How to prepare Manakish at home:) المناقيش
"Manakish, also manaqish, manaeesh or manakeesh or in singular form man'ousheh (Arabic: مناقيش manāqīsh; sometimes called معجنات mu'ajjanāt 'pastry') is a popular Syrian,Palestinian and Lebanese food consisting of dough topped with thyme, cheese, or ground meat. Similar to a pizza, it can be sliced or folded, and it can either be served for breakfast or lunch. The word manaqish is the plural of the Arabic word manqūshah (from the root verb naqasha 'to sculpt, carve out'), meaning that after the dough has been rolled flat, it is pressed by the fingertips to create little dips for the topping to lie in."
Za'tar زعتر It is mostly thyme (a condiment made from the dried herb(s), mixed with sesame seeds, dried sumac, and often salt, as well as other spices)

Ein sehr typisches Frühstück im arabischen Raum ist Manaisch. Manaisch sind kleine "Pizzen", die verschieden belegt werden können. Die Lieblingsvarianten sind:
- Käse (Gemisch aus Mozarella, Gouda und Hirtenkäse)
- Zatar (Gemisch aus gerebeltem Thymian, Sesam und Sumak)
- Zatar mit Tomaten und Zwiebeln
- Kaschk (getrocknete Joghurtmasse) mit scharfer Paprikapaste, Walnüsse und Zwiebeln
Manaisch werden in einem arabischen Pizzaofen gebacken. Diesen findet man in vielen arabischen Supermärkten. Alternativ könnt Ihr die Manaisch auch im Backofen backen. Auf höchster Gradstufe für 5-6 Minuten in der untersten Schiene und anschließend für 1-2 Minuten auf oberster Schiene backen.
Im Libanon wird zu Manaisch gerne eine eiskalte Pepsi getrunken. Hier in Deutschland trinken wir eher schwarzen Tee dazu. :)
Serviert wird Manaisch mit frischer Minze, Tomaten, Gurken und Oliven. Die Manaisch können auch damit befüllt werden und anschließend als Rolle gegessen werden. Weiter unten findet Ihr das Video-Tutorial. Viel Spaß beim Nachmachen! :)

الشيف لؤي العاصمي يقوم باعداد عجينة مناقيش الجبنة و الزعتر
الكمية لاعداد عشر معجنات
المكونات:
1 كيلو طحين ، 20 غرام سكر، 10 غرام ملح، 10 غرام خميره لكل 1 كيلو
30 غرام حليب بوادر، 250 غرام ماء.
الطريقة:
نقوم باضافة السكر والملح والخميرة والحليب الى الطحين وعجنهم مع بعضهم واضافة الماء على مراحل حتى تتماسك العجينة.
بعد ذلك نقوم بترك واراحة العجينة لمدة خمس دقائق.

Chef louy Asimi is preparing Manakeesh Dough for cheese and Za'ater
Ingredients
1kg flour
20 grams sugar
0.10 grams of salt
0.10 grams yeast per 1 kg
30 grams of milk
0.250 grams of water
We add sugar, salt, yeast and milk to the flour and join with each other with addition of water in stages until the dough holds together
After that we leave the dough to rest for five minutes

Ingredients / المكونات 2 cups flour / كوبين طحين 1 tsp yeast / 1 م. ص. خميرة 1 tsp sugar / 1 م. ص. سكر 2 tbsp yogurt or milk powder / ملعقتين كبيرة لبن أو حليب بودرة 1/2 tsp baking powder/ نصف م. ص. بايكينغ باودر 1/4 tsp salt / ربع م. ص. ملح 1- 1/2 cup water/ كوب أو نصف كوب ماء First we mix sugar with yeast and dissolve it with little water and keep it for 5 - 10 min. to activate. نمزج الخميرة والسكر مع القليل من الماء وتترك جانبا لمدة 5 - 10 دق. حتى تتفاعل Then we add all ingredients together and knead the dough until it is one piece. نمزج المكونات جميعها ونضيف الماء بشكل تدريجي ونعحن العجينة حتى تصبح متماسكة -

"Manakish, also manaqish, manaeesh or manakeesh or in singular form man'ousheh (Arabic: مناقيش manāqīsh; sometimes called معجنات mu'ajjanāt 'pastry') is a popular Syrian,Palestinian and Lebanese food consisting of dough topped with thyme, cheese, or ground meat. Similar to a pizza, it can be sliced or folded, and it can either be served for breakfast or lunch. The word manaqish is the plural of the Arabic word manqūshah (from the root verb naqasha 'to sculpt, carve out'), meaning that after the dough has been rolled flat, it is pressed by the fingertips to create little dips for the topping to lie in."

Ein sehr typisches Frühstück im arabischen Raum ist Manaisch. Manaisch sind kleine "Pizzen", die verschieden belegt werden können. Die Lieblingsvarianten sind:
- Käse (Gemisch aus Mozarella, Gouda und Hirtenkäse)
- Zatar (Gemisch aus gerebeltem Thymian, Sesam und Sumak)
- Zatar mit Tomaten und Zwiebeln
- Kaschk (getrocknete Joghurtmasse) mit scharfer Paprikapaste, Walnüsse und Zwiebeln
Manaisch werden in einem arabischen Pizzaofen gebacken. Diesen findet man in vielen arabischen Supermärkten. Alternativ könnt Ihr die Manaisch auch im Backofen backen. Auf höchster Gradstufe für 5-6 Minuten in der untersten Schiene und anschließend für 1-2 Minuten auf oberster Schiene backen.
Im Libanon wird zu Manaisch gerne eine eiskalte Pepsi getrunken. Hier in Deutschland trinken wir eher schwarzen Tee dazu. :)
Serviert wird Manaisch mit frischer Minze, Tomaten, Gurken und Oliven. Die Manaisch können auch damit befüllt werden und anschließend als Rolle gegessen werden. Weiter unten findet Ihr das Video-Tutorial. Viel Spaß beim Nachmachen! :)

1 tsp sugar / 1 م. ص. سكر
2 tbsp yogurt or milk powder / ملعقتين كبيرة لبن أو حليب بودرة
1/2 tsp baking powder/ نصف م. ص. بايكينغ باودر
1/4 tsp salt / ربع م. ص. ملح
1- 1/2 cup water/ كوب أو نصف كوب ماء
First we mix sugar with yeast and dissolve it with little water and keep it for 5 - 10 min. to activate.
نمزج الخميرة والسكر مع القليل من الماء وتترك جانبا لمدة 5 - 10 دق. حتى تتفاعل
Then we add all ingredients together and knead the dough until it is one piece.
نمزج المكونات جميعها ونضيف الماء بشكل تدريجي ونعحن العجينة

2 Tbsp vegetable oil/اثنين ملعقة كبيرة زيت نباتي
1 tsp sugar/ملعقة صغيرة سكر
½ tsp salt/نصف ملعقة صغيرة ملح
Water as needed/ماء حسب الحاجة
Topping/الحشوة
Thyme(Zaatar)/زعتر
Cheese/جبنة
Preparation/طريقة التحضير
1”- Preparation of the Dough تحضير العجينة
Mix all ingredients with the flour and pour water gradually so you have dough.
تعجن جميع المكونات مع بعض مع اضافة الماء بشكل تدريجي حتى تحصل على عجينة متماسكة.
Keep the dough aside for half an hour covered with kitchen towel.
نترك العجينة ترتاح مدة نصف ساعة وتغطى بفوطة مطبخ.
2”- Divide the dough into medium balls. Sprinkle flour on the rolling surface.
Roll the dough by a roller to make a circle.
2"- تقسم العجينة الى كرات ومن ثم نرش سطح الرق بالطحين ونرق العجينة على شكل رغيف دائري.
3”-Using a pan, heat the pan on the stove then after that bake the circular dough.
3-" باستخدام المقلاة ، تحمى المقلاة ومن ثم نضع أرغفة العجين بالمقلاة ونخبزها من الجهتين.
4”- Spread the toppings on the bread , after that bake it one more time on the pan.
4"- نمد الزعتر على أرغفة الخبز ومن ثم نخبزها مرة ثانية في المقلاة

Difficult to believe but the reason is ‘food’ ... Most of them turn out to be pleasantly surprising ... on track ... During the 13.8 miles between the Lebanese bakery and my doorstep, I had wolfed down the entire cheese and za'atar pie that's known as manakish (or spelling variations thereof) in the Levant, where such garnished flatbreads are a much-loved breakfast item or snack ... I've learned to eat my manakish on the spot, snatched right out of the oven on long wooden paddles, when they are semi-molten and at their best....
