Before New Year's in Japan it's traditional to make mochi and then display it in your genkan (玄関/the entryway of your house). The mochi you display is called Kagami mochi (鏡餅/mirror mochi), and consists of 2-3 layers of round mochi cakes stacked on top of each other. The traditional method of making mochi is pounding mochi rice with a giant wooden mallet. However, the days of technology are upon us and now the modern method of making mochi is using a rice cooker! Every year different shrines will still make mochi the traditional way for certain festivals and the New Year, so if you visit Japan look out for it!
When I visited Japan, Jun and I went to his uncle's house to eat some freshly-made mochi (出来立て持ち/dekitate mochi). The footage at the end of the video is from the Hadaka Matsuri (裸祭り/Naked Festival) two years ago--which Jun's uncle was involved in planning!

This looks like a large drop of water but it’s actually a cake! It's called Mizu Shingen Mochi and it's so delicate it needs to be consumed in less than 30 minutes, after which it will turn into a sweet puddle of water!

コメントでリクエストをいただいたのでこの夏 話題の"水信玄餅"を作ってみました。このお菓子は山梨の金精軒さんのお菓子です。デリケートなので持ち帰り不可、しかも期間限定、さらに土日限定の もはや幻の様なお菓子なのです。本物は水、砂糖、寒天というシンプルな材料でできているとのこと。寒天で試作してみましたが、この水滴を閉じ込めたような透明感を出すことができませんでした。のでアガーを使ってみましたよ。ちなみに寒天での材料は→水 450cc、グラニュー糖 11g、寒天 小さじ1/2（1g）です。寒天の方が食感は近いのかな？ステキな水菓子、ぜひお試しください。
*レシピ*
１．鍋にアガー 15gとグラニュー糖 12gを入れ混ぜる。
２．１に水 500ccを少しづつ加えては混ぜるを繰り返す。アガーは溶けにくいのでここポイントです。
３．火にかけ沸騰させアガーを完全に溶かす。
４．丸い型に流し込む。
５．冷蔵庫で冷やす。
６．固まったら型から取り出し、黒蜜ときな粉をかける。
７．コレはちょっとしたForceかもと思いながらいただく。
*Ingredients*
Water
Granulated Sugar
Agar
Brown Sugar Syrup (kokumitsu)
Soybean Flour (kinako)
*Recipe*
1.Put 12g granulated sugar and 15g agar in a pot, and mix.
2.Add 500cc water little by little, and mix. Repeat it.This is important because agar does not melt easily.
3.Melt agar completely with the boiling hot water.
4.Pour it into the sphere mold.
5.Chill it in a refrigerator.
6.Take out from the model after hardened and put brown sugar syrup and soybean flour.
7.Please eat while feeling the Force.

Mochi (餅) is Japanese rice cake made of mochigome, a short-grain japonica glutinous rice. The rice is pounded into paste and molded into the desired shape. In Japan it is traditionally made in a ceremony called mochitsuki.[1] While also eaten year-round, mochi is a traditional food for the Japanese New Year and is commonly sold and eaten during that time. Mochi is called môa-chî (麻糬 or 𫃎糬) in Taiwan.
Mochi is a multicomponent food consisting of polysaccharides, lipids, protein and water. Mochi has a heterogeneous structure of amylopectin gel, starch grains and air bubbles.[2] This rice is characterized by its lack of amylose in starch and is derived from short or medium japonica rices. The protein concentration of the rice is a bit higher than normal short-grain rice and the two also differ in amylose content. In mochi rice, the amylose content is negligible which results in the soft gel consistency of mochi.[3]

total cooking time on the pan: 15min
5 mins, flip after 5 mins, again after 2mins, then after 3mins

Mochi (Japanese: 餅) is a Japanese rice cake made of glutinous rice (not to be confused with gluten) pounded into paste and molded into shape. Traditionally, mochi was made from whole rice, in a labor-intensive process. The traditional mochi-pounding ceremony in Japan is Mochitsuki:
Mochi can also be prepared from a flour of sweet rice (mochiko). The flour is mixed with water to a sticky opaque white mass that is cooked on the stovetop or in the microwave until it becomes elastic and slightly transparent.
Many types of traditional wagashi and mochigashi (Japanese traditional sweets) are made with mochi. For example, daifuku is a soft round mochi stuffed with sweet filling, such as sweetened red bean paste (an) or white bean paste (shiro an). Ichigo daifuku is a version containing a whole strawberry inside.[citation needed]

Hey everyone! These Hello Kitty mochis are very easy to make in the microwave and are delicious filled with a red bean paste or even Nutella! All you need is some sweet rice flour (I got mine for a dollar/box!), sugar, and water! Enjoy, and don't forget to post pictures of your creations to my Facebook page! (http://on.fb.me/14LNQ1d) Recipe adapted from Bakingdom (http://bit.ly/1djjGpo) Makes 4 Hello Kitty mochis Ingredients: 3/4 cup sweet rice flour 2 T. white sugar 1/3 cup water Food coloring (optional) Directions: 1. Combine all ingredients in a bowl. If needed, either clean sides of bowl or transfer mocha to a clean microwave safe bowl. 2. Microwave for 2 minutes, stir mochi as best as you can (paste should be thick) 3. Microwave for an additional 1 minute, take mochi out onto a work surface floured with the sweet rice flour and flour mochi. The mochi will be hot so be careful! 4. Roll out mochi with a floured rolling pin until it's ¼" thick. Cut out mochi using metal cookie cutters or a knife to cut mochi into rectangles. Note: When making more colors of mochi, be sure to cover any finished mochi with plastic wrap to prevent it from drying out. Also, store the mochi covered with plastic wrap in the refrigerator. Mochi-Pounding Process in Nara Japan pt2 (more fun)
This is the more fun part of the performance art sort of process that is mochi-making. After this, the lump of mochi dough goes into a machine which fills small balls of it with sweet adzuki-bean paste and then spits it out. Then it's ready to eat, all warm and soft and sticky. At the end of this video, the mochi-maker shouts at the crowd (who were all behind me) to please go have fresh yomogi mochi. Boy that was tasty. Mochi machine kneading rice into mochi
Watch as a mochi machine turns steamed rice into mochi in just a few minutes. Mochi made in the traditional way was extremely labor intensive, and was only prepared for special holidays. The invention of the mochi machine changed all that. The process is simple: 1) Soak special mochi rice in water 2) Transfer the rice to the mochi machine, as indicated in the manual 3) Cook the rice in the machine, like an ordinary rice cooker 4) A buzzer sounds, remove the lid, and switch the machine to knead mode (this step is shown in the video above) These early mochi machines inspired the development of the first home bread machine, made by Panasonic/National/Matsushita (same manufacturer as the mochi machine in this video). Before New Year's in Japan it's traditional to make mochi and then display it in your genkan (玄関/the entryway of your house). The mochi you display is called Kagami mochi (鏡餅/mirror mochi), and consists of 2-3 layers of round mochi cakes stacked on top of each other. The traditional method of making mochi is pounding mochi rice with a giant wooden mallet. However, the days of technology are upon us and now the modern method of making mochi is using a rice cooker! Every year different shrines will still make mochi the traditional way for certain festivals and the New Year, so if you visit Japan look out for it!
When I visited Japan, Jun and I went to his uncle's house to eat some freshly-made mochi (出来立て持ち/dekitate mochi). The footage at the end of the video is from the Hadaka Matsuri (裸祭り/Naked Festival) two years ago--which Jun's uncle was involved in planning!

Before New Year's in Japan it's traditional to make mochi and then display it in your genkan (玄関/the entryway of your house). The mochi you display is called Kagami mochi (鏡餅/mirror mochi), and consists of 2-3 layers of round mochi cakes stacked on top of each other. The traditional method of making mochi is pounding mochi rice with a giant wooden mallet. However, the days of technology are upon us and now the modern method of making mochi is using a rice cooker! Every year different shrines will still make mochi the traditional way for certain festivals and the New Year, so if you visit Japan look out for it!
When I visited Japan, Jun and I went to his uncle's house to eat some freshly-made mochi (出来立て持ち/dekitate mochi). The footage at the end of the video is from the Hadaka Matsuri (裸祭り/Naked Festival) two years ago--which Jun's uncle was involved in planning!

This looks like a large drop of water but it’s actually a cake! It's called Mizu Shingen Mochi and it's so delicate it needs to be consumed in less than 30 minutes, after which it will turn into a sweet puddle of water!

コメントでリクエストをいただいたのでこの夏 話題の"水信玄餅"を作ってみました。このお菓子は山梨の金精軒さんのお菓子です。デリケートなので持ち帰り不可、しかも期間限定、さらに土日限定の もはや幻の様なお菓子なのです。本物は水、砂糖、寒天というシンプルな材料でできているとのこと。寒天で試作してみましたが、この水滴を閉じ込めたような透明感を出すことができませんでした。のでアガーを使ってみましたよ。ちなみに寒天での材料は→水 450cc、グラニュー糖 11g、寒天 小さじ1/2（1g）です。寒天の方が食感は近いのかな？ステキな水菓子、ぜひお試しください。
*レシピ*
１．鍋にアガー 15gとグラニュー糖 12gを入れ混ぜる。
２．１に水 500ccを少しづつ加えては混ぜるを繰り返す。アガーは溶けにくいのでここポイントです。
３．火にかけ沸騰させアガーを完全に溶かす。
４．丸い型に流し込む。
５．冷蔵庫で冷やす。
６．固まったら型から取り出し、黒蜜ときな粉をかける。
７．コレはちょっとしたForceかもと思いながらいただく。

Hey everyone! These Hello Kitty mochis are very easy to make in the microwave and are delicious filled with a red bean paste or even Nutella! All you need is some sweet rice flour (I got mine for a dollar/box!), sugar, and water! Enjoy, and don't forget to post pictures of your creations to my Facebook page! (http://on.fb.me/14LNQ1d)

Makes 4 Hello Kitty mochis
Ingredients:
3/4 cup sweet rice flour
2 T. white sugar
1/3 cup water
Food coloring (optional)
Directions:
1. Combine all ingredients in a bowl. If needed, either clean sides of bowl or transfer mocha to a clean microwave safe bowl.
2. Microwave for 2 minutes, stir mochi as best as you can (paste should be thick)
3. Microwave for an additional 1 minute, take mochi out onto a work surface floured with the sweet rice flour and flour mochi. The mochi will be hot so be careful!
4. Roll out mochi with a floured rolling pin until it's ¼" thick. Cut out mochi using metal cookie cutters or a knife to cut mochi into rectangles.
Note: When making more colors of mochi, be sure to cover any finished mochi with plastic wrap to prevent it from drying out. Also, store the mochi covered with plastic wrap in the refrigerator.

This is the more fun part of the performance art sort of process that is mochi-making. After this, the lump of mochi dough goes into a machine which fills small balls of it with sweet adzuki-bean paste and then spits it out. Then it's ready to eat, all warm and soft and sticky.
At the end of this video, the mochi-maker shouts at the crowd (who were all behind me) to please go have fresh yomogi mochi.
Boy that was tasty. I'll never eat better mochi in my life, I'm sure of it.

Häagen-Dazs 30th Anniversary Rose (ハーゲンダッツ 30th アニバーサリー ローズ)
Häagen-Dazs Spoon Vege Tomato Cherry (ハーゲンダッツ スプーンベジ トマトチェリー)
Häagen-Dazs Spoon Vege Carrot Orange (ハーゲンダッツ スプーンベジ キャロットオレンジ)
Meiji Essel Super Cup Very Vanilla (明治エッセル スーパーカップ 超バニラ)
*btw, what Essel means is "excellent & essential". I never knew it was a coined word until I searched it. hehe

Mochi Ice Cream (Yukimi Daifuku)
Difficulty: Easy
Time: 30min
Number of servings: 8
Ingredients:
50g (1.8oz.) Shiratamako (lumpy glutinous rice flour)
75g (2.7oz.) sugar *you will need at least this much sugar to keep the Mochi soft in the freezer. some people add 1 tsp. of cooking oil to keep it even softer.
100ml water
ice cream of your choice
Katakuriko (potato starch) or corn starch
Directions:
1. Place Shiratamako (lumpy glutinous rice flour) in a microwavable bowl. Add water little by little and mix very well with a whisk. Then add sugar and mix well. *DO NOT add sugar before you mix the Shiratamako and water together. Otherwise, they won't mix well (the lumpy texture won't go away).
2. Cover with plastic wrap, then microwave at 600 watts for 2 minutes. Mix well with a damp spatula. Cover with plastic wrap again, then microwave at 600 watts for 1 minute. Mix well with a damp spatula.
3. Dust some starch on the counter. Place the mochi. Then sprinkle some starch and flatten out the mochi using your hands and a rolling pin to 3mm (0.1 inch) thick.
4. When the mochi is completely cool, cut into 8 square pieces. OR you can use a round cookie cutter or a cup to cut into 8 round pieces.
5. Line a small bowl with plastic wrap, place the mochi, place some ice cream, pinch the mochi to seal, then wrap with plastic wrap to shape.
6. Keep in the freezer. When you eat, put it out from the fridge for a few minutes until the mochi gets soft.

Lucky Penny Thoughts: I like looking at the packaging and learning about these kits. I have to study the pictures and in many cases use the app on my cell phone to translate the words. I needed to translate the water part of this kit to see if they needed a certain amount. I liked how the water changed the white discs.

Watch as a mochi machine turns steamed rice into mochi in just a few minutes. Mochi made in the traditional way was extremely labor intensive, and was only prepared for special holidays.
The invention of the mochi machine changed all that. The process is simple:
1) Soak special mochi rice in water
2) Transfer the rice to the mochi machine, as indicated in the manual

The invention of the mochi machine changed all that. The process is simple:
1) Soak special mochi rice in water
