Coconut Crusted
Fried Cornish Gamehens with Truffle Honey- inspired by a coconutty little chicken shit of an ex...
Yield: 6 servings
Ingredients:
o 3 Cornish Gamehens cut in 10 pieces (cut the 2 breast halves in half)
o 1 quart of buttermilk
o 3 lemons, zested on a microplane
o 3 cloves of garlic, shaved on a microplane
o 2 T cayenne
o 2 T paprika
o 2 T onion powder
o 1 T herbes de
Provence
o salt & pepper to taste
Breading:
o
1 1/2-2 cups of unbleached flour
o 1 1/2-2 cups unsweetened shredded coconut
o 1 1/2-2 cups panko bread crumbs
Peanut oil for deep frying
Garnish:
o
3/4 cup of honey
o 1 T truffle oil
o 3 scallions, chopped small on a bias, white & green parts
o parmesan cheese, shaved
Cut Cornish game hens. Add lemon zest, garlic & seasonings. Pour buttermilk on top, stir & marinate for 4 hours or overnight.
While dredging & breading the marinated pieces, heat peanut oil in a enameled cast iron pot to 335 & fry until golden brown.
Place on a parchment paper lined cooling rack or on paper towels. Garnish with truffle honey drizzle, scallions, shaved parmesan cheese & enjoy!

Ingredients:
o 1 part Gloria Ferrer
Carneros Cuvée
Sparkling Wine
o 1 part Asombroso La
Rosa Tequila
o 1 part St
Germaine Elderflower liqueur
o ice
o lemon sorbet
In a pitcher or a shaker filled with ice mix the sparkling wine, ST Germain & tequila. Pour into a glass & top with a tablespoon of lemon sorbet.
