Italian cuisine (Italian: cucina italiana [kuˈtʃiːna itaˈljaːna]) has developed through centuries of social and political changes, with roots stretching to antiquity.
Significant changes occurred with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, now central to the cuisine but not introduced in quantity until the 18th century. Italian cuisine is noted for its regional diversity, abundance of difference in taste, and it is probably the most popular in the world, with influences abroad.
Italian cuisine is characterized by its simplicity, with many dishes having only four to eight ingredients. Italian cooks rely chiefly on the quality of the ingredients rather than on elaborate preparation. Ingredients and dishes vary by region. Many dishes that were once regional, however, have proliferated with variations throughout the country.
Cheese and wine are a major part of the cuisine, with many variations and Denominazione di origine controllata (DOC) (regulated appellation) laws. Coffee, specifically espresso, has become important in Italian cuisine.

Gennaro Contaldo, (born (1949-01-21)January 21, 1949) is an Italian chef and restaurateur, known for his association with his protégé, Jamie Oliver, and his partnership with fellow Italian chef Antonio Carluccio and their BBC Two television series Two Greedy Italians.
Contaldo grew up in the small village of Minori on the Amalfi Coast, developing his love for food from days he spent hunting with his father and grandfather, and collecting herbs for his mother. He began working in local restaurants at age of eight.
Contaldo left Italy in 1969 for London where he got married in 1974 and had three children - he later had another two children with his current partner. He briefly established an Italian antiques business before returning to cooking. Contaldo's inspiration to cook in England was partly due to the availability of game and fungi, both important components of Amalfitan cuisine. In media interviews, Contaldo has frequently voiced his enthusiasm for foraged wild food, especially mushrooms.
James Trevor "Jamie" Oliver, MBE (born 27 May 1975) is an English celebrity chef, restaurateur, and media personality known for his food-focused television shows, cookbooks and more recently his global campaign for better food education.
Oliver was born and raised in the village of Clavering. His parents ran a pub/restaurant, The Cricketers, where he practiced cooking in the kitchen with his parents. He was educated at Newport Free Grammar School.
Oliver left school at age sixteen with two GCSE qualifications in Art and Geology and went on to attend Westminster Technical College now Westminster Kingsway College. He then earned a City & Guilds National Vocational Qualification (NVQ) in home economics.
His first job was a pastry chef at Antonio Carluccio's Neal Street restaurant, where he first gained experience with preparing Italian cuisine, and developed a relationship with his mentor Gennaro Contaldo. (Later in his career, Oliver employed Contaldo to help run his successful collection of high street restaurants, Jamie's Italian), Oliver moved to The River Café, Fulham, as a sous chef. It was there that he was noticed by the BBC in 1997, after making an unscripted appearance in a documentary about the restaurant, Christmas at the River Cafe.
Carbonara (Italian: [karboˈnaːra]) is an Italian pasta dish from Rome based on eggs, cheese (Pecorino Romano or Parmigiano-Reggiano), bacon (guanciale or pancetta), and black pepper. Spaghetti is usually used as the pasta; however, fettuccine, rigatoni, linguine or bucatini can also be used. The dish was created in the middle of the 20th century.
The pork is cooked in fat, which may be olive oil, lard, or less frequently butter. The hot pasta is combined with a mixture of raw eggs, cheese, and a fat (butter, olive oil, or rarely cream) away from additional direct heat to avoid coagulating the egg, either in the pasta pot or in a serving dish. The eggs should create a creamy sauce, and not curdle.Guanciale is the most commonly used meat in Italy, but pancetta and local bacon are also used. Recipes differ in the use of egg: some use the whole egg, others only the yolk, some a mixture.
Cream is not common in Italian recipes but is often used elsewhere. Garlic is similarly found mostly outside Italy.

Spaghetti Carbonara is thought to originate in the Lazio region of Italy, first made for the carbonari (charcoal workers) and is an authentic recipe, now popular the world over. Perhaps one of the easiest and quickest Italian pasta recipes, a Spaghetti Carbonara can be rustled up at home for a tasty week night supper. Cannoli are fun to make and really not that difficult. You can make the shells ahead and fill them just before serving. My shells are crispy with blisters all over so be careful, they'll shatter as you bite into the sweet, creamy ricotta filling studded with candied orange and chocolate chips. Pasta fazool, or pasta e fagioli, is a healthy and inexpensive peasant dish. You can have this one-pot meal that packs lots of flavor and goodness on your table in less than an hour. Pasta e fagioli is made all over Italy and varies from region to region. One big difference is that mine has no meat. Up north they usually add pancetta to the aromatics as the base of the soup. Some people like to add tomato puree. Some people don't add tomato, they like a white pasta fazool. Mine has a light pink hue. I use a little tomato puree. Make it any way you like it, just don't make it the way they do at Olive Garden.
