Doubanjiang is a spicy, salty paste made from fermented broad beans, soybeans, salt, rice, and various spices. Doubanjiang exists in plain and spicy versions, with the latter containing red chili peppers and called la doubanjiang (辣豆瓣酱; pinyin: là dòubànjiàng; là meaning "hot" or "spicy").
It is used particularly in Sichuan cuisine, and in fact, the people of the province commonly refer to it as "the soul of Sichuan cuisine". A particularly well known variety is called Pixian doubanjiang (郫县豆瓣酱), named after the town of Pixian, Sichuan.
This sauce is sometimes stir-fried with oil and eaten with rice or noodles as a quick meal, and is also commonly used as a primary flavoring for fried tofu dishes and cold tofu salads. It is also frequently mixed with instant noodles to improve the flavor of the usually MSG-laden noodles.
In many Chinese communities and food factories, doubanjiang is produced with only soybeans and salt, and does not contain the broad beans or chili peppers typical of Sichuan style doubanjiang.

Korean style ramyun or ramen is my guilty pleasure. If I’m home alone for dinner, my go to is Shin Ramyun (a brand of instant noodles produced in South Korea). Unfortunately, because of the high levels of sodium or msg in instant noodles, I usually wake up the next morning dehydrated and swollen. にんにく 1かけら
生姜 にんにくと同じくらいの分量

赤味噌 大さじ1

オイスターソース 大さじ1
豆板醤 大さじ 1
水 150cc
鶏がらスープの素 小さじ 1
ゴマ油 、片栗粉
(にんじん 、ピーマンをいれた方が見た目が美しいマーボーナスが出来ると思います )

Ingredients:

~1 lb of beef short ribs

2 tbsp of gochujang
1 ½ tbsp of doubanjiang
2 cups of dashi broth
3 cups of low sodium chicken broth
1 ½ tbsp of red chili pepper powder
½ tbsp of soy sauce
½ cup of kimchi juice
2 tbsp of minced garlic
5 medium shiitake mushrooms, sliced
salt and ground pepper
2 - 3 servings of ramen-style noodles
2 scallions, chopped for garnish
kimchi for garnish
Directions:
1. Heat oil in a heavy Dutch oven or stockpot over high heat. Add the sectioned short ribs in a single layer and cook until browned on all sides. Remove from pot and set aside for now.
2. Add onion half and ginger slices to pot and cook until slightly browned. Add the smashed garlic and chopped scallions. Stir until lightly browned. Return short ribs to pot along with gochujang and doubanjiang. Stir to coat short ribs and onion.
3. Add dashi broth and scrape up any brown bits on the bottom of the pot.
4. Add the low-sodium chicken broth and bring to a boil. Once boiling, reduce to a simmer and cover. Let it simmer for about 4 hours or until the beef falls off the bone.
5. After you finish simmering for 4 hours, remove the short ribs and set aside to cool. Strain the soup into a clean pot and discard the strained solids.
6. Set the soup over medium heat and add the red pepper powder, soy sauce, kimchi juice and garlic. Bring to a boil, lower heat to a simmer and cover to keep warm.
7. Once the short ribs are cool enough to touch, pull meat off of bones and set aside.
8. Add oil to a fry pan and cook the mushrooms until lightly browned. Add the pulled short rib and salt and pepper to taste. Fry the mushroom and short ribs until well browned and crispy in spots. Remove from heat and set aside.
9. Cook noodles according to package instructions. Divide noodles into 2 or 3 serving bowls. Ladle soup over noodles to cover. Top with mushrooms and short ribs. Garnish with kimchi and chopped scallions. Serve immediately.
Notes:
If your short ribs were super fatty, you’ll end up with a thick layer of fat on top of your soup. Skim off excess fat.
Don’t let the noodles sit in the hot soup for too long before serving. The noodles will bloat and be mushy.
Make sure to taste the soup after you add the seasonings and bring to a boil. If you want more kick add more gochujang and doubanjiang. If you want your soup to be a bit more salty, add more soy sauce.

Korean Style Ramyun with Beef 라면
Korean style ramyun or ramen is my guilty pleasure. If I’m home alone for dinner, my go to is Shin Ramyun (a brand of instant noodles produced in South Korea). Unfortunately, because of the high levels of sodium or msg in instant noodles, I usually wake up the next morning dehydrated and swollen. I know it may not be the healthiest meal but it’s so good and easy.
With this recipe, I don’t feel so guilty about indulging in ramyun anymore.
Ingredients:
6 scallions, rough chopped
~1 lb of beef short ribs
half of a medium onion, peeled
1 knob of ginger, cut into slices
5 cloves of garlic, smashed
2 tbsp of gochujang
1 ½ tbsp of doubanjiang
2 cups of dashi broth
3 cups of low sodium chicken broth
1 ½ tbsp of red chili pepper powder
½ tbsp of soy sauce
½ cup of kimchi juice
2 tbsp of minced garlic
5 medium shiitake mushrooms, sliced
salt and ground pepper
2 - 3 servings of ramen-style noodles
2 scallions, chopped for garnish
kimchi for garnish
Directions:
1. Heat oil in a heavy Dutch oven or stockpot over high heat. Add the sectioned short ribs in a single layer and cook until browned on all sides. Remove from pot and set aside for now.
2. Add onion half and ginger slices to pot and cook until slightly browned. Add the smashed garlic and chopped scallions. Stir until lightly browned. Return short ribs to pot along with gochujang and doubanjiang. Stir to coat short ribs and onion.
3. Add dashi broth and scrape up any brown bits on the bottom of the pot.
4. Add the low-sodium chicken broth and bring to a boil. Once boiling, reduce to a simmer and cover. Let it simmer for about 4 hours or until the beef falls off the bone.
5. After you finish simmering for 4 hours, remove the short ribs and set aside to cool. Strain the soup into a clean pot and discard the strained solids.

I've been living in Sichuan for nearly a year now, and I've tried most of the famous Sichuan foods. Mapo Doufu, Twice cooked pork, Kung Pao chicken, all the snacks, all the noodles, and all classics that you try when you first get here. But I wanted something new, something delicious and exciting and life changing. I asked my local Chengdu friend Chuchu for her recommendation, and she pointed us in the direction of this amazing Sichuan Firewood Chicken AKA "Chaihuoji".
We took a bus ride about 45 minutes outside of Chengdu to an area they found that had the most classic Firewood Chicken. I was hesitant at first because there was no one eating there, but Chuchu assured me this was the best place, and that people usually don't come all this way outside on the weekends, but during the weekdays it's always busy.
The first thing you have to do is talk to the chef and choose a chicken that you like, and they will kill it for you. Unfortunately, they told us that the butcher who usually does that work was off for the afternoon so we had to choose a chicken killed earlier that morning. That was OK, but I was hoping to get it on footage to make for an interesting video.
They clean the chicken for you and then prepare all the classic Sichuan ingredients. Doubanjiang "Broad bean paste", dried chilies, fresh chilies, ginger, garlic, potatoes, taro, and bamboo shoots.
The essence of the flavour comes from the Doubanjiang paste, which is a little spicy and almost a little creamy when combined with the oil and all the other ingredients. The result was astounding. Never have I tasted something so satisfying as when I dipped that crispy yet gooey flatbread into the juicy heavens and then took a bite. It was mind blowing, something I have only dreamed of in Sichuan food. Although a little pricey for this meal (45$), this is a meal that I will keep coming back for during special occasions and gatherings with friends.
The address was a little hard to find, but if you're up for a Sichuan adventure you can give this address to the taxi, its a bit of a drive from Chengdu!

今週の動画は、麻婆豆腐です。今回は木綿豆腐を水分が飛ぶまで炒めてひき肉の代わりとしましたが、茹でた大豆など豆類を使っても美味しくできます。ご飯と一緒に食べる時などは醤油や味噌の量で塩加減を調整してくださいね。今の時期なら山椒を加えても美味しいですね。
【材料 2人分】
・ 木綿豆腐 600g
・ ごま油 大さじ1
・ にんにく 一片
・ 生姜 一片
・ 豆板醤 小さじ1g
・水 150g
・ 乾燥しいたけ 5g
・ 味噌 小さじ2
・ 醤油 大さじ1
・ みりん 大さじ1
・ 片栗粉 大さじ1
・小口ねぎ 20g
【作り方】
《1》木綿豆腐を水切りしておきます。
《2》木綿豆腐の半分300gをごま油、にんにく、しょうが、豆板醤と一緒に豆腐の水分がなくなるまで炒めます。
《3》タレの材料を全て混ぜ合わせて加え入れ、トロみがつくまで火にかけます。
《4》残りの豆腐300gとネギを加えて完成です。

Korean Style Ramyun with Beef 라면
Korean style ramyun or ramen is my guilty pleasure. If I’m home alone for dinner, my go to is Shin Ramyun (a brand of instant noodles produced in South Korea). Unfortunately, because of the high levels of sodium or msg in instant noodles, I usually wake up the next morning dehydrated and swollen. I know it may not be the healthiest meal but it’s so good and easy.
With this recipe, I don’t feel so guilty about indulging in ramyun anymore.
Ingredients:
6 scallions, rough chopped
~1 lb of beef short ribs
half of a medium onion, peeled
1 knob of ginger, cut into slices
5 cloves of garlic, smashed
2 tbsp of gochujang
1 ½ tbsp of doubanjiang
2 cups of dashi broth
3 cups of low sodium chicken broth
1 ½ tbsp of red chili pepper powder
½ tbsp of soy sauce
½ cup of kimchi juice
2 tbsp of minced garlic
5 medium shiitake mushrooms, sliced
salt and ground pepper
2 - 3 servings of ramen-style noodles
2 scallions, chopped for garnish
kimchi for garnish
Directions:
1. Heat oil in a heavy Dutch oven or stockpot over high heat. Add the sectioned short ribs in a single layer and cook until browned on all sides. Remove from pot and set aside for now.
2. Add onion half and ginger slices to pot and cook until slightly browned. Add the smashed garlic and chopped scallions. Stir until lightly browned. Return short ribs to pot along with gochujang and doubanjiang. Stir to coat short ribs and onion.
3. Add dashi broth and scrape up any brown bits on the bottom of the pot.
4. Add the low-sodium chicken broth and bring to a boil. Once boiling, reduce to a simmer and cover. Let it simmer for about 4 hours or until the beef falls off the bone.
5. After you finish simmering for 4 hours, remove the short ribs and set aside to cool. Strain the soup into a clean pot and discard the strained solids.
6. Set the soup over medium heat and add the red pepper powder, soy sauce, kimchi juice and garlic. Bring to a boil, lower heat to a simmer and cover to keep warm.
7. Once the short ribs are cool enough to touch, pull meat off of bones and set aside.
8. Add oil to a fry pan and cook the mushrooms until lightly browned. Add the pulled short rib and salt and pepper to taste. Fry the mushroom and short ribs until well browned and crispy in spots. Remove from heat and set aside.
9. Cook noodles according to package instructions. Divide noodles into 2 or 3 serving bowls. Ladle soup over noodles to cover. Top with mushrooms and short ribs. Garnish with kimchi and chopped scallions. Serve immediately.
Notes:
If your short ribs were super fatty, you’ll end up with a thick layer of fat on top of your soup. Skim off excess fat.
Don’t let the noodles sit in the hot soup for too long before serving. The noodles will bloat and be mushy.
Make sure to taste the soup after you add the seasonings and bring to a boil. If you want more kick add more gochujang and doubanjiang. If you want your soup to be a bit more salty, add more soy sauce.

I'll show you how to make an amazingly tender and delicious pork soup I found here: http://www.saveur.com/article/Recipes/Sichuan-Pork-Noodle-Soup-1000092125 I've followed the recipe pretty closely, but had to make a couple of substitutions and omitted the soy sauce in favour of extra doubanjiang.
You will need: canola oil, pork shoulder roast (~700g), garlic, ginger, doubanjiang (Chinese spicy broad bean paste), sugar, Chinkiang black vinegar (or substitute balsamic vinegar and white vinegar 1:1), corn starch, Chinese wheat noodles (or substitute rice noodles or udon), green onions

ねぎ 少々
にんにく 1かけら

調味料
赤味噌 大さじ1

豆板醤 大さじ 1
水 150cc
鶏がらスープの素 小さじ 1
ゴマ油 、片栗粉
(にんじん 、ピーマンをいれた方が見た目が美しいマーボーナスが出来ると思います )
