Shawarma (Arabic: شاورما / ALA-LC: shāwarmā) is a Levantine Arab meat preparation, where lamb, chicken, turkey, beef, veal, or mixed meats are placed on a spit (commonly a vertical spit in restaurants), and may be grilled for as long as a day. Shavings are cut off the block of meat for serving, and the remainder of the block of meat is kept heated on the rotating spit. Although it can be served in shavings on a plate (generally with accompaniments), shawarma also refers to a sandwich or wrap made with shawarma meat. Shawarma is usually eaten with tabbouleh, fattoush, taboon bread, tomato, and cucumber. Toppings include tahini, hummus, pickled turnips and amba. It is akin to the Turkish Döner Kebab and the Greek Gyros. A related Armenian dish is tarna 'to turn'.
Preparation

Shawarma is made by alternately stacking strips of fat and pieces of seasoned meat on a stick. An onion, a tomato, or a halved lemon is sometimes placed at the top of the stack for additional flavoring. The meat is roasted slowly on all sides as the spit rotates in front of, or over, a flame for hours (see rotisserie). Traditionally, a wood fire was used; currently, a gas flame is common. While specialty restaurants might offer two or more meat selections, some establishments have just one skewer.
While cooking, the meat is shaved off the stack with a large knife, an electric knife or a small circular saw, dropping to a circular tray below to be retrieved. Shawarma is eaten as a fast food, made up into a sandwich wrap with pita bread or rolled up in an Armenian lavash flatbread together with vegetables and dressing. A variety of vegetables come with the shawarma which include: cucumber, onion, tomato, lettuce, eggplant, parsley, pickled turnips, pickled gherkins, pickles, and cabbage. One has the option to get French fries in some countries, including: Jordan, Syria, Lebanon, Palestine, Israel, Turkey, Egypt, Saudi Arabia, also countries in Europe such as Romania, Italy, Germany, Bulgaria and the United Kingdom. Other options include thick cut French fries served inside the lavash to help soak up the sauce and juices keeping them inside the wrap.
Dressings include: tahini (or tahina), amba sauce (pickled mango with chili), hummus, or flavored with vinegar and spices such as cardamom, cinnamon, and nutmeg. Chicken shawarma is served with garlic mayonnaise, toum (garlic sauce), pomegranate concentrate, or skhug (a hot chili sauce). Once the shawarma is made, it might be dipped in the fat dripping from the skewer and then briefly seared against the flame.
In Saudi Arabia, goat is as common as beef or lamb. Less common alternatives include fish and sausage. Some shawarma stores use hot dog buns or baguettes, but most have pita and lavash.

On Day 3 of our trip to Jordan we stayed in Amman, and did lots of the major attractions in Amman, including the historical sites. We also explored downtown Amman, went to the local market, and at some more incredibly good food. Below is everything we did during this packed day of sightseeing in Amman.
1:10 - Shams El Balad Cafe - For breakfast we went to Shams El Balad Cafe, a very nice restaurant and cafe that specializes in local Jordanian food with a fresh and healthy, and also organic twist to it. The place itself is very nice, and sits on a hill overlooking the main downtown area of Amman. We ordered a variety of different food, including some manakish, which is a round of dough baked with toppings including cheese and herbs on top. I also really enjoyed the makdous, preserved eggplant stuffed with nuts, and a certain type of labneh with local herbs. Total price - 28 JD ($39.40) for 4 people
5:35 Amman Citadel - 3 JD ($4.22) - One of the most famous things to do in Amman is visit to Amman Citadel, which is the high point on the hill and formerly was one of the main areas of the city - the lookout and high place of Amman. Located at the Amman Citadel you’ll find layer upon layer of history, and can see all the different civilizations that have once called Amman home. I thought it was amazing, and I especially enjoyed the views of Amman from up there and the temple of Hercules.
7:38 Roman Amphitheater - 2 JD ($2.81) - Right down the hill from the Amman Citadel is the Roman Amphitheater, a stone theater carved into the side of the mountain. When we entered, there was a group of boys singing, and I decided to climb to the top for a view and I was amazing how the sound carried all the way to the top of the bleachers. An amazing historical site of visit.
8:54 Green Almonds and Downtown Amman - One of the best things to do in Amman in my opinion is to walk around downtown where all the action happens. There’s a big central market where you can buy just about anything you’re looking for, including a fresh wet market. When I visited Amman it happened to be almond season, and it was my first time to try green almonds. They were absolutely delicious, and tasted a bit like green apples.
13:01 Habibah Sweets - Probably one of the most famous things to eat in Amman is the kanefeh from a desserts spot in downtown called Habibah Sweets. There’s always a crowd of people standing outside waiting and eating kanafeh, which is a cheese based dessert. It’s pretty good, definitely a place you’ll need to visit in Amman if you enjoy food - especially for sweets. Price for 1 piece of kanafeh - 0.65 JD ($0.91)
14:22 Sufra Restaurant - For lunch we went to Sufra Restaurant, a very nice Jordanian food restaurant, located on Rainbow street. The food was excellent, but the main dish that really stood out to me was the Kofta bi tahini, a bed of minced meat, topped with potatoes and smothered in tahini sauce. Price - about 20 JD ($28.11) per person
19:50 Shawarma Reem and Amman Shawarma Street - Finally for dinner, we headed to what’s unofficially known as the shawarma street in Amman, where there’s about 8 different shawarma restaurants. One of the most famous is Shawarma Reem, for their beef and lamb shawarma - it was a perfect way to end the day.

We also explored downtown Amman, went to the local market, and at some more incredibly good food. Below is everything we did during this packed day of sightseeing in Amman. 1:10 - Shams El Balad Cafe - For breakfast we went to Shams El Balad Cafe, a very nice restaurant and cafe that specializes in local Jordanian food with a fresh and healthy, and also organic twist to it. The place itself is very nice, and sits on a hill overlooking the main downtown area of Amman. We ordered a variety of different food, including some manakish, which is a round of dough baked with toppings including cheese and herbs on top. I also really enjoyed the makdous, preserved eggplant stuffed with nuts, and a certain type of labneh with local herbs. Total price - 28 JD ($39.40) for 4 people 5:35 Amman Citadel - 3 JD ($4.22) - One of the most famous things to do in Amman is visit to Amman Citadel, which is the high point on the hill and formerly was one of the main areas of the city - the lookout and high place of Amman. Located at the Amman Citadel you’ll find layer upon layer of history, and can see all the different civilizations that have once called Amman home. I thought it was amazing, and I especially enjoyed the views of Amman from up there and the temple of Hercules. 7:38 Roman Amphitheater - 2 JD ($2.81) - Right down the hill from the Amman Citadel is the Roman Amphitheater, a stone theater carved into the side of the mountain. When we entered, there was a group of boys singing, and I decided to climb to the top for a view and I was amazing how the sound carried all the way to the top of the bleachers. An amazing historical site of visit. 8:54 Green Almonds and Downtown Amman - One of the best things to do in Amman in my opinion is to walk around downtown where all the action happens. There’s a big central market where you can buy just about anything you’re looking for, including a fresh wet market. When I visited Amman it happened to be almond season, and it was my first time to try green almonds. They were absolutely delicious, and tasted a bit like green apples. 13:01 Habibah Sweets - Probably one of the most famous things to eat in Amman is the kanefeh from a desserts spot in downtown called Habibah Sweets. There’s always a crowd of people standing outside waiting and eating kanafeh, which is a cheese based dessert. It’s pretty good, definitely a place you’ll need to visit in Amman if you enjoy food - especially for sweets. Price for 1 piece of kanafeh - 0.65 JD ($0.91) 14:22 Sufra Restaurant - For lunch we went to Sufra Restaurant, a very nice Jordanian food restaurant, located on Rainbow street. The food was excellent, but the main dish that really stood out to me was the Kofta bi tahini, a bed of minced meat, topped with potatoes and smothered in tahini sauce. Price - about 20 JD ($28.11) per person 19:50 Shawarma Reem and Amman Shawarma Street - Finally for dinner, we headed to what’s unofficially known as the shawarma street in Amman, where there’s about 8 different shawarma restaurants. He ends up at the hospital with a deformed overhead, but is promised a huge compensation by Heino, who actually doesn't know anything about that subject. Lillian, a blond and kind of attractive single mum with two young kids at her feet, suddenly eyes a chance at becoming a millionaire. Lillian visits Polle at the hospital, who's a little nervous about the sudden love interest, but at the same time proud to be the attractive dish of the day. Before Polle gets to think about all the things, Lillian wants to marry him, and together with Polle's mum she arranges a huge wedding at the local church. But something is rotten and definitely not going as planned, and suddenly in all the chaos a new pizza bar opens in town by a darker young man named Ali and his little sister Solaima. Polle hardly gets in love with Solaima, and realizes he has to act and react real fast to gets his real love. But it isn't that easy!

Shawarma (Arabic: شاورما / ALA-LC: shāwarmā) is a Levantine Arab meat preparation, where lamb, chicken, turkey, beef, veal, or mixed meats are placed on a spit (commonly a vertical spit in restaurants), and may be grilled for as long as a day. Shavings are cut off the block of meat for serving, and the remainder of the block of meat is kept heated on the rotating spit. Although it can be served in shavings on a plate (generally with accompaniments), shawarma also refers to a sandwich or wrap made with shawarma meat. Shawarma is usually eaten with tabbouleh, fattoush, taboon bread, tomato, and cucumber. Toppings include tahini, hummus, pickled turnips and amba. It is akin to the Turkish Döner Kebab and the Greek Gyros. A related Armenian dish is tarna 'to turn'.

Shawarma is made by alternately stacking strips of fat and pieces of seasoned meat on a stick. An onion, a tomato, or a halved lemon is sometimes placed at the top of the stack for additional flavoring. The meat is roasted slowly on all sides as the spit rotates in front of, or over, a flame for hours (see rotisserie). Traditionally, a wood fire was used; currently, a gas flame is common. While specialty restaurants might offer two or more meat selections, some establishments have just one skewer.
While cooking, the meat is shaved off the stack with a large knife, an electric knife or a small circular saw, dropping to a circular tray below to be retrieved. Shawarma is eaten as a fast food, made up into a sandwich wrap with pita bread or rolled up in an Armenian lavash flatbread together with vegetables and dressing. A variety of vegetables come with the shawarma which include: cucumber, onion, tomato, lettuce, eggplant, parsley, pickled turnips, pickled gherkins, pickles, and cabbage. One has the option to get French fries in some countries, including: Jordan, Syria, Lebanon, Palestine, Israel, Turkey, Egypt, Saudi Arabia, also countries in Europe such as Romania, Italy, Germany, Bulgaria and the United Kingdom. Other options include thick cut French fries served inside the lavash to help soak up the sauce and juices keeping them inside the wrap.
Dressings include: tahini (or tahina), amba sauce (pickled mango with chili), hummus, or flavored with vinegar and spices such as cardamom, cinnamon, and nutmeg. Chicken shawarma is served with garlic mayonnaise, toum (garlic sauce), pomegranate concentrate, or skhug (a hot chili sauce). Once the shawarma is made, it might be dipped in the fat dripping from the skewer and then briefly seared against the flame.
In Saudi Arabia, goat is as common as beef or lamb. Less common alternatives include fish and sausage. Some shawarma stores use hot dog buns or baguettes, but most have pita and lavash.

On Day 3 of our trip to Jordan we stayed in Amman, and did lots of the major attractions in Amman, including the historical sites. We also explored downtown Amman, went to the local market, and at some more incredibly good food. Below is everything we did during this packed day of sightseeing in Amman.
1:10 - Shams El Balad Cafe - For breakfast we went to Shams El Balad Cafe, a very nice restaurant and cafe that specializes in local Jordanian food with a fresh and healthy, and also organic twist to it. The place itself is very nice, and sits on a hill overlooking the main downtown area of Amman. We ordered a variety of different food, including some manakish, which is a round of dough baked with toppings including cheese and herbs on top. I also really enjoyed the makdous, preserved eggplant stuffed with nuts, and a certain type of labneh with local herbs. Total price - 28 JD ($39.40) for 4 people
5:35 Amman Citadel - 3 JD ($4.22) - One of the most famous things to do in Amman is visit to Amman Citadel, which is the high point on the hill and formerly was one of the main areas of the city - the lookout and high place of Amman. Located at the Amman Citadel you’ll find layer upon layer of history, and can see all the different civilizations that have once called Amman home. I thought it was amazing, and I especially enjoyed the views of Amman from up there and the temple of Hercules.
7:38 Roman Amphitheater - 2 JD ($2.81) - Right down the hill from the Amman Citadel is the Roman Amphitheater, a stone theater carved into the side of the mountain. When we entered, there was a group of boys singing, and I decided to climb to the top for a view and I was amazing how the sound carried all the way to the top of the bleachers. An amazing historical site of visit.
8:54 Green Almonds and Downtown Amman - One of the best things to do in Amman in my opinion is to walk around downtown where all the action happens. There’s a big central market where you can buy just about anything you’re looking for, including a fresh wet market. When I visited Amman it happened to be almond season, and it was my first time to try green almonds. They were absolutely delicious, and tasted a bit like green apples.
13:01 Habibah Sweets - Probably one of the most famous things to eat in Amman is the kanefeh from a desserts spot in downtown called Habibah Sweets. There’s always a crowd of people standing outside waiting and eating kanafeh, which is a cheese based dessert. It’s pretty good, definitely a place you’ll need to visit in Amman if you enjoy food - especially for sweets. Price for 1 piece of kanafeh - 0.65 JD ($0.91)
14:22 Sufra Restaurant - For lunch we went to Sufra Restaurant, a very nice Jordanian food restaurant, located on Rainbow street. The food was excellent, but the main dish that really stood out to me was the Kofta bi tahini, a bed of minced meat, topped with potatoes and smothered in tahini sauce. Price - about 20 JD ($28.11) per person
19:50 Shawarma Reem and Amman Shawarma Street - Finally for dinner, we headed to what’s unofficially known as the shawarma street in Amman, where there’s about 8 different shawarma restaurants. One of the most famous is Shawarma Reem, for their beef and lamb shawarma - it was a perfect way to end the day.
