Soba /ˈsoʊbə/ (そば or 蕎麦) is the Japanese name for buckwheat. It is synonymous with a type of thin noodle made from buckwheat flour, and in Japan can refer to any thin noodle (unlike thick wheat noodles, known as udon). Soba noodles are served either chilled with a dipping sauce, or in hot broth as a noodle soup. It takes three months for buckwheat to be ready for harvest, so it can be harvested four times a year, mainly in spring, summer, and autumn. In Japan, buckwheat is produced mainly in Hokkaido. Soba that is made with newly harvested buckwheat is called "shin-soba". It is sweeter and more flavorful than regular soba.
In Japan, soba noodles are served in a variety of settings: they are a popular inexpensive fast food at railway stations<ref "name= Mente">Mente, Boye Lafayette De (2007). Tatsuru Rai is the owner and chef of Sobatei Rakuichi in Niseko, Hokkaido. He operates the 12-seat restaurant, considered one of the world’s great soba houses, with his wife Midori. He mixes, kneads, and cuts all of the buckwheat to order. He was the first person to appear on stage at the fourth annual MAD Symposium, in Copenhagen. Soda is Japanese traditional food. and I think making soba noodle is one of the most difficult thing to master. please note, Don't try this recipe. lol to make 100% soba noodle, You'll need stone ground and really fresh buckwheat flour. I think it is almost impossible to get such buckwheat flour outside of Japan. When you come to Japan, go to soba restaurant where serves 100% buckwheat noodles(it's called "Ju-wari soba"). Today I made easy Cold Soba Noodles (Buckwheat Noodles). Cold Soba Noodles is great for stimulating lost appetite from summer heat. You should try it! * Ingredients soba noodles (buckwheat noodles), tsuyu or soba suace, water, wasabi(*optional) garnish: grated radish, radish sprouts or spring onion, laver * Recipe 1. Mix the tsuyu, water in a bowl and Chill in the freezer until very cold. The water:sauce ratio varies on the product, so check the directions on the sauce bottle. 2. Add dried soba noodles to a pot of boilling water and cook for 4-5 minutes 3. Rince with cold water to prevent further cooking, shake off any excess water. 4.
