Puff pastry, also known as pâte feuilletée, is a flaky light pastry containing several layers of fat which is in solid state at 20 °C (68 °F). In raw form, puff pastry is a laminated dough composed of two elements: a "dough packet", the détrempe and a "butter packet" or other solid fat, the beurrage. Preparing a classic puff pastry requires an envelope formed by placing the beurrage inside the détrempe. An "inverse puff" pastry envelope places the détrempe inside the beurrage. The resulting paton is repeatedly folded and rolled out before baking.
The gaps that form between the layers left by the fat melting are pushed (leavened) by the water turning into steam during the baking process. Piercing the dough will prevent excessive puffing, and crimping along the sides will prevent the layers from flaking all of the way to the edges.
Puff pastry seems to be a relative of the Middle Eastern phyllo, and is used in a similar manner to create layered pastries. While traditionally ascribed to the French painter and cook Claude Gelée who lived in the 17th century (the story goes that Gelée was making a type of very buttery bread for his sick father, and the process of rolling the butter into the bread dough created a croissant-like finished product), references appear before the 17th century, indicating a history that came originally through Muslim Spain and was converted from thin sheets of dough spread with olive oil to laminated dough with layers of butter, perhaps in Italy or Germany.
Anna Olson is a professionally trained pastry chef. She resides in Welland in the Niagara region of Ontario, Canada. She is the host of Bake with Anna Olson on Food Network Canada. She was previously the host of Food Network Canada's Fresh with Anna Olson,Sugar and Kitchen Equipped.
Olson was born Anna Tomcik in Atlanta, Georgia. Her parents, Donna and Andy Tomcik emigrated to Toronto where she grew up. Olson's grandparents came from Slovakia. Olson earned a degree in political studies and sociology from Queen’s University in Kingston. She also worked for a time in a bank in downtown Toronto. During her lunch breaks, Olson wandered the St. Lawrence Market searching for different ingredients and inspiration for her next dinner party. Olson then enrolled in the College of Culinary Arts at Johnson & Wales University in Denver, Colorado. Upon her graduation from the university, Olson traveled across the United States. She would eventually find her way to Niagara Falls. Olson was a pastry chef at Inn on the Twenty in Jordan, Ontario for seven years, where she met her husband, chef Michael Olson.

The U.S. Food and Drug Administration defines cream cheese as containing at least 33% milk fat with a moisture content of not more than 55%, and a pH range of 4.4 to 4.9. In other countries, it is defined differently and may need a considerably higher fat content.
Cream cheese is not naturally matured and is meant to be consumed fresh, and so it differs from other soft cheeses such as Brie and Neufchâtel. It is more comparable in taste, texture, and production methods to Boursin and Mascarpone.
Early prototypes of cream cheese are mentioned in England as early as 1583 and in France as early as 1651. Recipes are recorded soon after 1754, particularly from Lincolnshire and the southwest of England.
Parmigiano-Reggiano (/ˌpɑːrmɪˌdʒɑːnoʊ rɛˈdʒɑːnoʊ/; Italian pronunciation: [ˌparmiˈdʒaːno redˈdʒaːno]), or Parmesan cheese, is a hard, granular cheese. The name "Parmesan" is often used generically for various imitations of this cheese, although European law forbids this.
It is named after the producing areas, which comprise the Provinces of Parma, Reggio Emilia, Bologna (only the area to the west of the river Reno), Modena (all in Emilia-Romagna), and Mantua (in Lombardy, but only the area to the south of river Po), Italy. Under Italian law, only cheese produced in these provinces may be labelled "Parmigiano-Reggiano", and European law classifies the name, as well as the translation "Parmesan", as a protected designation of origin. Parmigiano is the Italian adjective for Parma and Reggiano that for Reggio Emilia. Outside the EU, the name "Parmesan" can legally be used for cheeses similar to Parmigiano-Reggiano, with only the full Italian name unambiguously referring to Parmigiano-Reggiano cheese. It has been called the "King of Cheeses".
