Chicken Kabsa from Maimoona Yasmeen’s Recipes
Ingredients: For 4 servings
Rice (basmati): ½ kg
Chicken with bones (big pieces): 750 grams
Onion: 1
Almonds: a handful
Cashews: a handful
Raisins (kishmish): a handful
Oil: 1 ½ tablespoon + 2 tablespoons
Clarified butter (pure ghee): 1 tablespoon
Black cloves: 2
Cardamoms: 2
Cinnamon: 2 small sticks
Ginger garlic paste: 1 tablespoon
Turmeric powder: ½ teaspoon
Red chili powder: 2 teaspoons
Salt: 3 teaspoons
Tomato puree: 1 tea cup
Chopped coriander: a handful
Chopped mint leaves: a handful
Procedure:
1. Roast almonds and cashews and keep aside.
2. Soak rice for about half an hour.
3. Meanwhile in a cooking saucepan, add 1 ½ tablespoon of oil and 1 tablespoon clarified butter or pure ghee.
4. Add sliced onion, black cloves, slit cardamoms and cinnamon sticks.
5. Stir for 15 seconds and add ginger garlic paste and stir for few seconds.
6. Add turmeric powder, red chilli powder and salt.
7. Mix well and add chicken pieces.
8. Stir fry for about 5 minutes.
9. Add chopped mint leaves, chopped coriander and add tomato puree.
10. Stir fry for 30 seconds and add 1 litre of water.
11. (Here we have not added spices. You can add ½ teaspoon of spices or garam masala powder to enhance the taste).
12. Close the lid and cook on low flame for about 20 minutes, till the chicken pieces get tender.
13. After 20 minutes, take out the chicken pieces and keep them aside.
14. Into the same boiling water (in which we have cooked chicken pieces), add soaked and drained rice.
15. Close the lid and cook till the water dries up completely and rice gets tender.
16. Switch off the flame and add raisins or kishmish and keep the lid closed for about 5 minutes.
17. Into a flat bottomed pan, add 2 tablespoons of oil.
18. When the oil is hot, add cooked chicken pieces and close the lid.
19. Semi fry on both sides while keeping the lid closed.
20. Cook till the chicken pieces get very tender and crispy.
21. Garnish the rice with roasted almonds and cashews. Add semi fried chicken pieces.
Chicken Kabsa is ready to be served.

Recipe – Kabsa
Ingridents
Chicken – 1 1/4 k
basmati rice – 5 cup
big onion (sliced) – 2 medium
tomato (paste)- 1/2 k
water - 10 cup
Whole cloves-cardamom-cinnamon – 1/2 tsp each
whole pepper – 1tsp
dry lemon - 3
grated carrot – 1 cup
chopped capsicum – 1 cup
soak 1/2 hr the basmati rice
boil 10 cup water
Preparation
Heat oil in a pan
Add cloves-cardamom-cinnamon and saute well
Add pepper into it
Add onion and saute until it turns brown
Add tomato paste
When the gravy becomes dry add chicken into it
Cook it for 2 mins
Add 9 cup hot water into the chicken
Let it cook for 5 min
Add the rice
Add dry lemon
Add carrot grate and capsicum cut
Let it cook for 2min

KABSA MAIN DISH
1 1/2CUP LONG GRAIN RICE (SOAKED WATER 45MIN)
2CUPS SHREDDED CARROTS
KABSA INGREDIENTS
1) ON MEDIUM HIGH HEAT ADD THE 1/3 CUP OIL, 2 CUPS ONIONS, AND 1/2 TSP GRATED GINGER. COOK TILL BROWN.
2) ADD THE 600G CHIKEN, AND COOK TILL BROWN.
3) ADD THE REMIANING SPICES FOR KABSA INGREDIENTS (1 TBSP SALT, 1/2TBSP ORANGE ZEST, 1/2TBSP BLACK PEPPER, 1/2TBSP FINELY GRINDED CARDAMON, 1 PIEACE DRIED LEMON, 1/2 TSP CINAMON POWDER , 1/4TSP CLOVES POWDER, 1TBSP TOMATOE PASTE, 2 CUPS TOMATOE (FINELY CHOPPED)
4) ONCE YOU SEE THE OIL TO RISE ON TOP, POWR 1 LITER OF WATER AND COOK CHIKEN FOR 25MINUTES COVERED ON MEDIUM HIGH HEAT.
KABSA TOPPING
1) ON A SEPARATE PAN ON MEDIUM HIGH HEAT ADD A BIT OF OIL AND ALMONDS, ONCE BROWN PUT IT ON TISSUE PAPER.
2) THEN, TAKE THE RAISINS AND BROWN THEM, BE CAREFUL THEY BROWN QUICKLY. ONCE BROWN, PUT IT ON TISSUE PAPER.
KABSA MAIN DISH
1) ONCE CHIKEN COOKED FOR 25MIN, REMOVE AND ADD IT TO BAKING PAN AND BROIL IN HOT OVER FROM 5-10MIN.
2) TO THE POT, ADD 1 1/2CUP OF LONG GRAIN RICE AND 2CUPS SHREDDED CARROTS. COVER WITH CLEAN TOWEL TO ABSORB EXTRA MOISTURE AND TO KEEP THE RICE STIFF AND PUT THE COVER ON TOP. COOK FOR 25MIN ON MEDIUM HEAT.
SERVING
1) SERVE RICE FIRST, THEN CHIKEN ON TOP, AND THEN SPRINKLE ROASTED ALMONDS AND RASINS ON TOP.

In places like Jordan, Qatar, the United Arab Emirates, Bahrain, Iraq and Kuwait the dish is popularly known as machbūs (Arabic: مكبوس), but is served mostly in the same way. These dishes are mainly made from a mixture of spices, rice (usually long-grain, mostly basmati), meat and vegetables. There are many kinds of kabsa and each kind has a uniqueness about it. Pre-mixed kabsa spices are now available under several brand names. These reduce preparation time but may have a flavor distinct from traditional kabsa. The spices used in kabsa are largely responsible for its taste; these are generally black pepper, cloves, cardamom, saffron, cinnamon, black lime, bay leaves and nutmeg. The main ingredient that accompanies the spices is the meat, such as chicken, goat, lamb, camel, or sometimes beef, fish, and shrimp. In chicken machbūs, a whole chicken is used. Another way of preparing and serving meat for kabsa is mathbi, where seasoned meat is grilled on flat stones that are placed on top of burning embers. A third technique, madghūt, involves cooking the meat in a Pressure cooker. Kabsa — chicken or meat served on a bed of steaming rice and redolent of exotic spices — is a national dish of Saudi Arabia. Variations are also popular in Yemen and the Gulf States of the Arabian peninsula, where it is known as machboos, majboos, machbus.

Kabsa, though, is believed to be indigenous to Yemen. In places like Jordan, Qatar, the United Arab Emirates, Bahrain, Iraq and Kuwait the dish is popularly known as machbūs (Arabic: مكبوس), but is served mostly in the same way. These dishes are mainly made from a mixture of spices, rice (usually long-grain, mostly basmati), meat and vegetables. There are many kinds of kabsa and each kind has a uniqueness about it. Pre-mixed kabsa spices are now available under several brand names. These reduce preparation time but may have a flavor distinct from traditional kabsa. The spices used in kabsa are largely responsible for its taste; these are generally black pepper, cloves, cardamom, saffron, cinnamon, black lime, bay leaves and nutmeg. The main ingredient that accompanies the spices is the meat, such as chicken, goat, lamb, camel, or sometimes beef, fish, and shrimp. In chicken machbūs, a whole chicken is used. The spices, rice and meat may be augmented with almonds, pine nuts, onions and sultanas. The dish can be garnished with ḥashū (Arabic: حشو) and served hot with daqqūs (Arabic: دقّوس) — home-made tomato sauce. Meat for kabsa can be cooked in various ways. A popular way of preparing meat is called mandi. This is an ancient technique, whereby meat is barbecued in a deep hole in the ground that is covered while the meat cooks. Another way of preparing and serving meat for kabsa is mathbi, where seasoned meat is grilled on flat stones that are placed on top of burning embers. A third technique, madghūt, involves cooking the meat in a Pressure cooker. Kabsa — chicken or meat served on a bed of steaming rice and redolent of exotic spices — is a national dish of Saudi Arabia. 5. Stir for 15 seconds and add ginger garlic paste and stir for few seconds.

10. Stir fry for 30 seconds and add 1 litre of water.
11. (Here we have not added spices. You can add ½ teaspoon of spices or garam masala powder to enhance the taste).
12. Close the lid and cook on low flame for about 20 minutes, till the chicken pieces get tender.
13. After 20 minutes, take out the chicken pieces and keep them aside.
14. Into the same boiling water (in which we have cooked chicken pieces), add soaked and drained rice.
15. Close the lid and cook till the water dries up completely and rice gets tender.
16. Switch off the flame and add raisins or kishmish and keep the lid closed for about 5 minutes.
17. Into a flat bottomed pan, add 2 tablespoons of oil.
18. When the oil is hot, add cooked chicken pieces and close the lid.
19. Semi fry on both sides while keeping the lid closed.
20. Cook till the chicken pieces get very tender and crispy.
21. Garnish the rice with roasted almonds and cashews. Add semi fried chicken pieces.
Chicken Kabsa is ready to be served.

1) ON MEDIUM HIGH HEAT ADD THE 1/3 CUP OIL, 2 CUPS ONIONS, AND 1/2 TSP GRATED GINGER. COOK TILL BROWN.
2) ADD THE 600G CHIKEN, AND COOK TILL BROWN.
3) ADD THE REMIANING SPICES FOR KABSA INGREDIENTS (1 TBSP SALT, 1/2TBSP ORANGE ZEST, 1/2TBSP BLACK PEPPER, 1/2TBSP FINELY GRINDED CARDAMON, 1 PIEACE DRIED LEMON, 1/2 TSP CINAMON POWDER , 1/4TSP CLOVES POWDER, 1TBSP TOMATOE PASTE, 2 CUPS TOMATOE (FINELY CHOPPED)
4) ONCE YOU SEE THE OIL TO RISE ON TOP, POWR 1 LITER OF WATER AND COOK CHIKEN FOR 25MINUTES COVERED ON MEDIUM HIGH HEAT.

A hot air balloon carrying at least 16 people caught on fire and crashed in Central Texas on Saturday, and there did not appear to be any survivors, authorities said. Authorities would not confirm the exact number of deaths, but Lynn Lunsford with the Federal Aviation Administration said the balloon was carrying at least 16 people and the Caldwell County Sheriff's Office said in a statement that it didn't look like anyone survived ... ....
