Classic Chili
2 tbsp vegetable oil
1 small onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1lb lean ground beef (try chicken or turkey for a lighter chili)
2 tbsp chili powder
1 tbsp cumin
1 tbsp garlic powder
1 tsp oregano
1 tsp ground coriander
salt and pepper, to taste
2 cans mixed beans, rinsed and drained
1 can diced tomatoes
1 can crushed tomatoes
1 cup beef broth
1 tbsp Worcestershire sauce
In a large saucepan or Dutch oven, heat oil over medium-high heat.
Add onion, celery and bell pepper and sauté until softened, about five minutes.
Add garlic and sauté for another minute.
Add ground beef and break it into pieces. Cook the beef until no pink remains.
Add chili powder, cumin, garlic powder, ground coriander and oregano. Cook for one minute to bring out the flavours in the spices.
Add beans, diced tomatoes, crushed tomatoes, broth and Worcestershire sauce. Stir well and bring to a boil.
Once the chili is boiling, cover and reduce the heat the low.
Simmer the chili for at least a half an hour or up to two hours, stirring every fifteen minutes or so to prevent it from sticking.
Top with sour cream, shredded cheddar and pickled jalapenos
Enjoy!

1 can diced tomatoes
1 can crushed tomatoes
1 cup vegetable broth

Add garlic and sauté for another minute.
Add chipotle peppers, chili powder, cumin, garlic powder, ground coriander and oregano.

White Chicken Chili

1⁄2 cup cream cheese
In a large saucepan or Dutch oven, heat oil over medium-high heat.
Add onion, celery and bell pepper and sauté until softened, about five minutes.
Add garlic and jalapeno pepper and sauté for another minute.
Add chili powder, cumin, garlic powder, ground coriander and oregano. Cook for one minute to bring out the flavours in the spices.
Add chicken, beans, corn and broth. Stir well and bring to a boil.
Once the chili is boiling, cover and reduce the heat to low.
Simmer the chili for at least a half an hour or up to two hours, stirring every fifteen minutes or so to prevent it from sticking.
In a small bowl, bring cream cheese to room temperature. Ladle one or two cups of both over the cream cheese while whisking. Add the cream cheese mixture back into the chili and stir well. This method is called tempering and will prevent the cream cheese from curdling.
Top with sour cream, shredded cheddar and pickled jalapenos

$100 chili recipe
3 chopped onions
3 diced bell peppers (green, yellow and red)
2 large cans of puree (28 oz)
2 large cans of diced tomatoes (28 oz)
2 large cans of crushed tomatoes (28 oz)
2 large cans of tomato sauce (28 oz)
4 15oz cans of stewed tomatoes
2 15oz cans of light red kidney beans
2 15oz cans of dark red kidney beans
2 15oz cans of great northern beans
2 15oz cans of black beans
2 lbs white whole mushrooms quartered
2 lbs breakfast pork mild
1 lb breakfast pork hot
3 heads of garlic
2 large jalapeños (leave out if you don’t want head. Add 1 if you want mild)
2 stalks of celery
1/2 thick cut bacon
3 pounds ground beef (80%lean)
2 tablespoons of Worcestershire Sauce
1 block of cheddar cheese sharp shredded
5 heaping tablespoons of chili powder
3 heaping tablespoons of salt
4 heaping tablespoons of black pepper
4 heaping tablespoons of granulated garlic
2 heaping tablespoons of oregano
1 heaping tablespoons of cumin (I liked to use 2 tablespoons)
—brown all the breakfast pork in a skillet. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. When done drain the mixture of grease, then add to the big chili pot.
—in the same skillet brown all the bacon. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. When done drain the mixture of grease, then add to the big chili pot.
—in the same skillet brown all the ground beef. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. Also, add all the jalapeños and Worcestershire sauce.
—When beef mixture is almost cooked, add 1/2 your mushrooms to the skillet then cover for 5 minutes. When done drain the mixture of grease, then add to the big chili pot.
— deglaze the skillet with a cup of red wind. (merlot if possible) then pour into big chili pot
—drain and rinse all your beans and dump into big chili pot.
—add all the cans of tomatoes in. Add 3 full 28oz cans of water. Do not stir until all cans and water have been pour into big chili pot.
—now gently stir so you don’t smash the beans.
—bring to a boil then lower flame for a simmer.
—add the rest of the mushrooms to the top of the chili. Do not stir them in.
—simmer covered for 3 hours. When the mushrooms on top have sunk into the chili, then your done.

Here is the recipe: $100 chili recipe 3 chopped onions 3 diced bell peppers (green, yellow and red) 2 large cans of puree (28 oz) 2 large cans of diced tomatoes (28 oz) 2 large cans of crushed tomatoes (28 oz) 2 large cans of tomato sauce (28 oz) 4 15oz cans of stewed tomatoes 2 15oz cans of light red kidney beans 2 15oz cans of dark red kidney beans 2 15oz cans of great northern beans 2 15oz cans of black beans 2 lbs white whole mushrooms quartered 2 lbs breakfast pork mild 1 lb breakfast pork hot 3 heads of garlic 2 large jalapeños (leave out if you don’t want head. Add 1 if you want mild) 2 stalks of celery 1/2 thick cut bacon 3 pounds ground beef (80%lean) 2 tablespoons of Worcestershire Sauce 1 block of cheddar cheese sharp shredded 5 heaping tablespoons of chili powder 3 heaping tablespoons of salt 4 heaping tablespoons of black pepper 4 heaping tablespoons of granulated garlic 2 heaping tablespoons of oregano 1 heaping tablespoons of cumin (I liked to use 2 tablespoons) —brown all the breakfast pork in a skillet. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. When done drain the mixture of grease, then add to the big chili pot. —in the same skillet brown all the bacon. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. When done drain the mixture of grease, then add to the big chili pot. —in the same skillet brown all the ground beef. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. Also, add all the jalapeños and Worcestershire sauce. —When beef mixture is almost cooked, add 1/2 your mushrooms to the skillet then cover for 5 minutes. When done drain the mixture of grease, then add to the big chili pot. — deglaze the skillet with a cup of red wind. (merlot if possible) then pour into big chili pot —drain and rinse all your beans and dump into big chili pot. —add all the cans of tomatoes in. Add 3 full 28oz cans of water. Do not stir until all cans and water have been pour into big chili pot. —now gently stir so you don’t smash the beans. —bring to a boil then lower flame for a simmer. —add the rest of the mushrooms to the top of the chili. Do not stir them in. —simmer covered for 3 hours. When the mushrooms on top have sunk into the chili, then your done. And what more perfect way to break it back into use than with some homemade chili!! I have no idea where this recipe came from (somewhere online) but it was a super long and complicated recipe that I have shortened and made my own. Yes, I know I'm breaking many chili laws according to chili experts but this is how I make it and prefer it. I used the exact same recipe in 2012 and beat out 8 other peoples chili recipes in that chili cook off.

Classic Chili
2 tbsp vegetable oil
1 small onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1lb lean ground beef (try chicken or turkey for a lighter chili)
2 tbsp chili powder
1 tbsp cumin
1 tbsp garlic powder
1 tsp oregano
1 tsp ground coriander
salt and pepper, to taste
2 cans mixed beans, rinsed and drained
1 can diced tomatoes
1 can crushed tomatoes
1 cup beef broth
1 tbsp Worcestershire sauce
In a large saucepan or Dutch oven, heat oil over medium-high heat.
Add onion, celery and bell pepper and sauté until softened, about five minutes.
Add garlic and sauté for another minute.
Add ground beef and break it into pieces. Cook the beef until no pink remains.
Add chili powder, cumin, garlic powder, ground coriander and oregano. Cook for one minute to bring out the flavours in the spices.
Add beans, diced tomatoes, crushed tomatoes, broth and Worcestershire sauce. Stir well and bring to a boil.
Once the chili is boiling, cover and reduce the heat the low.
Simmer the chili for at least a half an hour or up to two hours, stirring every fifteen minutes or so to prevent it from sticking.
Top with sour cream, shredded cheddar and pickled jalapenos
Enjoy!

Add garlic and sauté for another minute.

Add garlic and jalapeno pepper and sauté for another minute.
Add chili powder, cumin, garlic powder, ground coriander and oregano. Cook for one minute to bring out the flavours in the spices.

Once the chili is boiling, cover and reduce the heat to low.

$100 chili recipe
3 chopped onions
3 diced bell peppers (green, yellow and red)
2 large cans of puree (28 oz)
2 large cans of diced tomatoes (28 oz)
2 large cans of crushed tomatoes (28 oz)
2 large cans of tomato sauce (28 oz)
4 15oz cans of stewed tomatoes
2 15oz cans of light red kidney beans
2 15oz cans of dark red kidney beans
2 15oz cans of great northern beans
2 15oz cans of black beans
2 lbs white whole mushrooms quartered
2 lbs breakfast pork mild
1 lb breakfast pork hot
3 heads of garlic
2 large jalapeños (leave out if you don’t want head. Add 1 if you want mild)
2 stalks of celery
1/2 thick cut bacon
3 pounds ground beef (80%lean)
2 tablespoons of Worcestershire Sauce
1 block of cheddar cheese sharp shredded
5 heaping tablespoons of chili powder
3 heaping tablespoons of salt
4 heaping tablespoons of black pepper
4 heaping tablespoons of granulated garlic
2 heaping tablespoons of oregano
1 heaping tablespoons of cumin (I liked to use 2 tablespoons)
—brown all the breakfast pork in a skillet. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. When done drain the mixture of grease, then add to the big chili pot.
—in the same skillet brown all the bacon. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. When done drain the mixture of grease, then add to the big chili pot.
—in the same skillet brown all the ground beef. When it’s halfway cooked add 1/3 the onion, pepper, celery and garlic. Also, add all the jalapeños and Worcestershire sauce.
—When beef mixture is almost cooked, add 1/2 your mushrooms to the skillet then cover for 5 minutes. When done drain the mixture of grease, then add to the big chili pot.
— deglaze the skillet with a cup of red wind. (merlot if possible) then pour into big chili pot
—drain and rinse all your beans and dump into big chili pot.
—add all the cans of tomatoes in. Add 3 full 28oz cans of water. Do not stir until all cans and water have been pour into big chili pot.
—now gently stir so you don’t smash the beans.
—bring to a boil then lower flame for a simmer.
—add the rest of the mushrooms to the top of the chili. Do not stir them in.
—simmer covered for 3 hours. When the mushrooms on top have sunk into the chili, then your done.

First, thank you to all my new subscribers who came over from imstillworkin's channel! Welcome!
Now that the weather is starting to cool off, it's time to break out the Crock-Pot. And what more perfect way to break it back into use than with some homemade chili!! I have no idea where this recipe came from (somewhere online) but it was a super long and complicated recipe that I have shortened and made my own. Yes, I know I'm breaking many chili laws according to chili experts but this is how I make it and prefer it.
What you'll need:
1 lb ground beef or turkey
1 lb mild Italian sausage
1 medium onion, chopped
1 green bell pepper, chopped fine
2 stalks celery, chopped fine
2 jalapenos, minced
4 (14.5 oz) cans stewed tomatoes
4 (15 oz) cans chili beans
2 (6 oz) cans tomato paste
3 beef bouillon cubes (I use 3 packets beef flavor Ramen seasoning)
1/4 chili powder
1 Tbsp prepared minced garlic (about 4 cloves)
1 Tbsp brown sugar
1 Tbsp Worcestershire sauce
1 Tbsp dried oregano
2 tsp ground gumin
1 tsp ground black pepper
1 tsp dried basil
1 tsp paprika
In a large skillet, brown meats with the onion in 1-2 Tbsp olive oil. Drain and add to a 6 quart crock pot. Add remaining ingredients. Stir to combine well. Cover and set on high until bubbling (about an hour). Turn heat down to low and cook for another 6-8 hours. Alternatively, start on low and cook 10-12 hours. Serve and enjoy!
