Mexican cuisine is primarily a fusion of indigenous Mesoamerican cooking with European, especially Spanish, elements added after the Spanish conquest of the Aztec Empire in the 16th century. The basic staples are native foods, such as corn, beans and chili peppers. Europeans introduced a large number of other foods, the most important of which were meats from domesticated animals (beef, pork, chicken, goat, and sheep), dairy products (especially cheese), and various herbs and spices.
While the Spanish initially tried to impose their own diet on the country, this was not possible and eventually the foods and cooking techniques began to be mixed, especially in colonial era convents. African and Asian influences were also introduced into the mixture during this era as a result of African slavery in New Spain and the Manila-Acapulco Galleons.
Over the centuries, this resulted in regional cuisines based on local conditions, such as those in Oaxaca, Veracruz and the Yucatán Peninsula. Mexican cuisine is an important aspect of the culture, social structure and popular traditions of Mexico. The most important example of this connection is the use of mole for special occasions and holidays, particularly in the South and Center regions of the country. For this reason and others, Mexican cuisine was inscribed in 2010 on the Representative List of the Intangible Cultural Heritage of Humanity by UNESCO.
The Irish people (Irish: Muintir na hÉireann or Na hÉireannaigh) are a Celtic nation and ethnic group who originate from the island of Ireland and its associated islands. Ireland has been inhabited for about 9,000 years according to archaeological studies (see Prehistoric Ireland). For most of Ireland's recorded history, the Irish have been primarily a Gaelic people (see Gaelic Ireland). Anglo-Normans conquered parts of Ireland in the 12th century, while England's 16th/17th century (re)conquest and colonization of Ireland brought a large number of English and Lowland Scots to parts of the island, most notably Northern Ireland, where they form a separate and distinct ethnic group.
There have been many notable Irish people throughout history. The 6th-century Irish monk and missionary Columbanus is regarded as one of the "fathers of Europe", followed by Kilian of Würzburg and Vergilius of Salzburg. The scientist Robert Boyle is considered the "father of chemistry". Famous Irish explorers include Brendan the Navigator, Robert McClure, Ernest Shackleton and Tom Crean. By some accounts, the first European child born in North America had Irish descent on both sides; and an Irishman was the first European to set foot on American soil in Columbus' expedition of 1492.

It is made possible by collective participation in the entire traditional food chain: from planting and harvesting to cooking and eating. The basis of the system is founded on corn, beans and chili; unique farming methods such as milpas (rotating swidden fields of corn and other crops) and chinampas (man-made farming islets in lake areas); cooking processes such as nixtamalization (lime-hulling maize, which increases its nutritional value); and singular utensils includ...

Tamales On the corner of Río Lerma and Río Danubio in Cuauhtémoc we sample street food number one, a tamale. These traditional Mexican breakfast snacks, literally meaning “wrapped in a leaf”, were first made for warring Aztec and Mayan tribes. Pockets of masa (a type of starchy corn dough) are stuffed with sweet or savoury fillings, wrapped in banana leaves or cornhusks and then steamed. Arturo, fortunately, reminds us to remove the wrapper before eating. Tamales often go hand-in-hand with atole, a thick corn-based drink that is served lukewarm in a variety of flavours. We go for the champurrado, a chocolate-based atole that is tasty, but doesn’t have quite the same effect as a double espresso. Tortillas Stop number two is a tortillería. Tortillas, a type of thin, unleavened flatbread mad...

Food Around The World - Mexican Food Safari Authentic Mexican food is vibrant, delicious, fresh and fun. It is also colourful, spicy and uses an amazing array of chillies, both fresh and dried. Many ingredients are readily available everywhere, such as tomatoes, limes, coriander, red onion, avocado, and corn, and specialty ingredients are becoming more readily available in Australia and elsewhere. Mexican cooking is packed with flavour; among the herbs and spices that give it its distinct kick are a variety of chillies (fresh, dried, smoked and pickled), alongside oregano, coriander (known as cilantro in North America), cinnamon and cocoa. Garlic, onions, lemons and limes are also used generously.
Tortas, Tamales, Gorditas, Taco Al Pastor, Quesadilla, Sope, Tostada, oh my lord! The food is incredible, it is dirt cheap and you have to go try it. Recently Mike and I were sent to Mexico City to be part of an award show and I decided to go 5 days early so I could try everything that Mexico had to offer. I don't remember the names of everything but the looks are what count. Oh Tequila, I turn to you like a long lost friend
I want to kiss my Mexican Cousin once again
We'll cover every emotion from happiness to sorrow,
And the conversations I forget, you'll tell me about tomorrow
When the phone calls start, am I in bed or in a hearse?
The things you tell me about myself can't make me feel any worse
Well I'm awful sorry you got pissed
Just have to cross you off the list
Of my true friends...
