Sohan
Sohan is a village and union council of Jhelum District in the Punjab Province of Pakistan. It is part of Jhelum Tehsil, and is located at 33°3'25N 73°26'30E with an altitude of 303 metres (997 feet). Most of the population belong to the Panhwar Sohlan Rajput's.

Sohan Halwa
Sohan Halwa (Hindi: सोहन हलवा; Urdu سوہن حلوہ; [ˈsoːɦən ˈɦəlʋaː]) or Multani Sohan Halwa is a traditional dessert in India and Pakistan, which is a variety of dense, sweet confection or halwa and believed to be Persian in origin. In India Ghantewala Halwai is popular for Sohan Halwa since the Mughal era.
It is made by boiling a mixture of water, sugar, milk, and cornflour until it becomes solid. Saffron is used for flavoring. Ghee is used to prevent it from sticking to the pan. Almonds, pistachios and cardamom seeds are added. Unlike most other halwa dishes in South Asia, it is solid.
History
The Hafiz Halwa shop in Multan claims it was invented by Dewan Sawan Mal, the ruler of Multan in 1750.
S. Abdul Khaliq claim that this halwa was introduced in South Asia in the early 16th century when Mughal emperor Humayun (r. 1530–1540, 1555–1556) came back to power in India after being exiled in Persia. He called for the makers of this halwa from Persia and the ancestors of modern-day S.Abdul Khaliq were the official halwa makers for the Mughal rulers for 300 years. S.Abdul Khaliq also have the term, "Shahi Halwa Sohan Merchants" as part of their branding.

How to prepare sohan with only two pens
A glass of sesame flour A glass of sugar A tablespoon of brewed saffron Chopped pistachio nuts ☑️ First of all, let me say that this sohan is not as crispy as Qom's sohan, but it is very tasty. ☑️ In terms of texture, it has a candy-like state ☑️ To make it a little softer, I added more flour and less sugar. ☑️ It is better to cut it into smaller pieces the size of a sugar cube so that it is easier to serve. ☑️ and put it in a closed container. Put a glass of sugar on the heat..don't stir it with a spoon..until the sugar melts...after it melts, add a glass of flour and stir well..add saffron...and then spread it on oiled paper Pour and add pistachio powder... cut into small cubes. ☑️اول از همه بگم که این سوهان مثل سوهانِ قم ترد نیست.ولی بسیار خوشمزه هست. ☑️از نظر بافت ،حالت آبنباتی...

You can smell the cardamom as soon as you walk in! I loved the aroma of the rose. As I watched, they mixed the paste and added almonds and butter as they stirred it. It’s not a healthy sweet, so eat it in moderation! They even make a sugarless version for diabetics!
Once they put the mixture on a pan, they mixed in some cardamom and rolled it into balls. After that, they flatten the balls out and bake them.
Then, they let them become thick cookies, smash them, and then smash pistachios and almonds into them. It’s such a fun and intricate process. I even got to try to smash one myself.
Next, I added a bunch of pistachios and almonds and molded it into a perfect circle. It was so much fun! Then, the excess cookie pieces that break off during the smashing process go back into the batter

☑️ First of all, let me say that this sohan is not as crispy as Qom's sohan, but it is very tasty. ☑️ In terms of texture, it has a candy-like state ☑️ To make it a little softer, I added more flour and less sugar. ☑️ It is better to cut it into smaller pieces the size of a sugar cube so that it is easier to serve. ☑️ and put it in a closed container. Put a glass of sugar on the heat..don't stir it with a spoon..until the sugar melts...after it melts, add a glass of flour and stir well..add saffron...and then spread it on oiled paper Pour and add pistachio powder... cut into small cubes.
☑️اول از همه بگم که این سوهان مثل سوهانِ قم ترد نیست.ولی بسیار خوشمزه هست.
☑️از نظر بافت ،حالت آبنباتی داره
☑️ برای اینکه کمی نرمتر بشه مقدار اَرده رو بیشتر و شکر رو کمتر ریختم.
☑️بهتره به قطعات کوچکتر اندازه حبه قند برش بزنید تا سروش راحت تر باشه.
☑️ و در ظرف در بسته قرار بدید.
یک لیوان شکر روی حرارت بگذارید..اصلا با قاشق هم نزنید..تا شکر ذوب شود...بعد که ذوب شد یک لیوان اَرده اضافه کنید و خوب هم بزنید..زعفران اضافه کنید...و بعد روی کاغذ روغنی چرب شده بریزید .و پودر پسته اضافه کنید...تا داغه به مکعب های کوچک برش بدید.

After exploring the city of Tehran for a few days, my epic road trip through Iran began in the city of Qom! Come with me as I learn how they make a traditional Iranian sweet called sohan!
Sohan is a traditional sweet that originated in Qom during the Qajar Dynasty. It’s essentially a crunchy brittle or toffee made from wheat, butter, eggs, sugar, rose, saffron, cardamom, and nuts. My buddy Mr. Taster took me to a factory where they make it!

You can smell the cardamom as soon as you walk in! I loved the aroma of the rose. As I watched, they mixed the paste and added almonds and butter as they stirred it. It’s not a healthy sweet, so eat it in moderation! They even make a sugarless version for diabetics!
Once they put the mixture on a pan, they mixed in some cardamom and rolled it into balls. After that, they flatten the balls out and bake them.
Then, they let them become thick cookies, smash them, and then smash pistachios and almonds into them. It’s such a fun and intricate process. I even got to try to smash one myself.
Next, I added a bunch of pistachios and almonds and molded it into a perfect circle. It was so much fun! Then, the excess cookie pieces that break off during the smashing process go back into the batter

This recipe for Sohan is very special. It is a buttery brittle studded with pistachios and flavored heavily with saffron – whose earthy aroma and rich color is unmistakably beautiful.
Sohan candy is deliciously addictive – the perfect sweet to eat with tea and all you need is:

☑️ First of all, let me say that this sohan is not as crispy as Qom's sohan, but it is very tasty. ☑️ In terms of texture, it has a candy-like state ☑️ To make it a little softer, I added more flour and less sugar. ☑️ It is better to cut it into smaller pieces the size of a sugar cube so that it is easier to serve. ☑️ and put it in a closed container. Put a glass of sugar on the heat..don't stir it with a spoon..until the sugar melts...after it melts, add a glass of flour and stir well..add saffron...and then spread it on oiled paper Pour and add pistachio powder... cut into small cubes.
☑️اول از همه بگم که این سوهان مثل سوهانِ قم ترد نیست.ولی بسیار خوشمزه هست.
☑️از نظر بافت ،حالت آبنباتی داره
☑️ برای اینکه کمی نرمتر بشه مقدار اَرده رو بیشتر و شکر رو کمتر ریختم.
☑️بهتره به قطعات کوچکتر اندازه حبه قند برش بزنید تا سروش راحت تر باشه.
☑️ و در ظرف در بسته قرار بدید.
یک لیوان شکر روی حرارت بگذارید..اصلا با قاشق هم نزنید..تا شکر ذوب شود...بعد که ذوب شد یک لیوان اَرده اضافه کنید و خوب هم بزنید..زعفران اضافه کنید...و بعد روی کاغذ روغنی چرب شده بریزید .و پودر پسته اضافه کنید...تا داغه به مکعب های کوچک برش بدید.

ارده همان کنجد کوبیده شده است که فراوری شده و به عنوان یک خوراکی بسیار مقوی از آن استفاده می شود...

در تهیه سوهان کنجدی میزان کنجد باید بیشتر از شکر باشد.
شکر حتما باید به صورت کاراملی رنگش را تغییر دهد.
به هیج وجه برای آب شدن شکر آب اضافه نکنید.
