Korean fermented soybean paste, called doenjang (된장), is more than just a seasoning or an essential ingredient in many iconic Korean dishes. It's impossible for us to imagine life without doenjang.

Salty, earthy, hearty, incredibly savory and delicious, it adds flavor to many dishes and makes them distinctively Korean. Making doenjang at home takes a long time, you have to be ready to commit to it for one year! It's not hard to make, but takes patience and some hard work, and some special equipment. But as a bonus, Korean soup soy sauce (guk-ganjang:국간장) is a byproduct of making doenjang, so you get that delicious soy sauce for free!

Korean fermented soybean paste stew (doenjang-jjigae), is made with vegetables, tofu, and Korean fermented bean paste. It's Koreans' everyday house food. We eat it with other side dishes and rice, but sometimes, especially in the southern part of Korea where I'm from, we eat this stew with barley rice, vegetable salad, and hot pepper paste all mixed together.

It is said that the taste of Korean food starts from blocks of fermented soybeans.
Traditionally, Korean people believed that the tastes of sauces decided the tastes of food, and traditional sauces and pastes have long been regarded as highly important in Korean food culture. Today I will specifically tell you about doenjang and cheonggukjang, Korea's representative soybean paste.
Doenjang (Soybean Paste)
Doenjang is made by separating liquids and solids from blocks of fermented soybeans. It's salty and savory, and contains a lot of vegetable protein.
The main ingredient of doenjang is beans. Beans have an abundant amount of protein and fat, so it is regarded as one of the healthiest foods and is referred as 'a meat from field' in recognition of its nutrients.
Cheonggukjang (Rich Soybean Paste)
Cheonggukjang is another fermented food made by boiling beans. To produce cheonggukjang, boiled beans must go through an additional fermentation in a heated room. It's rich in essential amino acids, vitamins B1 and B2, and various enzymes. Vitamin B2 from cheonggukjang especially helps the detoxification process of the liver, so it's highly recommended for heavy smokers and drinkers.

Doenjang
Doenjang ([twendʑaŋ]), or bean paste (HS code: 2103.90.1010), literally means "thick sauce" in Korean.
Production
To produce doenjang, dried soybeans are boiled and stone-ground into coarse bits. This paste is then formed into blocks, which are called meju (메주). The blocks are then exposed to sunlight or warmth. When so exposed, dried rice plants are attached to the surface of the soybean blocks. Dried rice plants are readily available in Korea and are a rich source of bacteria (Bacillus subtilis). The fermentation process begins at this stage. The Bacillus subtilis bacteria reproduce, consuming soybean protein and water in the meju. The unique smell of the meju is mainly the ammonia produced by the bacteria. One to three months later, depending on the block size, the meju are put into large, opaque pottery jars with brine and left to further ferment, during which time various beneficial bacteria transform the mixture into a further vitamin-enriched substance (similar to the way milk ferments to become yogurt). Liquids and solids are separated after the fermentation process, and the liquid becomes Korean soy sauce (Joseon ganjang; 조선간장). The solid, which is doenjang, is very salty and quite thick, often containing (unlike most miso) some whole, uncrushed soybeans.

'Brave Drouble Tiger' (Jung Hyungdon & Deffcon) who turned into idol producers in MBC Every1 [Hyungdon and Daejoon's Hitmaker] had ambitiously produced an idol project group, Big Byung (6SJ from BTOB, N&HYUK; from VIXX, Jackson from GOT7) and now they are releasing their second single album.

Traditionally, Korean people believed that the tastes of sauces decided the tastes of food, and traditional sauces and pastes have long been regarded as highly important in Korean food culture. Today I will specifically tell you about doenjang and cheonggukjang, Korea's representative soybean paste.
Doenjang (Soybean Paste)
Doenjang is made by separating liquids and solids from blocks of fermented soybeans. It's salty and savory, and contains a lot of vegetable protein.
The main ingredient of doenjang is beans. Beans have an abundant amount of protein and fat, so it is regarded as one of the healthiest foods and is referred as 'a meat from field' in recognition of its nutrients.
Cheonggukjang (Rich Soybean Paste)

Vitamin B2 from cheonggukjang especially helps the detoxification process of the liver, so it's highly recommended for heavy smokers and drinkers.
