Sweet Potatoes and
Green Beans Diablo


4 oz fresh green beans, tips and strings removed
1 (9 oz.) sweet potato, peeled, cut into ¼" lengthwise strips
1 T Dijon mustard
1 T honey
1/4 t cornstarch
1/8 t dried dill
salt and pepper to taste

Light grill or preheat oven. On a 14" square sheet of heavy-duty aluminum foil place sweet potato strips and green beans in center. In small bowl, combine remaining ingredients; blend well. Drizzle over vegetables; stir gently to coat. Wrap and seal securely with tight double folds. Place foil packet over medium heat or on charcoal grill 4 to 6 inches from flame (or medium-high heat on gas barbecue). Cook 20 to 25 minutes or until vegetables are crisp-tender. Open packet; stir gently. Serve immediately.

Oven Option: Heat oven to 425°F. Prepare vegetables in foil packet as directed above. Bake for 35-40 minutes or until vegetables are crisp-tender. Open packet; stir gently.

Healing Heart Hint

Sweet potatoes are not related to white potatoes. Persons with allergies to white potatoes can eat sweet potatoes or yams, which contain beta-carotene, an antioxidant known to fight cancer. For a snack treat, slice sweet potatoes, sprinkle with cinnamon or other spices and bake in a medium oven until crispy.
