2tsp cooking wine (optional)

Melba toast is a very dry, crisp and thinly sliced toast often served with soup and salad or topped with either melted cheese or pâté. It is named after Dame Nellie Melba, the stage name of Australian opera singer Helen Porter Mitchell. Its name is thought to date from 1897, when the singer was very ill and it became a staple of her diet. The toast was created for her by chef and fan Auguste Escoffier, who also created the Peach Melba dessert for her. The hotel proprietor César Ritz supposedly named it in a conversation with Escoffier.
Melba toast is usually made by lightly toasting bread in the normal way of making toast. Once the outside of the bread is slightly firm, it is removed from the toaster and then each slice is cut laterally with a bread knife to make two slices that are half the original thickness of the bread. These two thin slices are then toasted again to make Melba toast. Melba Toast is also available commercially, and was at one time given to infants who were teething as a hard food substance on which to chew.

• ⅓ minced onion
• 2 minced shallots
• ½ tbsp cornstarch
• 1 beaten egg
• fish sauce
• salt
• freshly ground black pepper
• 1 egg yolk mixed with 1 tbsp water
• few tbsp all purpose flour for dusting

Paté para Fiestas o Diario
Un paté rico, muy barato, muy popular y fácil de hacer que es lo suficientemente elegante para poner en tus mejores reuniones como parte de los aperitivos pero tan rico y sano para tomar en familia a cualquier hora. Aporta muchas vitaminas y minerales que necesitamos sin ningún aditivo artificial y a un precio realmente bajo.
Ingredientes:
• 500 gr. -- 1 lb. higaditos pollo
• 1/2 taza + 2 cucharadas - 145 gr mantequilla -- no margarina
• 1 chalota o 1 cebolla mediana super picadita (no se decirlo en español), minced
• 1/3 taza -- 80 ml. cogñac o brandy o vino de Madeira
• 1 taza - 240 ml. nata liquida o crema de leche
• 1/2 cucharadita sal
• 1 cucharadita de Allspice a veces llamada Pimienta Inglesa. Como el allspice no se encuentra en todos los países ni en todas las tiendas usar nuestro sustituto:
• *** sustituto de Allspice: 1/4 cucharadita de cada: clavo molido, canela molida, nuez moscada molida y pimienta negra molida -- remover bien
• Preparación
• Limpiar, lavar y cortar los higaditos en trozos pequeños.
• Rehogar las chalotas picadas o cebolla con una pizca de sal en 2 cucharadas de mantequilla hasta que comience a ablandarse, a continuación, añadir los hígados.
• Cocinar hasta que estén firmes, pero todavía un pelín de color de rosa en el interior. Añadir el cogñac. Calentar hasta que quede un poco reducido el cogñac.
• Añadir los higaditos con la salsa de cogñac y restos de la sartén a un triturador o blender.
• Derretir la 1/2 taza de mantequilla en la sartén, y luego agregarlo, la crema o nata y la sal y allspice o sustituto (1/4 cucharadita de cada: clavo molido, nuez moscada molida, pimienta negra molida y canela molida) al procesador y mezcle hasta que esté suave. **No va a ser firme en este punto, pero la grasa del paté se endurece cuando se pone frío.
• Ponga en un recipiente tapado en la nevera hasta que esté completamente frío y firme.
• Servir con galletas o pequeñas tostadas o rebanadas de baguette, mostaza y pepinillos
• IMPORTANTE - Si se sirve en una fiesta, recuerde que se ablandará si se deja a temperatura ambiente por mucho tiempo.
