Here is a basic brine recipe that you can use for chicken, pork, turkey and other meats. This brine is a simple combination of salt, sugar, and water and is great at adding both flavor and moisture to meats. Brined meats are also usually more tender. I almost never cook pork or whole roasted chickens without brining them for up to 8 hours before cooking.

The magic of putting the flavour inside the meat
Why should you brine?
1. Brined meat is very flavourfull, you can add any flavours you like
2. Brined meat will lose less moisture. .
What can be brined?
• Lean meat
• Poultry
• Fish
How should you brine?
1. Decide on your ingredients, beside salt and water
2. Dissolve the salt and other dissolvable ingredients in a little bit hot water
3. Cool it down again with the rest of the water
4. Submerge the meat, poultry or fish in the brine
5. Let it brine in the fridge for the time needed
6. Pad your meat, poultry or fish dry with a paper towel
7. If you brined poultry or fish with the skin on it is desired to let the skin dry again for 12 hours in the fridge. This will make it easier to get a crispy skin.
Basic brine ingredients
• ½ cup Kosher salt
• ½ cup sugar
• 1 gallon water

A turkey wet brine how-to that will make your turkey taste more than just fine. Molly's wet brine recipe is simple and flexible for your own freestyle turkey twist, using rosemary, salt, sugar, garlic, and citrus. #SHARETHECHEER!
INGREDIENTS:
- 1 Gallon of water
- thawed turkey 12-14 pounds
- 6 tablespoons coarse sea salt
- 3 tablespoons brown sugar (optional)
Add extras:
- Whole cloves, cumin seeds and/or peppercorns
- Ground chile powder, smoked paprika and/or nutmeg
- Fresh rosemary, bay leaves and/or thyme
- Crushed garlic cloves and/or citrus peels
Method:
Toast whole spices in a dry skillet, crush coarsely and mix with ground spices.
Combine spices with salt and sugar — sugar will help with browning.
Rub turkey generously with spice mixture, inside and out.
Refrigerate uncovered for about 24 hours — at least 1 hour per pound.

Brine is a solution of salt (usually sodium chloride) in water. In different contexts, Brine may refer to salt solutions ranging from about 3.5% (a typical concentration of seawater, or the lower end of solutions used for brining foods) up to about 26% (a typical saturated solution, depending on temperature).
Brine is used to preserve vegetables, fruit, fish, and meat, in a process known as brining (now less popular than historically). Brine is also commonly used to age Halloumi and Feta cheeses, or for pickling foodstuffs, as a means of preserving them (or increasing taste). Brine is a common fluid used in large refrigeration installations for the transport of heat from place to place. It is used because the addition of salt to water lowers the freezing temperature of the solution and the heat transport efficiency can be greatly enhanced for the comparatively low cost of the material. The lowest freezing point obtainable for NaCl brine is −21.1 °C (−6.0 °F) at 23.3wt% NaCl. This is called the eutectic point. In colder temperatures, brine can be used to de-ice or reduce freezing temperatures on roads.

How should you brine?
1. Decide on your ingredients, beside salt and water
2. Dissolve the salt and other dissolvable ingredients in a little bit hot water
3. Cool it down again with the rest of the water

6. Pad your meat, poultry or fish dry with a paper towel

The magic of putting the flavour inside the meat
Why should you brine?
1. Brined meat is very flavourfull, you can add any flavours you like
2. Brined meat will lose less moisture. .
What can be brined?
• Lean meat
• Poultry
• Fish
How should you brine?
1. Decide on your ingredients, beside salt and water
2. Dissolve the salt and other dissolvable ingredients in a little bit hot water
3. Cool it down again with the rest of the water
4. Submerge the meat, poultry or fish in the brine
5. Let it brine in the fridge for the time needed
6. Pad your meat, poultry or fish dry with a paper towel

A turkey wet brine how-to that will make your turkey taste more than just fine. Molly's wet brine recipe is simple and flexible for your own freestyle turkey twist, using rosemary, salt, sugar, garlic, and citrus. #SHARETHECHEER!
INGREDIENTS:
- 1 Gallon of water
- thawed turkey 12-14 pounds
- 6 tablespoons coarse sea salt
- 3 tablespoons brown sugar (optional)
Add extras:
- Whole cloves, cumin seeds and/or peppercorns
- Ground chile powder, smoked paprika and/or nutmeg
- Fresh rosemary, bay leaves and/or thyme
- Crushed garlic cloves and/or citrus peels
Method:
Toast whole spices in a dry skillet, crush coarsely and mix with ground spices.
Combine spices with salt and sugar — sugar will help with browning.
Rub turkey generously with spice mixture, inside and out.
Refrigerate uncovered for about 24 hours — at least 1 hour per pound.
