A consommé is a richly flavored, amber, transparent soup made from broth or stocks that has been completely clarified. Consommés may be served plain or garnished, and served hot, cold, or iced. When iced, the gelatin in the consommé sets to a soft, jellied consistency. Consommés may be made from any stock, however they are most commonly made from white beef or veal stock, game stock, poultry, or fish stock. Consommé gets some of its amber color from burnt onions. A consommé that has been enriched and concentrated is called a double consommé.
