We have heard a lot of people asking questions about 'How to make polenta' and 'why does my polenta taste bland', so in this video, we have sent Emi to the rescue with the simple and failsafe way to make the perfect polenta!
As Emi says in the video, this is a typical staple of an Italian diet, and our family grew up eating this wonderful food. It is best with any meats, veggies, it's just so versatile and delicious.
We used Polenta to make a delicious Pumpkin hot pot of which you can find the recipe in the UK Grazia Magazine on 28th October.

Ingredienti Ricetta
Tipo Bramata: 500 g di farina di mais gialla
2 Litri di acqua
15 g di sale grosso
Preparazione Polenta
Nota bene
Per preparare la polenta abbiamo utilizzato il classico paiolo in rame. Ad ogni modo, è possibile utilizzare anche una casseruola in acciaio od antiaderente.
1. Portare l'acqua ad ebollizione ed aggiungere il sale.
2. Versare a pioggia la farina di mais bramata, poca per volta, direttamente nell'acqua bollente. Continuare a mescolare ininterrottamente fino alla ripresa del bollore, al fine di evitare la formazione dei grumetti (detti fraticelli).
3. Mescolare la polenta molto spesso, abbassando la fiamma ma accertandosi di mantenere l'ebollizione.
Nota bene
Qui abbiamo utilizzato la farina gialla bramata, che darà origine ad una polenta rustica e ruvida. Questo tipo di farina gialla richiede una cottura molto lunga, di circa 45 minuti - 1 ora. Per velocizzare i tempi, è possibile sostituire la bramata con la fioretto (30 minuti di cottura) oppure con la farina istantanea (5 minuti).
Abbiamo inoltre suggerito le dosi per la realizzazione della polenta soda e compatta. Chi ama la polenta vellutata, può aggiungere 100-150 ml di acqua bollente oppure ridurre la dose di farina gialla.
4. Terminata la cottura, rovesciare la polenta sulla spianatoia in legno e servire.

Polenta
Polenta (Italian pronunciation: [poˈlɛnta], Northern Italian pronunciation [poˈlenta]) is a dish of boiled cornmeal rather popular in Northern Italian, Austrian, French, Croatian and Swiss cuisine. It may be consumed hot as a porridge or allowed to cool and solidify into a loaf, which is then baked, fried, or grilled.
Etymology
Latin polenta covered any hulled and crushed grain, especially barley-meal, and is derived from Latin pollen 'fine flour', which shares a root with pulvis 'dust'.
Description
As it is known today, polenta derives from earlier forms of grain mush (known as puls or pulmentum in Latin or more commonly as gruel or porridge), commonly eaten since Roman times. Before the introduction of corn (maize) from the New World in the 16th century, polenta was made with such starchy ingredients as farro, chestnut flour, millet, spelt, and chickpeas.
Polenta has a creamy texture due to the gelatinization of starch in the grain. However, its consistency may not be completely homogeneous if a coarse grind or hard grain such as flint corn is used.

We have heard a lot of people asking questions about 'How to make polenta' and 'why does my polenta taste bland', so in this video, we have sent Emi to the rescue with the simple and failsafe way to make the perfect polenta!
As Emi says in the video, this is a typical staple of an Italian diet, and our family grew up eating this wonderful food. It is best with any meats, veggies, it's just so versatile and delicious.
We used Polenta to make a delicious Pumpkin hot pot of which you can find the recipe in the UK Grazia Magazine on 28th October.

Tipo Bramata: 500 g di farina di mais gialla
2 Litri di acqua
15 g di sale grosso
Preparazione Polenta
Nota bene
Per preparare la polenta abbiamo utilizzato il classico paiolo in rame. Ad ogni modo, è possibile utilizzare anche una casseruola in acciaio od antiaderente.
1. Portare l'acqua ad ebollizione ed aggiungere il sale.
2. Versare a pioggia la farina di mais bramata, poca per volta, direttamente nell'acqua bollente. Continuare a mescolare ininterrottamente fino alla ripresa del bollore, al fine di evitare la formazione dei grumetti (detti fraticelli).
3. Mescolare la polenta molto spesso, abbassando la fiamma ma accertandosi di mantenere l'ebollizione.
Nota bene
Qui abbiamo utilizzato la farina gialla bramata, che darà origine ad una polenta rustica e ruvida. Questo tipo di farina gialla richiede una cottura molto lunga, di circa 45 minuti - 1 ora. Per velocizzare i tempi, è possibile sostituire la bramata con la fioretto (30 minuti di cottura) oppure con la farina istantanea (5 minuti).
Abbiamo inoltre suggerito le dosi per la realizzazione della polenta soda e compatta. Chi ama la polenta vellutata, può aggiungere 100-150 ml di acqua bollente oppure ridurre la dose di farina gialla.
4. Terminata la cottura, rovesciare la polenta sulla spianatoia in legno e servire.
