Kimchi is probably the dish that Korean's are most famous for but it's gained popularity all over the globe, especially in recent years. The most popular form of kimchi is the cabbage version in which cabbage is coated with garlic, chilies, and a variety of other ingredients and then left to ferment. It's considered to be one of the world's superfoods because of all the good bacteria the fermentation process produces. Not to mention it's loaded with vitamins A, B and C.

If you've never had it, the smell and taste can be potent. But whether you're a kimchi enthusiast and you love the taste or you've never tried it, a good way to get your kimchi in is to put it in some fried rice and Roots, located off of route 1 in Princeton, makes a delicious version of the stuff.

The kimchi is made in house at Roots and is a savory combination of spicy and salty flavors. It's a party in your mouth, especially mixed in with some fried rice. The fried rice by itself is delicious in it's own right, but the added spice from the kimchi gives traditional fried rice a twist and a nice, spicy kick.

Roots is famous for it's modern take on Asian cuisine and their menu offers a variety of different menu items from all over Asia including dim sum, pho, and traditional sushi as well as a whole page dedicated to specialty sushi rolls. They are also famous for their make-your-own "bowls". You choose the protein (chicken, shrimp, etc.), the sauce, and whether you want it served on purple, brown or white rice or their fresh ramen noodles.

Basically, if you have a taste for Asian food, Roots will have what you crave and if you can't decide what to get, I'd go for the kimchi fried rice.
