It took me a couple tries to get this right but it's as close as it'll ever get! Based on a recipe found online, I added to it to include spices listed in the ingredient listing for LJS's batter. You can also use this on chicken or shrimp. And the audio on my camera is failing, thus the text/music. What you'll need: 1 lb cod filets (I bought 'filets' but they are more like pieces) 3/4 cup AP flour 2 Tbsp corn starch 1 tsp sugar 1 tsp salt (could use 1/2 tsp but it's also seasoning the fish) 1/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp onion powder 1/8 tsp garlic powder 1/8 tsp paprika 3/4 cup club soda (can also use plain water if you wish) Mix dry ingredients together.
