This Fillipino recipe is a fantastic one-pot meal. The vegetables in the recipe are layered in the pot, so don't be tempted to stir it – just shake the pan occassionally as it cooks to keep the shape of the vegetables.

We head to Manila, the capital of the Philippines, for this episode of Chef's Night Out. Justin Sarabia, the chef and owner of Rural Kitchen of Lilliw, Laguna, cooks food influenced by his lola's (grandmother's) cooking. Justin and friends head out for the night in Manila, beginning at Nikkei, a restaurant that serves Peruvian-Japanese cuisine, and then on to a speakeasy called Alcohol by Volume, a pregame to the one of the best parts of eating in Manila: street food. This simple Filipino recipe for pork belly skewers is perfect for beach parties and summer barbecues. It has a few unusual ingredients, including lemonade, but the results are delicious.
Ingredients
• 1 kgpork belly
• 250 ml(1 cup) soy sauce
• 1 headgarlic, peeled and minced
• 1onion, finely chopped
• 60 ml(¼ cup) Calamansi juice or lemon juice
• 1 tspground black pepper
• 60 ml(¼ cup) brown or white sugar
• 125 ml(½ cup) banana or tomato ketchup
• 125 ml(½ cup) lemonade or beer (optional)
• 20bamboo skewers, soaked in water for 30 minutes
Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Instructions
Marinating time 30 minutes
Cut the pork into long thin slices, about 5 mm thick and 5 cm wide.
In a large bowl, combine the pork, soy sauce, garlic, onion, Calamansi juice, pepper, sugar, banana ketchup and the lemonade or beer (this tenderises and adds flavour to the pork). Cover and refrigerate for at least 30 minutes, turning occasionally.
Thread the pork strips onto the soaked bamboo skewers, reserving the marinade.
Cook the skewers over live charcoals, turning and basting with the reserved marinade every few minutes for about 10 minutes or until cooked through.

This Fillipino recipe is a fantastic one-pot meal. The vegetables in the recipe are layered in the pot, so don't be tempted to stir it – just shake the pan occassionally as it cooks to keep the shape of the vegetables.
Ingredients
• 1bitter melon, halved lengthways, seeded and sliced
• salt
• 50 mlvegetable oil
• 3 cmpiece ginger, cut into julienne
• 1red onion, thinly sliced
• 4–6garlic cloves, crushed
• 3tomatoes, cut into wedges
• 4small slender eggplant, sliced into 3 cm pieces
• 10okra
• 5snake beans, cut into 5 cm pieces
• ¼Japanese pumpkin (kabocha), peeled, seeded and cut into chunks
• 50–75 gbagoong (Filipino shrimp paste)
• 100 mlwater
• steamed rice, to serve
Bagnet
• 500 gpork belly, sliced
• 1onion, coarsely chopped
• 2bay leaves
• 3garlic cloves, peeled
• 30 gsalt
• vegetable oil, for deep-frying (optional)
Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Instructions
Standing time 30 minutes
To make the bagnet, place all ingredients except the oil in a saucepan and add enough water to cover. Simmer over low heat for 1 hour, or until pork is tender.
Preheat the oven to 200°C. Drain the pork, place in a small roasting pan and bake for 30 minutes, or until pork has dried. If you like the pork extra crispy, you can now deep-fry it. Alternatively, chop into pieces and set aside.
Meanwhile, place the bitter melon in a bowl. Sprinkle generously with salt and stand for 30 minutes to help draw out some of the bitterness. Rinse and set aside.
Heat the oil in a pan over medium heat. Sauté the ginger, onion and garlic for 5–6 minutes, or until tender.
Working in layers, add the tomato, eggplant, okra, bitter melon, snake beans and pumpkin to the pan. Spoon over the bagoong, scatter with the chopped bagnet, then pour in the water. Cover and cook over low heat, shaking pan once or twice to ensure bagoong is distributed evenly, for 12–15 minutes, or until vegetables are cooked through but retaining their shape and not mushy. Serve with steamed rice.

Instructions
Standing time 30 minutes
To make the bagnet, place all ingredients except the oil in a saucepan and add enough water to cover. Simmer over low heat for 1 hour, or until pork is tender.
Preheat the oven to 200°C. Drain the pork, place in a small roasting pan and bake for 30 minutes, or until pork has dried. If you like the pork extra crispy, you can now deep-fry it. Alternatively, chop into pieces and set aside.
Meanwhile, place the bitter melon in a bowl. Sprinkle generously with salt and stand for 30 minutes to help draw out some of the bitterness. Rinse and set aside.
Heat the oil in a pan over medium heat. Sauté the ginger, onion and garlic for 5–6 minutes, or until tender.
Working in layers, add the tomato, eggplant, okra, bitter melon, snake beans and pumpkin to the pan. Spoon over the bagoong, scatter with the chopped bagnet, then pour in the water. Cover and cook over low heat, shaking pan once or twice to ensure bagoong is distributed evenly, for 12–15 minutes, or until vegetables are cooked through but retaining their shape and not mushy. Serve with steamed rice.

Peter Kuruvita's recipe for this sweet and fruity Filipino dessert can be made with any seasonal ingredients you like. It's so simple – get the kids to help out – and ideal for chilling out on a hot summer's day.
Ingredients
• ½ cupcanned sweet corn kernels or cooked chickpeas
• 1 cupcooked sweet yams or glutinous purple yam (ube halaya), cut into 2.5 cm cubes
• 1 cupcanned ripe jackfruit, drained, thinly sliced
• 2ripe mangoes, peeled (or 1 cup canned ripe mango), cut into 1 cm pieces
• 1 largeripe banana, sliced
• 1 cupfresh or canned young shredded coconut
• 1 cupchopped jelly
• 2 cupsshaved ice
• 250 ml(1 cup) milk
• 4 scoopsof your favourite ice-cream
• chopped peanuts, to serve
Jelly
• 1½ sheetstitanium-strength gelatine
• 250 ml(1 cup) canned pineapple juice
Cook's notes

To make the jelly, soak the gelatine in iced water. Heat the pineapple juice in a saucepan over low heat. When the gelatine is soft, drain and squeeze out the excess water. Add to the pan and stir until dissolved. Do not boil. Remove from heat and pour into a small tray, refrigerate until set, then cut into 1 cm cubes.
Divide the corn or chickpeas, sweet yams, jackfruit, mango, banana, coconut and jelly among 4 tall glasses. Top each glass with ½ cup shaved ice, 60 ml (¼ cup) milk and 1 scoop of ice-cream. Sprinkle with peanuts and serve immediately.
Note
• You can eat it as is, or mix the whole concoction before eating. Some of the ingredients above, such as corn or fruits, may be substituted with cherries, crushed pineapple, papaya, or any other ripe fruits in season.

Philippine cuisine consists of the food, preparation methods and eating customs found in the Philippines. The style of cooking and the food associated with it have evolved over many centuries from its Austronesian origins to a mixed cuisine of Malay, Spanish, Chinese, and American, as well as other Asian and Latin influences adapted to indigenous ingredients and the local palate.
Dishes range from the very simple, like a meal of fried salted fish and rice, to the elaborate paellas and cocidos created for fiestas of Spanish origin, and spaghetti and lasagna of Italian origin. Popular dishes include: lechón (whole roasted pig), longganisa (Philippine sausage), tapa (cured beef), torta (omelette), adobo (chicken and/or pork braised in garlic, vinegar, oil and soy sauce, or cooked until dry), kaldereta (meat in tomato sauce stew), mechado (larded beef in soy and tomato sauce), puchero (beef in bananas and tomato sauce), afritada (chicken and/or pork simmered in a tomato sauce with vegetables), kare-kare (oxtail and vegetables cooked in peanut sauce), pinakbet (kabocha squash, eggplant, beans, okra, and tomato stew flavored with shrimp paste), crispy pata (deep-fried pig's leg), hamonado (pork sweetened in pineapple sauce), sinigang (meat or seafood in sour broth), pancit (noodles), and lumpia (fresh or fried spring rolls).
During the pre-Hispanic era in the Philippines, the preferred Austronesian methods for food preparation were boiling, steaming and roasting. The ingredients for common dishes were obtained from locally raised livestock. These ranged from kalabaw (water buffaloes/carabaos), baka (cows), manok (chickens) and baboy (pigs) to various kinds of fish and seafood. In 3200 BCE, Austronesians from the southern China Yunnan-Guizhou Plateau and Taiwan settled in the region that is now called the Philippines. They brought with them knowledge of rice cultivation and other farming practices which increased the number and variety of edible dish ingredients available for cooking.
Direct trade and cultural exchange with Hokkien China in the Philippines in the Song dynasty (960–1279 AD) with porcelain, ceramics, and silk being traded for spices and trepang in Luzon.[3] This early cultural contact with China introduced a number of staple food into Philippine cuisine, most notably toyo (soy sauce; Chinese: 豆油; Pe̍h-ōe-jī: tāu-yu), tokwa; (tofu; Chinese: 豆干; Pe̍h-ōe-jī: tāu-koaⁿ), toge (bean sprout; Chinese: 豆芽; Pe̍h-ōe-jī: tāu-koaⁿ), and patis (fish sauce), as well as the method of stir frying and making savory soup bases. Trade with the various neighboring kingdoms of Malacca and Srivijaya in Malaya and Java brought with it foods and cooking methods which are still commonly used in the Philippines today, such as Bagoong (Malay: Belacan), Patis, Puso (Malay: Ketupat), Rendang, Kare-kare and the infusion of coconut milk in condiments, such as laing and Ginataang Manok (chicken stewed in coconut milk). Through the trade with the Malay-Indonesian kingdoms, cuisine from as far away as India and Arabia enriched the palettes of the local Austronesians (particularly in the areas of southern Luzon, Mindanao, Sulu, Palawan, the Visayas and Bicol, where trade was strongest). These foods include various dishes eaten in areas of the southern part of the archipelago today, such as puto derived from Indian cuisine puttu, kurmah, satti and biryani.
Spanish colonizers and friars in the 16th century brought with them produce from the Americas like chili peppers, tomatoes, corn, potatoes, and the method of sautéing with garlic and onions. Chili leaves are frequently used as a cooking green. Spanish (and Mexican) dishes were eventually incorporated into Philippine cuisine with the more complex dishes usually being prepared for special occasions. Some dishes such as arroz a la valenciana remain largely the same in the Philippine context. Some have been adapted or have come to take on a slightly or significantly different meaning. Arroz a la cubana served in the Philippines usually includes ground beef picadillo. Philippine longganisa despite its name is more akin to chorizo than Spanish longaniza (in Visayan regions, it is still known as chorizo). Morcon is likely to refer to a beef roulade dish not the bulbous specialty Spanish sausage.
