Today is Burns day, Scotland's national holiday celebrating the life of the poet Robert Burns. This holiday isn't just an excuse to get blasted. It's also a culinary tribute where revelers toast to the Scottish wordsmith over clinked glasses of Scotch whiskey while feasting on haggis—a savory pudding stuffed with oats, spices, and sheep's rumen, lungs, heart, and liver. Robert Burns was a huge fan of haggis, so much so that he even wrote a poem about it that mentions something about stabbing the innards with a knife as they get pulled out like the steaming entrails of a beast. Mmm.
We had no idea how to make haggis from scratch, so we called up our friends at the Nordic Food Lab, a non-profit culinary research institute based in Copenhagen, Denmark, to get the full monty. Ben Reade, a native Scotsman and the head of culinary research and development at the Nordic Food Lab, walked us through the labor of lamb love in the Nordic Food Lab's houseboat kitchen.
After oats, spices, four-day-smoked blueberries soaked in alcohol, a couple of hearts, and sheep's rumen, liver, lungs, diaphragms, kidneys, tongues, fat, and blood were mixed together and cooked, the warm pudding was ready for some culinary poetry. Ben brought it over to the Mad Symposium—an annual gathering where international chefs and culinary minds meet to eat, drink, and discuss topics in food—and shared it with the symposium's participants.
No haggis can be consumed without the help of a sharp knife and a healthy carbon dioxide-blowing bagpiper to appease the ghost of Burns himself. Or in the words of Ben Reade, "Who wants to eat French balls? This is how we want it in Scotland."

Seeking comfort food on our first day in Edinburgh, Scotland we headed over to Whiski Rooms to try eating Haggis, tatties, and neeps while drinking Hot Toddy for the first time in our lives. After randomly wandering around - for hours on end - during our first morning in Edinburgh we started to crave comfort food to help keep us warm and satiated. Considering this would be our first meal in Scotland we figured we'd dive right in and try the National dish: Haggis.

Haggis, for those unacquainted, is a savory pudding consisting primarily of sheep's pluck (lungs, heart and liver), oatmeal, minced onion, spices and stock. More often than not it's now encased using a method similar to stuffing a sausage; however, in the past it was stuffed inside the actual animal's stomach.
As the national dish of Scotland, Haggis is typically paired with neeps and tatties (turnips and potato) and is often served with dram (Scotch whisky).
Before taking my first bite, I had serious reservations about whether or not I was going to like this.
Many foods I try overseas are immediate hits with my taste buds; however, there are plenty of foods that are acquired tastes and some simply never make the cut.
First up was a portion of Haggis spring rolls. Spring rolls are side dish we typically devour while traveling around SE Asia in countries such as Vietnam, Thailand and Cambodia. We figured it would be a 'safe' way to try Haggis for the first time.
Audrey's first bite was revealing: "MMMMMmmmm. Haggis is good people!"
My initial thoughts reflected her sentiments: "I think I've found myself my new favorite spring roll."
We both breathed a collective sigh of relief realizing that when our main course of Haggis, tatties and neeps arrived at our table, chances are we were going to love it.
The generous portion of Haggis, neeps and tatties came with a copious side of gravy, which we poured all over the dish.
It was love at first bite. Somehow, eating organs (which is something we tend to avoid) when prepared with the right combination of spices, seasonings and other ingredients is delectable.
Audrey, not normally a fan of alcoholic beverages, was initially impressed: "It goes down nice. It's not too strong. It really warms you up. It's very aromatic with the cloves and lemon."

It's our first meal in Scotland, so we've decided to go with something very typical. We're going to be eating the National dish, which is Haggis. So let's go into Whisky Room.
So today's meal is all about Haggis. We are starting with Haggis spring rolls. So let's see what those are like. We've had a lot of spring rolls lately in Thailand, Vietnam and other places in SE Asia. Mmmmmm. Never Haggis. And it's also the first time trying haggis. Oh, so hot! Is it hot? Mmmmmm. I'm pleasantly surprised. Oh, yeah. Haggis is good people!
Those are hot. Mmmmmm. Wow, so many flavors. It's delicious. I think I've found myself my new favorite spring roll. Haggis spring rolls.
And it's a cold day today so I'm trying something else very Scottish here. It's a nice warm drink. It's called a Hot Toddy. It's got hot water, whisky, lemon and honey. And that sounds good to me. Take a sip. Oh yeah. It goes down nice.
Okay, First sip of the Hot Toddy. I'm not I've ever even tried this whiskey. So let's how it is in a hot drink.
Ooooh. It's nice. It really warms you up but it's not a strong and overpowering as I thought it would be. This is nice. And it's also very aromatic because they've put some cloves along with the lemon.
Like Christmas. So far you're liking Scottish food. Yeah.

The latest new video from Enter The Haggis' upcoming EP "Broken Arms", this song tells the story of a small group of settlers (in what would eventually be Canada) who took up pitchforks and shovels to make a stand against a rumored Fenian invasion force numbering in the tens of thousands, who were allegedly planning to hold the colony hostage in order to regain control of Northern Ireland from the British.
The army never showed up and everyone just went home... but that doesn't make their stand any less badass, by our estimation. The image of a handful of farmers lining up along the shore and waiting for a massive invading army is a powerful one.

Haggis
Haggis is a savoury pudding containing sheep's pluck (heart, liver and lungs); minced with onion, oatmeal, suet, spices, and salt, mixed with stock, traditionally encased in the animal's stomach though now often in an artificial casing instead. According to the 2001 English edition of the Larousse Gastronomique: "Although its description is not immediately appealing, haggis has an excellent nutty texture and delicious savoury flavour".
It is believed that food similar to haggis (though not so named), perishable offal quickly cooked inside an animal's stomach, all conveniently available after a hunt, was eaten from ancient times.
Although the name "hagws" or "hagese" was first used in England c. 1430, the dish came to be considered traditionally Scottish, even the national dish, as a result of Scots poet Robert Burns' poem Address to a Haggis of 1787. Haggis is traditionally served with "neeps and tatties", boiled and mashed separately, and a dram (a glass of Scotch whisky), especially as the main course of a Burns supper.

Enter the Haggis
Enter the Haggis is a Canadian Celtic rock band based in Toronto. The band was founded in 1995 by Craig Downie, the only remaining original member in the lineup. The band currently consists of Downie (highland bagpipes, vocals), Brian Buchanan (vocals, fiddle, guitar), Trevor Lewington (vocals, guitar), Mark Abraham (bass), and Bruce McCarthy (drums). Their eighth and latest studio album Penny Black was released in 2014 under the Jubilee Riots name.
History
Craig Downie was born in Scotland and raised in Canada. He started playing bagpipes when he joined a pipe band at 12 years old. After pursuing an acting career in the early 1990s, Downie formed Enter the Haggis in Toronto in 1995 shortly before the band's first performance. The name was chosen as a humorous reference to the 1973 kung-fu film Enter the Dragon.
The band's first release Let the Wind Blow High was released in 1998 on Rel Records. This was followed by Aerials in 2002, which was the first studio release with the lineup consisting of Downie, Buchanan, Lewington, Abraham, and drummer James Campbell. This lineup would remain unchanged until Campbell's departure in 2010.

My initial thoughts reflected her sentiments: "I think I've found myself my new favorite spring roll." We both breathed a collective sigh of relief realizing that when our main course of Haggis, tatties and neeps arrived at our table, chances are we were going to love it. The generous portion of Haggis, neeps and tatties came with a copious side of gravy, which we poured all over the dish. It was love at first bite. Somehow, eating organs (which is something we tend to avoid) when prepared with the right combination of spices, seasonings and other ingredients is delectable. Audrey, not normally a fan of alcoholic beverages, was initially impressed: "It goes down nice. It's not too strong. It really warms you up. It's very aromatic with the cloves and lemon." Oh, so hot! Is it hot? Mmmmmm. I'm pleasantly surprised. Oh, yeah. Haggis is good people! Those are hot. Mmmmmm. Wow, so many flavors. It's delicious. I think I've found myself my new favorite spring roll. Haggis spring rolls. And it's a cold day today so I'm trying something else very Scottish here. It's a nice warm drink. It's called a Hot Toddy. It's got hot water, whisky, lemon and honey. And that sounds good to me. Take a sip. Oh yeah. It goes down nice. Okay, First sip of the Hot Toddy. I'm not I've ever even tried this whiskey. So let's how it is in a hot drink. Ooooh. It's nice. It really warms you up but it's not a strong and overpowering as I thought it would be. This is nice. Today is Burns day, Scotland's national holiday celebrating the life of the poet Robert Burns. This holiday isn't just an excuse to get blasted. It's also a culinary tribute where revelers toast to the Scottish wordsmith over clinked glasses of Scotch whiskey while feasting on haggis—a savory pudding stuffed with oats, spices, and sheep's rumen, lungs, heart, and liver. Robert Burns was a huge fan of haggis, so much so that he even wrote a poem about it that mentions something about stabbing the innards with a knife as they get pulled out like the steaming entrails of a beast. Mmm.
We had no idea how to make haggis from scratch, so we called up our friends at the Nordic Food Lab, a non-profit culinary research institute based in Copenhagen, Denmark, to get the full monty. Ben Reade, a native Scotsman and the head of culinary research and development at the Nordic Food Lab, walked us through the labor of lamb love in the Nordic Food Lab's houseboat kitchen.
After oats, spices, four-day-smoked blueberries soaked in alcohol, a couple of hearts, and sheep's rumen, liver, lungs, diaphragms, kidneys, tongues, fat, and blood were mixed together and cooked, the warm pudding was ready for some culinary poetry. Ben brought it over to the Mad Symposium—an annual gathering where international chefs and culinary minds meet to eat, drink, and discuss topics in food—and shared it with the symposium's participants.
No haggis can be consumed without the help of a sharp knife and a healthy carbon dioxide-blowing bagpiper to appease the ghost of Burns himself. Or in the words of Ben Reade, "Who wants to eat French balls? This is how we want it in Scotland."

Seeking comfort food on our first day in Edinburgh, Scotland we headed over to Whiski Rooms to try eating Haggis, tatties, and neeps while drinking Hot Toddy for the first time in our lives. After randomly wandering around - for hours on end - during our first morning in Edinburgh we started to crave comfort food to help keep us warm and satiated. Considering this would be our first meal in Scotland we figured we'd dive right in and try the National dish: Haggis.

Haggis, for those unacquainted, is a savory pudding consisting primarily of sheep's pluck (lungs, heart and liver), oatmeal, minced onion, spices and stock. More often than not it's now encased using a method similar to stuffing a sausage; however, in the past it was stuffed inside the actual animal's stomach.
As the national dish of Scotland, Haggis is typically paired with neeps and tatties (turnips and potato) and is often served with dram (Scotch whisky).
Before taking my first bite, I had serious reservations about whether or not I was going to like this.
Many foods I try overseas are immediate hits with my taste buds; however, there are plenty of foods that are acquired tastes and some simply never make the cut.
First up was a portion of Haggis spring rolls. Spring rolls are side dish we typically devour while traveling around SE Asia in countries such as Vietnam, Thailand and Cambodia. We figured it would be a 'safe' way to try Haggis for the first time.
Audrey's first bite was revealing: "MMMMMmmmm. Haggis is good people!"
My initial thoughts reflected her sentiments: "I think I've found myself my new favorite spring roll."
We both breathed a collective sigh of relief realizing that when our main course of Haggis, tatties and neeps arrived at our table, chances are we were going to love it.
The generous portion of Haggis, neeps and tatties came with a copious side of gravy, which we poured all over the dish.
It was love at first bite. Somehow, eating organs (which is something we tend to avoid) when prepared with the right combination of spices, seasonings and other ingredients is delectable.
Audrey, not normally a fan of alcoholic beverages, was initially impressed: "It goes down nice. It's not too strong. It really warms you up. It's very aromatic with the cloves and lemon."

Those are hot. Mmmmmm. Wow, so many flavors. It's delicious. I think I've found myself my new favorite spring roll. Haggis spring rolls.
And it's a cold day today so I'm trying something else very Scottish here. It's a nice warm drink. It's called a Hot Toddy. It's got hot water, whisky, lemon and honey. And that sounds good to me. Take a sip. Oh yeah. It goes down nice.
Okay, First sip of the Hot Toddy. I'm not I've ever even tried this whiskey. So let's how it is in a hot drink.
Ooooh. It's nice. It really warms you up but it's not a strong and overpowering as I thought it would be. This is nice. And it's also very aromatic because they've put some cloves along with the lemon.
Like Christmas. So far you're liking Scottish food. Yeah.

Okay, First sip of the Hot Toddy. I'm not I've ever even tried this whiskey. So let's how it is in a hot drink.
Ooooh. It's nice. It really warms you up but it's not a strong and overpowering as I thought it would be. This is nice. And it's also very aromatic because they've put some cloves along with the lemon.
Like Christmas. So far you're liking Scottish food. Yeah.

The latest new video from Enter The Haggis' upcoming EP "Broken Arms", this song tells the story of a small group of settlers (in what would eventually be Canada) who took up pitchforks and shovels to make a stand against a rumored Fenian invasion force numbering in the tens of thousands, who were allegedly planning to hold the colony hostage in order to regain control of Northern Ireland from the British.
The army never showed up and everyone just went home... but that doesn't make their stand any less badass, by our estimation. The image of a handful of farmers lining up along the shore and waiting for a massive invading army is a powerful one.
