A 'Stayman' (or 'Stayman Winesap') is a triploid apple cultivar developed in 1866 by Joseph Stayman of Leavenworth County, Kansas; it was sold by nurseries from 1895. 'Stayman' apples remain a locally popular cultivar of apples where grown.
'Stayman' is a medium-sized, roundish-conic apple with a thick, greenish-yellow skin covered almost entirely with a deep red blush, darker red stripes, and russet dots. The stem cavity often shows heavy russetting. Firm, tender, finely textured, juicy, crisp, and yellowish-green, the flesh is tart and spicy. They keep very well, and are used primarily as dessert apples, but also make a fine addition to blended cider.

Tim Hensley, Urban Homestead, Bristol, Va., talks about the Williams Pride apple. This variety ripens the end of July thru mid-August. Has a rich, spicy flavor, not unlike a Stayman Winesap. Keeps six months in cold storage. Is scab immune and generally disease resistant. An excellent mid-season variety for the South.

You will want to use a good cooking apple, such as Granny Smith, McIntosh, Stayman, or similar 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/2 cup water Crumbs: 1 1/4 cup whole wheat flour 1 1/2 cups sweetener; sugar, Splenda, Stevia, date sugar 1/2 cup butter, margarine or Earth Balance 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg DIRECTIONS: Preheat oven to 350F. Apples: Place peeled, cored, and sliced apples in a 9 x 13 x 2 baking dish. Sprinkle cinnamon and nutmeg over the apples; stir to be sure spices are evenly distributed throughout the apples.
