What I Eat in a Day | Easy Vegan Recipes | Episode 3 | The Edgy Veg
The
Edgy Veg has been hard at work in the kitchen putting together another "What I eat in a Day" video. This one features all vegan
Breakfast Burritos for brunch, a fresh take on the classic rice bowl for a late lunch, and by request some epic
Jamaican patties for dinner.
Candice and
James got off to a late start and decided the best way to kick off the day would be a Breakfast Burrito brunch. Candice opts for canned beans because it really is a bit of a hassle to buy dried beans and soak them for hours. She takes a can of black beans and puts them in a skillet, ordinarily she would add cumin but she is actually out so she uses chili powder, paprika, and some garlic powder instead. She heats that up mixing it together well. After that she moves on to her egg replacement, which in this case is going to be a tofu scramble. In another skillet she breaks up her tofu to get a consistency similar to scrambled eggs.
She mentions that a lot of people like to use black salt and turmeric to season their tofu when using it as an egg replacement but she decides to use some veg powder she had left over instead and mixes that up in a food processor. She pours this over the top of the tofu while it's cooking to give it a more "eggy" flavor.
Once the tofu is done Candice gets all her Breakfast Burrito ingredients together. She has one halved avocado, some vegan lunchmeat, her scrambled tofu, vegan cheddar slices, tortillas, the beans she cooked earlier, and some
Tabasco. She combines all this together into a delectable looking
Brunch Breakfast Burrito.
For lunch Candice decides it's time to take a good look at what's in the fridge waiting to be eaten. She finds some baked sweet potatoes, left over brown rice, kale, coriander, tahini, a lemon, and some garlic. She bakes the kale for a bit then combines the lemon, garlic, coriander and tahini in her food processor blending it well. After that she builds her brown rice lunch bowl topping it with the dressing blend she just made.
For dinner Candice takes the bold move of making beef style
Jamaican Patties. She has already added the necessary spices to her pan and throws in some veggie meat crumbles as well. She pulls out the dough she made earlier, which actually takes hours to create, and then gets to work frying up her vegan filling. The idea with the filling is to get a smooth consistency that will work well inside the Jamaican Patties. After she simmers the filling for
30 minutes it's finally time to start constructing the patties.
She creates some smaller tortilla sized round rolled out dough pieces and brushes them with what oil. She puts her filling in the center and folds the rounded dough in half making what looks very much like an apple turnover. Then she takes a fork and creates the edges brushing the Jamaican
Patty again before putting it in the oven. When those are done she pulls them out noting that they are the right consistency but she may have over-kneaded her dough a bit.
