Chocolate truffle Easter eggs
Chocolate truffles are a delicious sweet treat and a favourite for Christmas. Now you can make them for Easter with this recipe for gorgeous Easter egg-shaped truffles drizzled with white chocolate. Because you can never have too much chocolate!

ingredients
- 150g Nestlé cooking chocolate dark bits
- 1/3 cup + 3 tbsp Coles thickened cream
- 1 tsp Queen vanilla extract
- Small pinch of salt
- ½ cup Cadbury Bournville cocoa powder
- 50g Nestlé cooking chocolate white melts
- CSR soft icing sugar, to garnish
method
- Place the chocolate into a large stainless steel or glass mixing bowl set over a medium saucepan of boiling water. Stir chocolate until it melts, then add cream, vanilla and salt. Mix well until chocolate and cream have formed a uniform mixture, then pour into a small shallow baking dish and set in the freezer to cool completely.
- Once chocolate is cool and set, remove chocolate from freezer and using a teaspoon, scoop the set chocolate into heaped teaspoon-sized portions and onto a tray lined with baking paper. Place tray in freezer for 5-10 minutes to let chocolate chill again and put cocoa powder into a medium mixing bowl. Remove chocolate from freezer and very quickly roll the portioned chocolate into egg shapes and place them into the bowl of cocoa powder.
- Roll the chocolate eggs to coat completely in the cocoa powder and place in refrigerator immediately on a small tray lined with baking paper.
- To melt the white chocolate, place it in a heatproof bowl, set over a medium saucepan of boiling water.
- Remove truffle from the refrigerator and using a small spoon, drizzle the melted white chocolate over the chocolate eggs in desired fashion. Return truffles to refrigerator until serving.
- Truffles will remain fresh when covered in the refrigerator for up to 3 days. To finish, sift icing sugar over truffles on a plate and serve immediately.

notes
- Wearing rubber gloves makes the rolling of the truffles in cocoa powder much easier as it protects the chocolate from the heat of your hands.
- Roll the truffles in cocoa powder in small batches so you can keep the rest cool in the fridge.
