Pork ribs are one of a "blessing" in Bali culinary scene. Meaty pork ribs that are well marinated in various traditional spices never fail to indulge your appetite. This time from Nihiwatu Resort's spa safari area, Chef Will Meyrick presents Balinese Style Pork Ribs with Special Red Paste.
He cooks his own "wilder" version of pork ribs on a charcoal grill, overlooking the sea. After marinating the huge meaty pork ribs for a couple hours, prepare the red paste (bumbu merah), a spicy mix which consists of hot chilli, shallots, garlic, galangal, candle nut, bird’s eye chilli, coriander, white pepper, salt, palm sugar, and lemon juice to balance the sugar levels in it. Stir-fry the paste, then lightly marinade onto the ribs. Cook for 8 minutes on each side until caramelized and slighty charred for full flavour.

Pork ribs are one of a "blessing" in Bali culinary scene. Meaty pork ribs that are well marinated in various traditional spices never fail to indulge your appetite. This time from Nihiwatu Resort's spa safari area, Chef Will Meyrick presents Balinese Style Pork Ribs with Special Red Paste.
He cooks his own "wilder" version of pork ribs on a charcoal grill, overlooking the sea. After marinating the huge meaty pork ribs for a couple hours, prepare the red paste (bumbu merah), a spicy mix which consists of hot chilli, shallots, garlic, galangal, candle nut, bird’s eye chilli, coriander, white pepper, salt, palm sugar, and lemon juice to balance the sugar levels in it. Stir-fry the paste, then lightly marinade onto the ribs. Cook for 8 minutes on each side until caramelized and slighty charred for full flavour.
