Bengali steamed fish with mustard masala (حلال)
Ingredients 4 tsp black mustard seeds 6 tbsp mustard oil 75g/2½oz onions, peeled, halved and thinly sliced 40g/1½oz garlic, peeled, thinly sliced 1 tsp turmeric powder 2 tsp Kashmiri chilli powder 1 tsp salt 4 x 175g/16oz steaks hake, cod, barramundi or blue-eye trevalla 50g/2oz red onion, peeled, thinly sliced 1 green cayenne chilli, thinly sliced Method 1. Place the mustard seeds into a spice grinder and grind to a fine powder. 2. Heat the mustard oil in a small frying pan, then add the onions, garlic, turmeric powder, chilli powder, mustard seed powder and salt. Gently fry for 3-4 minutes, or until the onions and garlic are softened and slightly browned. 3. Transfer the mixture into a food processor and blend to a smooth paste. Spread half of the paste over one side of each fish steak. 4. Tear off four 12in/30cm squares of aluminium foil and place each fish steak, paste side down, into the centre of each piece. Spread the remaining spice paste over each fish steak. 5. Scatter the sliced red onion over the fish and sprinkle over the green chilli. Fold up the foil and crimp the edges to seal and make four parcels. Place the parcels into a steamer, cover and steam for 20 minutes, or until the fish is cooked through (the fish should be opaque and flake easily when gently pushed at the thickest part). 6. Unwrap each parcel and lift the fish onto warmed serving plates. Spoon over the juices from the parcels and serve.

Ingredients:- Pomfret Fish - 1 (Washed and Marinated with Salt and Turmeric) Mustard oil - 4 Tbs Kalonji - 1/4 Ts Green Chilly - 4 to 5 Onions - 1/2 in Large Chopped Garlic - 3 Cloves grated Curd - 2 Tbs Red Chilly powder - 1/4 Ts Mustard Sauce - 2Tbs To Make the mustard sauce soak yellow mustard - 2Tbs, Black mustard - 1Tbs, Poppy seeds - 1Tbs, White Sesame seeds - 1 Tbs.. for a hr or 2.. then grind with 2 green chilly to smooth paste.. the remaining paste can frozen for later use. Heat 4Tbs of mustard oil in pan to smoking point.. fry the fish to golden brown. If you are using sea fish first fry few piece of onion then fry the fish. This will eliminate the smell. To remaining oil add green chilly and kalonji as they crack add onions fry for few mins then add the garlic and fry approx 3 mins ... Then add the mustard paste and curd mix... Sprinkle the red chilly powder mix ..Pour 1/2 cup of water .. when water comes to boil add the fish, cook for 15 to 20 mins on a medium flame. Garnish with coriander leaves and serve with hot rice. If you are cooking with Rohu or Katla use 2 piece and leave out onions and garlic and rest remains the same.

Yogurt 1-Cup Kashmiri Chili Powder 1-tsp Ginger Garlic Paste 2-tsp Turmeric Powder 1/4-tsp Garam Masala Powder 1/2 tsp Mustard Oil 3-tbsps Marinate for 24 hours and grill !!!
