Pickling is the process of preserving or expanding the lifespan of food by either anaerobic fermentation in brine or immersion in vinegar. The resulting food is called a pickle, or, to prevent ambiguity, prefaced with the adjective pickled. The pickling procedure will typically affect the food's texture and flavor. In East Asia, vinaigrette (vegetable oil and vinegar) is also used as a pickling medium.
Another distinguishing characteristic is a pH 4.6 or lower, which is sufficient to kill most bacteria. Pickling can preserve perishable foods for months. Antimicrobial herbs and spices, such as mustard seed, garlic, cinnamon or cloves, are often added. If the food contains sufficient moisture, a pickling brine may be produced simply by adding dry salt. For example, German sauerkraut and Korean kimchi are produced by salting the vegetables to draw out excess water. Natural fermentation at room temperature, by lactic acid bacteria, produces the required acidity. Other pickles are made by placing vegetables in vinegar. Unlike the canning process, pickling (which includes fermentation) does not require that the food be completely sterile before it is sealed. The acidity or salinity of the solution, the temperature of fermentation, and the exclusion of oxygen determine which microorganisms dominate, and determine the flavor of the end product.
Have you ever made pickles at home? You should -- it couldn't be easier. Today, I'm slicing cucumbers into chips (this is a great shape to use with sandwiches, but you can cut them however you like) and pickling them in a vinegar brine. These tangy vegetables will be ready to eat after a few hours and will last in your fridge for the rest of the summer. Make them today and enjoy! Sarah's Tip of the Day: When pickling, cucumbers with fewer seeds and thinner skins work best. Choose small Kirby cucumbers or larger European ones. Went to the farmers market and picked up some great cucumbers and jalapeños. This is how I make dill pickles and pickled jalapeños. When properly done, they will have a shelf life of about 12 months. These taste way better than any store bought pickles, and the jalapeños are awesome.

I caught my self thinkin' of you
The moment we spent together
I remember when I owe you
Memories that last forever
Walking handin' hand
Sharing laughters when you are still mine
Every time I look in your eyes
I see a paradise
Refrain:
It's hard for me to let you go
How can I find better
If you're the best that all I know
All I know
Chorus:
Since the day that I found you
My heart never stop
Never stop from loving you
And it's heartbeat of mine
Are yours all the time
I'll be waitin'
I'll be waiting for you
The promises of yesterday
It still so fresh and here to say
Every word your always say
I can't forget until today
Second chance, second spent
All I want is to be back in your arms again
Refrain:
It's hard for me to let you go
How can I find better
If you're the best that all I know
All I know
Chorus
Since the day that I found you
My heart never stop
Never stop from loving you
And it's heartbeat of mine
Are yours all the time
I'll be waitin', I'll be waiting for you
It's to late to realize
That I am nothing without you by my side
Close to the end it's hard for me to say
There's no more you and I
There's no more you and I
Adlib:
Since the day that I found you
(My Heart is yours)
