Technique de cuisine : Couper en brunoise
Technique en vidéo de L'atelier des Chefs
Tailler les deux extrémités du légume non utilisées. Découper des bandes de 2 à 3 millimètres d'épaisseur au couteau ou au moyen d'une mandoline pour plus de régularité. Puis les bandes sont superposées les unes sur les autres leur face plate contre le plan de travail. Tailler très finement des bâtonnets de 2 à 3 millimètres de largeur dans le sens de la longueur. Puis taille dans l'autre sens les bâtonnets de légumes en très petits dés. Utilisation : pour agrémenter une salade, des petits légumes, une ratatouille.

4 Maneras de cortar o picar cebolla en brunoise. Video de uno de los corte basicos en cocina. Tecnicas. Elegir un corte apropiado.
Y hemos vuelto a los básicos.
La idea de este video es mostrar que existen diferentes métodos para realizar un corte, cada uno con su característica y dificultad especifica. Pero todo se hace más sencillo con práctica, y ese es el punto: Elegir una técnica o dominar la que usa para de esa manera realizar un trabajo eficiente en una de las tantas tareas disponibles en cocina.
Lo importante de elegir un corte es tener conciencia en los siguientes puntos:
1- Tipo de cuchillo
2- Experiencia
3- Comodidad
4- Gestión de ejecución
Nota: Los nombres de las técnicas que aparecen en el video son solo referenciales, no necesariamente oficiales. Se le han puesto los nombres debido a que explican de manera sencilla los pasos y destrezas a utilizar.

What Is a Brunoise Cut?
---------------------------------------------------------------------
A brunoise (broon-WAHZ) cut is a French alternative to dicing. The vegetable is first julienned, turned a quarter turn then diced. The resultant pieces are typically eighth-inch squares. The cut is typically used on shallots, leeks, turnips and carrots to turn them into a garnish.c
What You'll Need
---------------------------------------------------------------------
Sharpened knife* Cutting board
Onions, peeled and cut in halfc
Instructions
---------------------------------------------------------------------
1. With a larger onion, start by peeling off the layers one by one so they are easier to manage and you can slice them individually.2. Grip the knife with your middle, ring and pinky finger around the handle and position your thumb and pointer finger so they clasp either side of the hilt of the blade. Make sure to leave a small gap between your index and middle fingers. The back of your index finger should be at the base of the blade for control.3. Hold the onion with your other hand, curling your fingers under so that you don't accidentally cut them. It may help to think more of cupping your hand on top of the onion just to keep it in place while you cut.4. Cut a layer of onion in half so that it lays flat on the cutting board. You may need to press it against the cutting board a few times so that it lays flat. 5. To make the most perfectly uniform pieces, slice off the rounded outer edges.6. Continue to hold with onion with your fingers tucked out of the way as you slice the onion section lengthwise, leaving you with very thin strips.7. Gather the strips and align them with the edge of your knife.8. Making sure the tip of your knife never leaves the cutting board, run your knife through the onion strips with a forward and downward motion.

Now that you have your beautifully brunoised onion, you can prepare the pieces with a variety of methods to use in your favorite recipes.
* You can sprinkle these pieces on
salads.* Put them in ground beef to cook into
hamburgers or meatloaf.* Add them to
soups or sauces.* Get creative! Maybe put them in your morning
omelette.

Brunoise snijden - Allerhande
Brunoise snijden is het snijden van blokjes of dobbelsteentjes. Allerhande laat je in dit filmpje zien hoe je het kunt doen. Het filmpje bevat ook tips om het mes goed te hanteren.
Brunoise snijden doe je door het uiteinde van de groente weg te snijden. Je snijdt een stuk van 5 centimeter af. Van dit stuk snijd je in de lengte rechte plakken. Vouw bij het snijden je vingertoppen naar binnen en houd het mes tegen de knokkels van je hand. Zo kunnen er geen ongelukken gebeuren. Stapel de plakken op elkaar en snijd daar reepjes van. Draai de stapel een kwartslag, nu kun je blokjes snijden.

Hi, I am Oron Franco for The Private Chef, NYC, and I am going to show you how to Brunoise some peppers. Now a Brunoise cut is a very very very fine dice and you usually use this if you want to add some of the peppery flavor to a sauce, maybe a nice garnish in your salad. If you do it with different kinds of colored peppers, you have got the yellow, you have got the green, you have got the red, you mix them up all together and just put it on top of like a roasted chicken. It makes a very nice garnish and it also tastes great.
Now to get a very very thin dice out of the pepper, you first have to kind of flatten it out, so we are going to take the bottom part off, and we are going to open it up. And we do not want to use all these parts. They are not crispy, they are kind of chewy, and they do not have a lot of flavor in them. So what you are going to do is take your knife, and it just goes like filleting a fish, kind of run it very close to the skin. And what you are left with is actually just the crunchy part of the pepper.
Now just like doing a julienne, you are going to take your knife, and make little thin strips. And what a brunoise basically is, is a diced julienne, so after we julienne the pepper, we are going to take all of these nice little juliennes, we are going to stack them up together, you are going to take your knife and you are going to run it through it again. Then there you have it, brunoise peppers.

Paso a Paso:
1) Cortar el tallo y hasta el final conservaremos el nudo esto nos dará un mejor soporte al momento de cortar.
2) Cortar la cebolla a la mitad transversalmente.
3) Haremos cortes perpendiculares a la tabla y luego paralelo a la misma.
Por último cortaremos de arriba abajo hasta obtener cuadros del mismo tamaño que serán nuestro brunoise.
