Here in Chengdu, I found this local noodle joint that serves up some really specific and unique noodles. The menu was on the wall and you just choose what you want and pay for them upfront.
I ordered 3 bowls:
1) The house minced pork noodles which were full of bean paste, sesame, chilies, and of course the freshest hot boiled noodles cooked to perfection. They had a strong sesame flavour which was really nice!

My family enjoy this type of Chinese Egg Noodles. They are thin, chewy, and springy without any addictive added. Only wheat flour, sea salt, duck eggs, and a bit of water. There's no kneading involved and all you need is a rolling pin to beat the dough until it's smooth and elastic. It's amazingly easy and what a difference it makes in taste. These egg noodles are great for making wonton noodles, simple ginger and scallions noodles, or top with of your favorite sauce.

3. Add back the noodles and mix them all together.
4. Add sauce and mix well.
5. Add the scallions and mix well.

Noodles in Szechuan are a staple food that can be enjoyed on almost every street. Come for a taste with me at a famous noodle joint here in Chengdu.

Here in Chengdu, I found this local noodle joint that serves up some really specific and unique noodles. The menu was on the wall and you just choose what you want and pay for them upfront.
I ordered 3 bowls:
1) The house minced pork noodles which were full of bean paste, sesame, chilies, and of course the freshest hot boiled noodles cooked to perfection. They had a strong sesame flavour which was really nice!
2) The specialty classic beef noodle soup, the 特使红烧牛肉面. It was a little spicy because this is Szechuan and wow it was nice!
3) The minced beef with red/green pepper noodles. These were SPICY, really SPICY! They were painfully enjoyable. Each bite got hotter and hotter and by the end of the bowl I was so happy but also in a lot of pain, and they also turned out to be my favourite in the end, winning over the sesame flavoured noodles.
4) I also ordered a bowl of steamed egg custard, and the fenzhengrou (Steamed spicy pork in rice flour) which were both really nice, the steamed egg custard was particularly smooth and enjoyable.
Overall this restaurant was a perfect representation of some of the noodles you can find in Szechuan. Although I did not have any DanDan noodles (担担面), I can say that this meal is a perfect introduction to Chinese food and Chinese noodles in general. Spicy, strong hints of bean paste, cilantro, sesame, just beautiful flavours!

Here in Chengdu, I found this local noodle joint that serves up some really specific and unique noodles. The menu was on the wall and you just choose what you want and pay for them upfront.
I ordered 3 bowls:

There's no kneading involved and all you need is a rolling pin to beat the dough until it's smooth and elastic. It's amazingly easy and what a difference it makes in taste. These egg noodles are great for making wonton noodles, simple ginger and scallions noodles, or top with of your favorite sauce.

Ingredients
20 ounces of Chinese styled fresh wheat noodles
2 ounces of chicken breast, chopped
4 tablespoons of oil
4 tablespoons of doenjang yellow soybean paste
1/4 cup of water
1 tablespoon of dark soy sauce
1 cucumber, julienned
2 tablespoons of scallions, chopped
Directions
In a bowl, add soy bean sauce, water, and dark soy sauce. Mix well.
In a pan, add 1 tablespoon of oil, then add the chopped chicken over medium high heat until well done. Then add the soy bean sauce mixture, and stir fry until the aroma comes out.
Boil water in a medium saucepan, and add 1 tablespoon of oil in the water to prevent the noodles from sticking together. Then cook the noodles until al dente. Refresh the noodles with cold water. Pour 2 tablespoons of vegetable oil and then mix well. Again, this prevents the noodles from sticking together.
Serve the noodles in a bowl, and topped with the soybean sauce, cucumber, and scallions.

Chinese Stir Fried Vegetable Lo Mein Noodles Recipe 青菜炒麵 by CiCi Li
Today let's learn how to cook Chinese stir fried vegetable Lo Mein Noodles together! https://www.facebook.com/cicili 今天我們一起學做青菜炒麵 !Yes yes~ As you can see that I'm still a chef in Training at Radiance Fine Asian Cuisine. However, I'd love to share my journey to becoming a real Chinese Master Chef with you. I hope you like this recipe~!
Ingredients:
16 ounces of Chinese Lo Mein (or Linguine noodles)
½ cup of julienned Chinese cabbage
1/4 cup of julienned onions
1/ 8 cup of julienned mushrooms
1/8 cups of julienne scallions
1/16 cups of carrots
1 tea spoon of oyster sauce
1 tea spoon of seafood sauce
½ tea spoon of salt
½ tea spoon of sugar
½ tea spoon of soy sauce
½ tea spoon of dark soy sauce
½ tea spoon of of sesami oil
a dash of pepper
Instructions:
1. Cook noodles according to directions on package or boil it for about minutes. Cool the noodles down with cold water to prevent sticking. Set aside.
2. In the skillet, heat oil, add onions, mushrooms, cabbages, and carrots. Stir fried for about 1 minute to 3 minutes.
3. Add back the noodles and mix them all together.
4. Add sauce and mix well.
5. Add the scallions and mix well.

Serving 2 people
Ingredients
20 ounces of Chinese styled fresh wheat noodles
2 ounces of chicken breast, chopped
4 tablespoons of oil
4 tablespoons of doenjang yellow soybean paste
1/4 cup of water
1 tablespoon of dark soy sauce
1 cucumber, julienned
2 tablespoons of scallions, chopped
Directions
In a bowl, add soy bean sauce, water, and dark soy sauce. Mix well.
In a pan, add 1 tablespoon of oil, then add the chopped chicken over medium high heat until well done. Then add the soy bean sauce mixture, and stir fry until the aroma comes out.
Boil water in a medium saucepan, and add 1 tablespoon of oil in the water to prevent the noodles from sticking together. Then cook the noodles until al dente. Refresh the noodles with cold water. Pour 2 tablespoons of vegetable oil and then mix well. Again, this prevents the noodles from sticking together.
Serve the noodles in a bowl, and topped with the soybean sauce, cucumber, and scallions.
