Egg white

Egg white is the common name for the clear liquid (also called the albumen or the glair/glaire) contained within an egg. In chickens it is formed from the layers of secretions of the anterior section of the hen's oviduct during the passage of the egg. It forms around fertilized or unfertilized egg yolks. The primary natural purpose of egg white is to protect the yolk and provide additional nutrition for the growth of the embryo (when fertilized). Egg white consists primarily of about 90% water into which is dissolved 10% proteins (including albumins, mucoproteins, and globulins). Unlike the yolk, which is high in lipids (fats), egg white contains almost no fat, and carbohydrate content is less than 1%. Egg whites contain just over 50% of the protein in the egg. Egg white has many uses in food (e.g. mousse) and also many other uses (e.g. in the preparation of vaccines such as those for influenza).

Composition

Chicken egg white is about two-thirds of the total egg's weight out of , with nearly 92% of that weight coming from water. The remaining weight of the egg white comes from protein, trace minerals, fatty material, vitamins, and glucose. A raw U.S. large egg white weighs 33 grams with 3.6 grams of protein, 0.24 grams of carbohydrate and 55 milligrams of sodium. It contains no cholesterol, and the energy content is about 17 calories. White

White is an achromatic color, literally a "color without hue", that is a mixture of the frequencies of all the colors of the visible spectrum. It is one of the most common colors in nature, the color of sunlight, snow, milk, chalk, limestone and other common minerals. In many cultures white represents or signifies purity, innocence, and light, and is the symbolic opposite of black, or darkness. According to surveys in Europe and the United States, white is the color most often associated with perfection, the good, honesty, cleanliness, the beginning, the new, neutrality, and exactitude.

In ancient Egypt and ancient Rome, priestesses wore white as a symbol of purity, and Romans wore a white toga as a symbol of citizenship. In the Middle Ages and Renaissance a white unicorn symbolized chastity, and a white lamb sacrifice and purity; the widows of kings dressed in white rather than black as the color of mourning. It sometimes symbolizes royalty; it was the color of the French kings (black being the color of the queens) and of the monarchist movement after the French Revolution as well as of the movement called the White Russians (not to be confounded with Belarus, literally "White Russia") who fought the Bolsheviks during the Russian Civil War (1917-1922). Greek and Roman temples were faced with white marble, and beginning in the 18th century, with the advent of neoclassical architecture, white became the most common color of new churches, capitols and other government buildings, especially in the United States of America. It was also widely used in 20th century modern architecture as a symbol of modernity, simplicity and strength.

Egg

An egg is the organic vessel containing the zygote in which an animal embryo develops until it can survive on its own, at which point the animal hatches. An egg results from fertilization of an ovum. Most arthropods, vertebrates, and mollusks lay eggs, although some do not, such as scorpions and most mammals.

Reptile eggs, bird eggs, and monotreme eggs are laid out of water, and are surrounded by a protective shell, either flexible or inflexible. Eggs laid on land or in nests are usually kept within a favorable temperature range (warm) while the embryo grows. When the embryo is adequately developed it hatches, i.e. breaks out of the egg's shell. Some embryos have a temporary egg tooth with which to crack, pip, or break the eggshell or covering.

The largest recorded egg is from a whaleshark, and was 30 cm × 14 cm × 9 cm (11.8 in × 5.5 in × 3.5 in) in size; whale shark eggs normally hatch within the mother. At 1.5 kg (3.3 lb) and up to 17.8 cm × 14 cm (7.0 in × 5.5 in), the ostrich egg is the largest egg of any living bird, though the extinct elephant bird and some dinosaurs laid larger eggs. The bee hummingbird produces the smallest known bird egg, which weighs half of a gram (around 0.02 oz). The eggs laid by some reptiles and most fish can be even smaller, and those of insects and other invertebrates can be much smaller still.
