Ginger beer is a carbonated, sweetened beverage produced in two versions: alcoholic brewed ginger beer (which includes home-brewed) or a carbonated soft drink flavored primarily with ginger and sweetened with sugar or artificial sweeteners. Ginger has long been used as a spice, and its use to flavour a fermented drink may have originated in England in the eighteenth century. By the early twentieth century it was a popular drink in Britain, Ireland, the United States and Canada. Golden ginger ale is a similar carbonated drink that originated in Northern Ireland in 1851, the main difference between the two being in the ale's greater clarity.
Ginger beer can be produced at home using a symbiotic colony of yeast and a Lactobacillus (bacteria) known as a "ginger beer plant". Commercially, the drink is available as a sweet, carbonated product or a brewed, alcoholic drink and is sold in cans and bottles. The soft drink can be mixed with beer to create a kind of shandy, or with dark rum to make a drink called Dark 'N' Stormy.

Ok, you'll need water too, but it still amazes me that I can make my own ginger brew at home with such quotidian ingredients. And you don't need much special equipment besides a handy bottle capper and a good microplane. Ginger beer, if you've never had it before, is an effervescent drink made from a mixture of ginger and syrup. It is nonalcoholic, like root beer. It's bubbly like a soda, but its carbonation comes from fermentation. Over the course of a few days, you can easily turn some grated ginger, sugar and water into an active bug that will transform a ginger syrup mixture into the special drink that it is. How to make a strong ginger beer with fresh root ginger and dry malt extract. This time the ginger level is perfect for what I'm after; enough to give a comforting, warming sensation rather than a burn, but definitely there as a flavour rather than just a hint. Also, this time, the carbonation in the bottle is bang on the money. I used Coopers carbonation drops for ease, but there is no reason not to use house hold sugar. * Anything that is fermented has some alcohol content (even over ripe bananas have some alcohol content). If you make and consume this beverage within a few weeks it has such little alcohol that it should not be a consideration even for people with alcohol sensitivities.
