It's been a wild, heartbreaking week around the world. The sadness of the attacks in Paris, Beirut and Mali, remind us that despite the widespread good in the world, (indeed there's far more love than hate), there are those for whom love and compassion hold no sway.
In reading about the Paris attack, I was struck by the story of a young woman who hid behind furniture to protect herself and imagined the face of every person she'd ever loved, holding tight to those images as she cowered in fear. She survived, as though the love she generated in her mind and heart engulfed her in a protective bubble. Focusing on love, she got through.
It's easy to react to these sickening attacks in fear and hatred. What's harder is to disconnect from the feelings you may hold for the terrorists and focus instead on love. Whether it's for your family and friends, your work, hobbies, your state and country, or for humanity as a whole, focusing on love crowds out hate.
While it's important to stay informed, it's quite another thing to steep yourself in violent news stories. They are designed to keep you hooked on negative information, fomenting your fear, anger and feelings of retribution, generating more discord around the world. And although something clearly needs to be done to stop this madness, you are not the person in charge to make that decision. All you can do is stay present to your life, give gratitude for all that you are and love your journey.
As we head into Thanksgiving, I want to wish you all a happy and healthy holiday, surrounded by people you love and love you. This year, as in all years, I am grateful for my parents and Fozzy, Robert and Eva, my many friends and clients and for every single one of you! Thank you for participating in my vision of a nutritious world, encouraging me to do the things I love most which are write, cook, eat and share. You make my life better. More than ever, I'm focused on the love I hold for all my people and every single facet of my life. I wouldn't change a thing.

Morning Millet Breakfast Bowl
This is a nice alternative to oatmeal. You can also make a savory version of this using cooked leftover vegetables, olive oil and some chopped nuts.
Ingredients
½ to ¾ cup cooked millet
5-6 chopped walnuts
1 tablespoon unsweetened coconut flakes
1 small chopped apple (or apple compote). You can also use dried fruit instead
1 teaspoon grade B maple syrup
Directions
Combine ingredients and enjoy for a hearty, warming breakfast.
Saffron-Scented Pumpkin and Millet Croquettes
Oh my goodness, these are amazing! Growing up, my Cuban grandmother made croquettes from leftover chicken or ham, blended with white flour and milk. These are far healthier but remind me so much of my abuela and her creativity in the kitchen. I hope you enjoy them as much as I do!
Ingredients
1 small pumpkin cut in half. Remove seeds and pulp
1½ cups cooked millet (cook according to package instructions)
1 shallot, minced
1 egg, beaten
Pinch of saffron
½ teaspoon ground nutmeg
½-3/4 teaspoon Himalayan salt, depending on taste preference
Olive oil for baking pumpkin and frying croquettes
Directions
Preheat oven to 350.
Cook millet according to package instructions. You’ll need approximately ¾ - 1-cup dry uncooked millet to yield 1½ cups cooked.
Coat the bottom of a baking sheet with olive oil and place pumpkins flesh side down, skin side up. Rub some olive oil on skin before baking. Bake approximately 30 to 40 minutes until fork tender. Remove from heat and allow to cool.
Remove pumpkin flesh from its shell and into a mixing bowl. Using a fork, mash well.
Sauté shallot in a little olive oil until translucent. Add nutmeg, saffron and salt and continue to cook until slightly browned.
Add cooked shallot to mashed pumpkin and stir well. Add cooked millet and stir until well combined.
Add the beaten egg to the mixture and continue to blend well. The egg is optional if you’re a vegan, although it does allow the croquette to set better.
Using a tablespoon, scoop out some batter into your hand and shape into a patty. Repeat until all the batter is used.
Add olive oil to skillet and heat. Fry croquettes on each side until browned.
Serve and enjoy!

MILLETS -- The Miracle Grains
Gods Own Crops, as they are called in the Deccan Development Society, millets are truly miracle grains. India cultivates a total of 143 million hectares of farmland of which 92 million ha is rainfed, forming nearly 65% of all arable land in the country. They are the mainstay of agriculture, diet and cultural systems of these regions. These rainfed crops which are mainly millets support 40% of the country's population. They contribute an incredible 44% of the total foodgrains produced in the country. More than two thirds of the country's livestock live in millet regions.
Most millet fields are inherently biodiverse. The famous Baranaja cropping systems of the Himalayas, Saat Dhan in Rajasthan and the Pannendu Pantalu of the Deccan are living examples of the vibrant biodiversity that surrounds millet farming. Since much of millet farming is ecological, it generates a unique phenomenon called 'uncultivated foods' which shores up the food and nutritional security for the poor. The recent analysis of millets of farming systems has come to the amazing conclusion that millet farming saves nearly six million litres of water per acre, a bonanza for the water starved times we are living in. They can stand up to the most modern crisis of them all, the climate change. Seen from any angle, millets shine forth as miracle grains.
The film Millets, the Miracle Grains, made by the dalit peasant women filmmakers of the DDS Community Media Trust is an eloquent video tribute to millets, undermined by the dominant grains and the politics that surround them. This film is unique in the sense that the farmers who made it are themselves cultivators and consumers of millets. Therefore, from their authentic understanding of the role of millets in food and nutrition sovereignty, the film-makers pan across the millet landscape to press home the point that the humble millets are not so humble after all. Millets show us the way out of our food, fodder, nutrition and water crisis, because they are sturdy enough to grow on the poorest lands of the very poor people. They alone can withstand the harshest of climates in the arid and semi arid regions, and continue to offer food and fodder security for the multitudes of our population.

How to Cook Millet: Millet is prepared like rice, and takes 20 - 25 minutes to cook. You can also cook millet in a rice cooker or pressure cooker. Find this recipe at http://bit.ly/17gch4r
You might be thinking, oh millet - isn't that bird seed or hippie food?
Well, yes, and it's also extremely nutritious, just as nutritious as quinoa, if not more so.
Plus it is 1/5th the price of quinoa.
So in my book millet is the new quinoa.
First thing I'm going to do is cook some basic millet. The way that I like to cook it is to toast it and then add some boiling water.
Two and a half cups of water to one cup of millet
A little bit of salt, bring it back to a boil.
Put the lid on and cook it for 20 to 25 minutes.
Now I've got my sauté pan heating up and I'm going to stir and toast this millet until it starts to turn a nice golden brown color.This is the kind of millet that you find in North America, the one that they feed to birds.
I've got the heat on medium high, stirring all the while, no oil in the pan.
I read somewhere that if it starts popping, then you've got the heat too high. Mine is popping so I turned it down a bit.
It's starting to turn color now. Maybe a little more.
I think that this is toasted now, it's not burnt but it's definitely toasted.
I need 2 1/2 cups of boiling water, and 1/4 tsp salt.
Add the boiling water and salt, bring it to a boil. It boils as soon as you put the boiling water in. Put the lid on, set the timer for twenty minutes.
When you roast millet, it cooks up really nice and dry and fluffy. When you don't roast it, it tends to be gummier, which doesn't matter if you're going to use it to make cereal or put it in a stew.
But if you want to serve it with a nice sauce, like a vegetable curry sauce or a mushroom gravy sauce, then you want it nice and dry and fluffy.
This is just plain cooked millet, no roasting or anything like that.
This morning I used it to make some millet chickpea patties.

This is a millet and mung dahl stew, something quick and comforting and satisfying that you can make for dinner, especially if you have already cooked dahl and millet in the fridge.
Even if you don't. It just takes twenty minutes to half an hour to cook those things, and you can always make extra.

To make millet porridge, use some of this cooked millet and a couple of cups of non-dairy milk, some raisins, nuts, pumpkin seeds, sunflower seeds.

Millet is really pretty versatile, you can have it for breakfast, lunch or dinner, and in many parts of the world they do exactly that.
We are lucky here that we have other things that we can eat but if you feel like you're missing out on quinoa because it's so expensive, just go for millet.

For this recipe, you will need: millet grain, water (or stock or broth), oil or butter, frying pan or saute pan, 2 to 4 quart pot with a lid. (An alternative to the method in this video is to toast the millet as shown and then pour the water into the frying pan with the millet, stir, bring to a slow bubble, turn heat to low, cover, and cook in the frying pan for 25 minutes. With this method, you do not need a separate pot.)

Pearl millet is the most drought tolerant warm season coarse grain cereal grown on 26 million ha in some of the harshest semi-arid tropical environments of south Asia and sub-Sahara Africa. India has the largest area (varying between 9-10 million ha) under pearl millet which is at third rank after rice and wheat. Pearl millet is often grown on infertile soils and under water-limited conditions where no other cereal crop can be successfully grown. The millets are a group of small-seeded species of cereal crops or grains, widely grown around the world for food and fodder. They do not form a taxonomic group, but rather a functional or agronomic one. Their essential similarities are that they are small-seeded grasses grown in difficult production environments such as those at risk of drought. They have been in cultivation in East Asia for the last 10,000 years.
Millets have been important food staples in human history, particularly in the semi-arid tropics of Asia and Africa. They grow in harsh environments where other crops do not grow well. Improvements in production, availability, nutritional content, storage and utilization technology for millets may significantly contribute to the household food security and nutrition of the inhabitants of these areas.
The most popular staple amongst millets is the pearl millet. India is the world's largest producer of millets. In the 1970s, all of the millet crops harvested in India were used as food staple. By 2000s, the annual millets production had increased in India, yet per capita consumption of millets had dropped by between 50% to 75% in different regions of the country. As of 2005, the majority of millets produced in India is being used for alternative applications such as livestock fodder and alcohol production.

Pearl millet is the most drought tolerant warm season coarse grain cereal grown on 26 million ha in some of the harshest semi-arid tropical environments of south Asia and sub-Sahara Africa. Pearl millet is often grown on infertile soils and under water-limited conditions where no other cereal crop can be successfully grown. Morning Millet Breakfast Bowl
This is a nice alternative to oatmeal. You can also make a savory version of this using cooked leftover vegetables, olive oil and some chopped nuts.
Ingredients
½ to ¾ cup cooked millet
5-6 chopped walnuts
1 tablespoon unsweetened coconut flakes
1 small chopped apple (or apple compote). You can also use dried fruit instead
1 teaspoon grade B maple syrup
Directions
Combine ingredients and enjoy for a hearty, warming breakfast.
Saffron-Scented Pumpkin and Millet Croquettes
Oh my goodness, these are amazing! Growing up, my Cuban grandmother made croquettes from leftover chicken or ham, blended with white flour and milk. These are far healthier but remind me so much of my abuela and her creativity in the kitchen. I hope you enjoy them as much as I do!
Ingredients
1 small pumpkin cut in half. Remove seeds and pulp
1½ cups cooked millet (cook according to package instructions)
1 shallot, minced
1 egg, beaten
Pinch of saffron
½ teaspoon ground nutmeg
½-3/4 teaspoon Himalayan salt, depending on taste preference
Olive oil for baking pumpkin and frying croquettes
Directions
Preheat oven to 350.
Cook millet according to package instructions. You’ll need approximately ¾ - 1-cup dry uncooked millet to yield 1½ cups cooked.
Coat the bottom of a baking sheet with olive oil and place pumpkins flesh side down, skin side up. Rub some olive oil on skin before baking. Bake approximately 30 to 40 minutes until fork tender. Remove from heat and allow to cool.
Remove pumpkin flesh from its shell and into a mixing bowl. Using a fork, mash well.
Sauté shallot in a little olive oil until translucent. Add nutmeg, saffron and salt and continue to cook until slightly browned.
Add cooked shallot to mashed pumpkin and stir well. Add cooked millet and stir until well combined.
Add the beaten egg to the mixture and continue to blend well. The egg is optional if you’re a vegan, although it does allow the croquette to set better.
Using a tablespoon, scoop out some batter into your hand and shape into a patty. Repeat until all the batter is used.
Add olive oil to skillet and heat. Fry croquettes on each side until browned.
Serve and enjoy!

It's been a wild, heartbreaking week around the world. The sadness of the attacks in Paris, Beirut and Mali, remind us that despite the widespread good in the world, (indeed there's far more love than hate), there are those for whom love and compassion hold no sway.
In reading about the Paris attack, I was struck by the story of a young woman who hid behind furniture to protect herself and imagined the face of every person she'd ever loved, holding tight to those images as she cowered in fear. She survived, as though the love she generated in her mind and heart engulfed her in a protective bubble. Focusing on love, she got through.

India cultivates a total of 143 million hectares of farmland of which 92 million ha is rainfed, forming nearly 65% of all arable land in the country. They are the mainstay of agriculture, diet and cultural systems of these regions. These rainfed crops which are mainly millets support 40% of the country's population. They contribute an incredible 44% of the total foodgrains produced in the country. More than two thirds of the country's livestock live in millet regions.
Most millet fields are inherently biodiverse. The famous Baranaja cropping systems of the Himalayas, Saat Dhan in Rajasthan and the Pannendu Pantalu of the Deccan are living examples of the vibrant biodiversity that surrounds millet farming. Since much of millet farming is ecological, it generates a unique phenomenon called 'uncultivated foods' which shores up the food and nutritional security for the poor. The recent analysis of millets of farming systems has come to the amazing conclusion that millet farming saves nearly six million litres of water per acre, a bonanza for the water starved times we are living in. They can stand up to the most modern crisis of them all, the climate change. Seen from any angle, millets shine forth as miracle grains.
The film Millets, the Miracle Grains, made by the dalit peasant women filmmakers of the DDS Community Media Trust is an eloquent video tribute to millets, undermined by the dominant grains and the politics that surround them. This film is unique in the sense that the farmers who made it are themselves cultivators and consumers of millets. Therefore, from their authentic understanding of the role of millets in food and nutrition sovereignty, the film-makers pan across the millet landscape to press home the point that the humble millets are not so humble after all. Millets show us the way out of our food, fodder, nutrition and water crisis, because they are sturdy enough to grow on the poorest lands of the very poor people. They alone can withstand the harshest of climates in the arid and semi arid regions, and continue to offer food and fodder security for the multitudes of our population.

You might be thinking, oh millet - isn't that bird seed or hippie food?
Well, yes, and it's also extremely nutritious, just as nutritious as quinoa, if not more so.
Plus it is 1/5th the price of quinoa.
So in my book millet is the new quinoa.
First thing I'm going to do is cook some basic millet. The way that I like to cook it is to toast it and then add some boiling water.
Two and a half cups of water to one cup of millet
A little bit of salt, bring it back to a boil.
Put the lid on and cook it for 20 to 25 minutes.
Now I've got my sauté pan heating up and I'm going to stir and toast this millet until it starts to turn a nice golden brown color.This is the kind of millet that you find in North America, the one that they feed to birds.
I've got the heat on medium high, stirring all the while, no oil in the pan.
I read somewhere that if it starts popping, then you've got the heat too high. Mine is popping so I turned it down a bit.
It's starting to turn color now. Maybe a little more.
I think that this is toasted now, it's not burnt but it's definitely toasted.
I need 2 1/2 cups of boiling water, and 1/4 tsp salt.
Add the boiling water and salt, bring it to a boil. It boils as soon as you put the boiling water in. Put the lid on, set the timer for twenty minutes.
When you roast millet, it cooks up really nice and dry and fluffy. When you don't roast it, it tends to be gummier, which doesn't matter if you're going to use it to make cereal or put it in a stew.
But if you want to serve it with a nice sauce, like a vegetable curry sauce or a mushroom gravy sauce, then you want it nice and dry and fluffy.
This is just plain cooked millet, no roasting or anything like that.
This morning I used it to make some millet chickpea patties.

This is a millet and mung dahl stew, something quick and comforting and satisfying that you can make for dinner, especially if you have already cooked dahl and millet in the fridge.
