And pour the sauce on the chicken pieces.
Serve this with Mexican rice.

Mole (Spanish pronunciation: [ˈmole]) (Mexican Spanish, from Nahuatl mōlli, "sauce") is the generic name for a number of sauces used in Mexican cuisine, as well as for dishes based on these sauces. Outside of Mexico, it often refers to a specific sauce which is known in Spanish by the more specific name mole poblano. In contemporary Mexico, the term is used for a number of sauces, some quite dissimilar to one another, including black, red, yellow, colorado, green, almendrado, and pipián. The sauce is most popular in the central and southern regions of the country with those from Puebla and Oaxaca the best known, but 60% of the mole eaten in the country comes from San Pedro Atocpan near Mexico City. The popularity of the sauce, especially at major celebrations, is such that 99% of all Mexicans have tried at least one version of it.
Three states in Mexico claim to be the origin of mole, Puebla, Oaxaca and Tlaxcala. The states with the best known moles are Puebla and Oaxaca, but other regions in Mexico also make various types of mole sauces.

Well, the mole sauce is a combination of different ingredients, starting with the peppers. We have the chile ancho, and we have the chile guajillo. And there's a couple of other dried chilies, too, in the mole. Those are the ones that I have to bring today. Also chocolate. And we have some pine nuts, sesame seeds. It has onion. It has a little bit of garlic. It has different oils in it. And it's a very rich and healthy sauce. And you can actually use it for chicken. You can use it for venison. You can use it for any dish that you like. And this is the mole here? That is the mole that we have already, that one. Yeah. We have it already cooked. You want to cook the mole sauce like a creamy consistency. You don't want it too thick, because otherwise it will be too heavy for the dish. Yeah, it's actually-- there are a good variety of different moles. This one is a chocolate. Do they always have chocolate in them? No, nope. Sometimes you get the mole verde. That will not have chocolate in it. So what's in that mole verde? That will be very heavy on the cilantro, on the pine nuts, paso, Serrano peppers. It will be more on the high side of garlic and onions. So mole is like a Mexican curry? The way it changes and had different flavors and different-- Correct. Yeah, this sauce is specifically from Puebla. So that-- The chocolate one? The chocolate one, yes. Then you sprinkle a little bit of the sesame seed on top of it. And then you're going to sprinkle a little bit of raw onions. You can use the red onions or white onions. But you have to tell me what mole means. Makes 6 cups
6 ancho chili pods
6 guajillo chili pods
6 arbol chili pods
½ cup raisins
8 garlic cloves
1 medium white onion – peeled and quartered
3 medium plum tomato
3 to 4 medium tomatillo
1 inch piece cinnamon stick
1/8th tsp. anise seeds
1/8th tsp. coriander seeds
1 TBS sesame seeds
4 cloves
1 tsp. dried oregano
½ tsp. dried thyme
1 TBS vegetable shortening or lard
½ cup raw almonds
½ cup walnuts
¼ cup raw peanuts
1 corn tortilla
½ cup soaking liquid
2 cups chicken stock
5.5 oz. Mexican drinking chocolate (1 round tablet) or 2 oz. bittersweet chocolate
Remove the seeds and stem from the dry chili pods. Place them in a dry skillet and toast them until starting to blister. Place in a bowl. Add the raisins to the skillet and cook for a few minutes until puffed. Add to the chilies. Cover with boiling water and weigh down with a plate. Allow soaking for about 30 minutes.
While the pods are soaking, add the garlic and onion to the skillet. Cook until charred on all sides. Set aside. When garlic is cool enough, peel it. Add the tomatoes to the skillet. Repeat the process.
Add the sesame seeds, anise, coriander and cinnamon to the pan. Toast for a couple of minutes – until fragrant – stirring constantly. Place in a mortar or coffee-grinder with the cloves and turn into a powder.
Add shortening to the skillet and melt. Add the nuts and brown. Set aside. Add the tortilla to the shortening and brown well.
Place the hydrated chilies and raisins in a blender with ½ a cup of soaking liquid. Blend well. Transfer to a sieve and strain into a bowl. Rinse the blender and add all of the other ingredients – except the chocolate – and blend. Pass through a sieve into the same bowl where the chilies are. Mix sauce well.
Place the sauce in a large pot – it will spatter so be careful – and bring to a simmer. Simmer for 20 minutes. Add the chocolate and stir until melted. Simmer for another 15 to 20 minutes. Season with salt and pepper.
You can keep this sauce for up to 6 months in the freezer.

5.5 oz. Mexican drinking chocolate (1 round tablet) or 2 oz. bittersweet chocolate
Remove the seeds and stem from the dry chili pods. Place them in a dry skillet and toast them until starting to blister. Place in a bowl. Add the raisins to the skillet and cook for a few minutes until puffed. Add to the chilies. Cover with boiling water and weigh down with a plate. Allow soaking for about 30 minutes.
While the pods are soaking, add the garlic and onion to the skillet. Cook until charred on all sides. Set aside. When garlic is cool enough, peel it. Add the tomatoes to the skillet. Repeat the process.
Add the sesame seeds, anise, coriander and cinnamon to the pan. Toast for a couple of minutes – until fragrant – stirring constantly. Place in a mortar or coffee-grinder with the cloves and turn into a powder.
Add shortening to the skillet and melt. Add the nuts and brown. Set aside. Add the tortilla to the shortening and brown well.
Place the hydrated chilies and raisins in a blender with ½ a cup of soaking liquid. Blend well. Transfer to a sieve and strain into a bowl. Rinse the blender and add all of the other ingredients – except the chocolate – and blend. Pass through a sieve into the same bowl where the chilies are. Mix sauce well.
Place the sauce in a large pot – it will spatter so be careful – and bring to a simmer. Simmer for 20 minutes. Add the chocolate and stir until melted. Simmer for another 15 to 20 minutes. Season with salt and pepper.
You can keep this sauce for up to 6 months in the freezer.

I love mole.
Well, the mole sauce is a combination of different ingredients, starting with the peppers. We have the chile ancho, and we have the chile guajillo. And there's a couple of other dried chilies, too, in the mole. Those are the ones that I have to bring today. Also chocolate.
And we have some pine nuts, sesame seeds. It has onion. It has a little bit of garlic. It has different oils in it. And it's a very rich and healthy sauce. And you can actually use it for chicken. You can use it for venison. You can use it for any dish that you like.
And this is the mole here?
That is the mole that we have already, that one. Yeah. We have it already cooked. You want to cook the mole sauce like a creamy consistency. You don't want it too thick, because otherwise it will be too heavy for the dish.
Yeah, it's actually-- there are a good variety of different moles. This one is a chocolate.
Do they always have chocolate in them?
No, nope. Sometimes you get the mole verde. That will not have chocolate in it.
So what's in that mole verde?
That will be very heavy on the cilantro, on the pine nuts, paso, Serrano peppers. It will be more on the high side of garlic and onions.
So mole is like a Mexican curry? The way it changes and had different flavors and different--
Correct. Yeah, this sauce is specifically from Puebla. So that--
The chocolate one?
The chocolate one, yes. Then you sprinkle a little bit of the sesame seed on top of it. And then you're going to sprinkle a little bit of raw onions. You can use the red onions or white onions.
But you have to tell me what mole means.
What it means in ancient word the Aztecs have, and it means sauce.

In a pan dry roast the following ingredients Coriander seeds, cumin seeds, cinnamon sticks, cloves and then add allspice, add fennel seeds, almonds, raisins, chopped garlic, add chopped onions, cook this and add oil, oregano, add roasted tomatoes, chicken stock, salt and let it cool down, put it in the blender and make a paste. Heat olive oil and add red chilly paste, cook it for a minute and add made masala paste cook this mixture for some time, and add melted bitter chocolate, salt, Mix it well cook for some more minutes. And pour the sauce on the chicken pieces.
Serve this with Mexican rice.

Directions:
Chicken marinate with chilly powder, salt and pan fry them till chicken is tender.
Cut Tomatoes into half and char on a griddle till it is soft.
