Easy step by step instructions for cooking whole grain Teff. Teff is a nutritious gluten-free grain that is packed with iron, fiber, protein and calcium.
How to Cook Teff:
Bring 2 cups water or stock to a boil in a pot. Add ½ cup teff; cover, reduce heat to low and simmer, stirring occasionally, for 15--20 minutes or until liquid is absorbed. Makes 2 servings (1 ½ cups).

Justin Fruechte, Forage and Cover Crop Specialist at Millborn Seeds, discusses the features and benefits of Millborn's Teff Grass.
Teff grass has gained a lot of popularity lately for some very good reasons. It's a warm season annual forage grass able to make very nice quality hay. Last year as a Nation we were extremely low on forage supplies and our on-farm storage was also low. People were searching for alternative ways to make up for the shortage.
Teff grass is most commonly used when you take off your first cutting alfalfa the first part of June. It's starting to warm up and you realize the stand is very thin. Teff grass is great to come in and innerseed back into the stand. That will help boost production for the 2nd and 3rd cutting.
This particular Teff grass field was seeded in Memorial Day weekend as a straight stand of Teff grass at a rate of 8lbs per acre. This teff grass is Moxy, a variety from Berenbrug. It's a coated seed.
Teff grass is extremely fine, smaller than alfalfa. Proper seeding it is very critical for healthy establishment. It needs to be planted into a firm seed bed at a shallow depth. Coating the seed helps with flowability and making sure you can meter your drill to the 8-10 lbs per acre mark.
This field was cut the night before, and you'll see in the windrows that it's drying fast because it is so narrow bladed and fine stemmed. When we wrap this up in a bale, it's going to be very attractive. Our feed quality is going to be very good because our leaf to stem ration is very high. When you have that in a plant, digestibility is good because there's less lignin content in the bale so the fiber digestibility is good.

Eragrostis tef, known as teff, taf (Amharic ጤፍ ṭēff, Tigrinya ጣፍ ṭaff), is an annual grass, a species of lovegrass native to the northern Ethiopian Highlands of Northeast Africa.
Common names include teff, lovegrass, annual bunch grass (English); Ṭeff/Ṭéff (Amharic, both representing the same sound, an ejective consonant); Ṭaffi/xaffi (Oromo, both representing the same sound); Ṭaff (Tigrinya); and mil éthiopien (French - 'Ethiopian millet'). It is also written as ttheff, tteff, thaff, tcheff, and thaft. The word "tef" is connected by folk etymology to the Ethio-Semitic root "ṭff", which means "lost" (because of the small size of the grain).
Eragrostis tef has an attractive nutrition profile, being high in dietary fiber and iron and providing protein and calcium. Some consider it to have a sour taste. This might be because it is often eaten fermented. It is similar to millet and quinoa in cooking, but the seed is much smaller and cooks faster, thus using less fuel.
Eragrostis tef is adapted to environments ranging from drought stress to waterlogged soil conditions. Maximum teff production occurs at altitudes of 1,800 to 2,100 m, growing season rainfall of 450 to 550 mm, and a temperature range of 10 to 27 °C. Teff is day length sensitive and flowers best with 12 hours of daylight.

Justin Fruechte, Forage and Cover Crop Specialist at Millborn Seeds, discusses the features and benefits of Millborn's Teff Grass.
Teff grass has gained a lot of popularity lately for some very good reasons. It's a warm season annual forage grass able to make very nice quality hay. Last year as a Nation we were extremely low on forage supplies and our on-farm storage was also low. People were searching for alternative ways to make up for the shortage.
Teff grass is most commonly used when you take off your first cutting alfalfa the first part of June. It's starting to warm up and you realize the stand is very thin. Teff grass is great to come in and innerseed back into the stand. That will help boost production for the 2nd and 3rd cutting.
This particular Teff grass field was seeded in Memorial Day weekend as a straight stand of Teff grass at a rate of 8lbs per acre. This teff grass is Moxy, a variety from Berenbrug. It's a coated seed.
Teff grass is extremely fine, smaller than alfalfa. Proper seeding it is very critical for healthy establishment. It needs to be planted into a firm seed bed at a shallow depth. Coating the seed helps with flowability and making sure you can meter your drill to the 8-10 lbs per acre mark.
This field was cut the night before, and you'll see in the windrows that it's drying fast because it is so narrow bladed and fine stemmed. When we wrap this up in a bale, it's going to be very attractive. Our feed quality is going to be very good because our leaf to stem ration is very high. When you have that in a plant, digestibility is good because there's less lignin content in the bale so the fiber digestibility is good.
