Velveeta
Velveeta is the brand name of a processed cheese product having a taste that is identified as a type of American cheese, but with a softer and smoother texture than cheese. As a result, when melted/heated, Velveeta maintains a fully integrated, and evenly clump-free liquid texture—the opposite of what results when cheese is melted or cooked at high heat. It was invented in 1918 by Emil Frey of the Monroe Cheese Company in Monroe, New York. In 1923, The Velveeta Cheese Company was incorporated as a separate company, and was sold to Kraft Foods in 1927. The product was advertised at the time as a nutritious health food. According to Kraft's website, in the 1930s, Velveeta became the first cheese product to gain the American Medical Association's seal of approval. It was reformulated in 1953 as a cheese spread. Velveeta is labeled in the United States as a "Pasteurized Recipe Cheese Product" (see processed cheese). The name "Velveeta" is intended to connote a velvety smooth edible product. Smoothness and melting ability are promoted as its properties that result by reincorporating the whey with the curd. The brand has also been successfully spun off into a varied, Velveeta-based product line.

A mixture of older cheeses. They grind them up and they add an emulsifier so that it holds together and it’s processed in a way so that it melts easily.
So, my name is Michael Tunick. I'm a research chemist with the U.S. Department of Agriculture and I wrote the book, "The Science of Cheese".
Now, there are pasteurized processed cheeses out there and that's just a mixture of older cheeses and fresher cheeses.
They grind them up and they add an emulsifier so that it holds together and it’s processed in a way so that it melts easily.
Trade name for that would be Velveeta for instance. That name comes from the word "velvet", meaning the texture. It was invented right before World War I by J.L. Kraft, who was trying to get rid of some of his older cheeses so he mixed it with some of his newer cheeses and came up with Kraft American Cheese.
Ever since then, cheese companies have been doing that kind of thing.
It is legal, Food and Drug Administration has some rules regarding what it can be labeled as, such as "pasteurized processed cheese spread" and "pasteurized processed cheese food."
They have to follow certain moisture and fat limitations and sometimes they have to be able to melt at a certain temperature or things like that.
If it falls outside of those regulations, then the manufacturers call it some other things, but it is something that is found a lot in processed food. Philly cheesesteaks usually have cheese whiz melted on them. That is a pasteurized, process cheese. It’s something I would eat too, except it's not going to be nearly as good as a regular natural cheese.

Trade name for that would be Velveeta for instance. That name comes from the word "velvet", meaning the texture. It was invented right before World War I by J.L. Kraft, who was trying to get rid of some of his older cheeses so he mixed it with some of his newer cheeses and came up with Kraft American Cheese.
Ever since then, cheese companies have been doing that kind of thing.
It is legal, Food and Drug Administration has some rules regarding what it can be labeled as, such as "pasteurized processed cheese spread" and "pasteurized processed cheese food."
They have to follow certain moisture and fat limitations and sometimes they have to be able to melt at a certain temperature or things like that.
If it falls outside of those regulations, then the manufacturers call it some other things, but it is something that is found a lot in processed food. Philly cheesesteaks usually have cheese whiz melted on them. That is a pasteurized, process cheese. It’s something I would eat too, except it's not going to be nearly as good as a regular natural cheese.

Where is the best place to buy Velveeta cheese? Obviously you can buy it at Walmart or Kroger. You can also buy Velveeta Mini blocks at Dollar tree and Dollar General. But if Velveeta isn't on sale this week or you don't have Velveeta coupons or promotions, you can try Walmart's great value cheese loaf instead. it is about half the price and it is almost identical to Velveeta. Who knows, you might be pleasantly surprised.
Is Velveeta cheese real cheese? The package says that Velveeta is made with real American cheese. So it is not imitation cheese but a cheese product. But it is the main ingredient for my queso dip recipe and macaroni and cheese recipe. It is also a required ingredient for tuna and noodle casserole.
The funny thing is Velveeta doesn't need to be refrigerated, unless of course you open it. In that case you will have to put it in the refrigerator after it is opened.

So, my name is Michael Tunick. I'm a research chemist with the U.S. Department of Agriculture and I wrote the book, "The Science of Cheese".

Velveeta
Velveeta is the brand name of a processed cheese product having a taste that is identified as a type of American cheese, but with a softer and smoother texture than cheese. As a result, when melted/heated, Velveeta maintains a fully integrated, and evenly clump-free liquid texture—the opposite of what results when cheese is melted or cooked at high heat. It was invented in 1918 by Emil Frey of the Monroe Cheese Company in Monroe, New York. In 1923, The Velveeta Cheese Company was incorporated as a separate company, and was sold to Kraft Foods in 1927. The product was advertised at the time as a nutritious health food. According to Kraft's website, in the 1930s, Velveeta became the first cheese product to gain the American Medical Association's seal of approval. It was reformulated in 1953 as a cheese spread. Velveeta is labeled in the United States as a "Pasteurized Recipe Cheese Product" (see processed cheese). The name "Velveeta" is intended to connote a velvety smooth edible product. Smoothness and melting ability are promoted as its properties that result by reincorporating the whey with the curd. The brand has also been successfully spun off into a varied, Velveeta-based product line.
