Pâté is a mixture of cooked ground meat and fat minced into a spreadable paste. Common additions include vegetables, herbs, spices, and either wine or brandy (often cognac or armagnac). Pâté can be served either hot or cold, but it is considered to develop its fullest flavor after a few days of chilling.
In French or Belgian cuisine, pâté may be baked in a crust as pie or loaf, in which case it is called pâté en croûte, or baked in a terrine (or other mold), in which case it is known as pâté en terrine. Traditionally, a forcemeat mixture cooked and served in a terrine is also called a terrine. The most famous pâté is probably pâté de foie gras, made from the livers of fattened geese. Foie gras entier is fattened goose liver cooked and sliced, not made into pâté. Pâté en croûte is baked with the insertion of "chimneys" on top: small tubes or funnels that allow steam to escape, thus keeping the pastry crust from turning damp or soggy. Baked pâté en croûte usually develops an air bubble under the crust top as the meat mixture shrinks during baking; this is traditionally dealt with by infusing semi-liquid aspic in the hollow space before chilling.

Both the state and New York City were named for the 17th century Duke of York, future King James II of England. The next four most populous cities in the state are Buffalo, Rochester, Yonkers, and Syracuse, while the state capital is Albany.

Turn On the Bright Lights is the debut studio album by the American rock band Interpol, released in August 2002. The album was recorded in November 2001 at Tarquin Studios in Connecticut, and was co-produced, mixed and engineered by Peter Katis and Gareth Jones. It was released on August 19, 2002 in the United Kingdom and August 20 in the United States, through independent record label Matador Records. Upon release, the record peaked at number 101 on the UK Albums Chart. It reached number 158 on the Billboard 200 in the United States, as well as spending 73 weeks in the Billboard Independent Albums, peaking at number five.
"PDA", "NYC", "Obstacle 1" and "Say Hello to the Angels" were the singles from Turn On the Bright Lights, and a video was shot for each with the exception of "Say Hello to the Angels".
The album was certified Gold by the RIAA on August 29, 2011 for shipments of 500,000 copies.
A remastered version of the album was released in 2012 to commemorate its tenth anniversary. It featured additional material including demo recordings of several tracks, the bonus songs previously available on international releases and a DVD of live performances and music videos.
Mark Bittman (born February 17, 1950) is an American food journalist, author, and columnist for The New York Times.
Bittman is a journalist, food writer, and author of 14 books, including the bestselling How to Cook Everything and Vegan Before 6 P.M. (VB6). His most recent cookbook is How to Cook Everything Fast. He has been the recipient of International Association of Culinary Professionals, Julia Child, and James Beard awards for his writing.
Bittman is an Opinions columnist for The New York Times, a food columnist for the paper's Dining section, and the lead food writer for The New York Times Magazine. His column, "The Minimalist," ran in The New York Times for more than 13 years; the final column was published on January 26, 2011. He also hosted a weekly "Minimalist" cooking video on the New York Times website.
Bittman is a regular guest on NBC's The Today Show and the NPR shows All Things Considered and Wait, Wait, Don't Tell Me. He appeared as a guest judge on the Food Network competition series Chopped and was featured alongside Gwyneth Paltrow and Mario Batali in a PBS series called Spain... on the Road Again in 2008.
