Mix in chilli powder, paprika, cumin, coriander, oregano, sugar and 1 tsp salt. Cook on a medium heat for 3-4 minutes. Turn the heat up to maximum, add meat and brown. Add approx. 3 tbsp water, keeping the frying pan so hot that the majority of the liquid evaporates. Stir the mixture continuously for 5-10 minutes. Add more water if the meat starts to stick.
Warm up Taco shells for 5 minutes in the oven. Arrange meat with the taco shells, iceberg salad, Cheddar and tomato salsa on the table so that everyone can fill their taco shells themselves.
Preparation time: approx. 30 minutes
Level of difficulty: normal

1-2 TSP. BLACK PEPPER
2-3 TSP. SESAME OIL
2-4 TBSP FISH SAUCE
1-2 TBSP. OYSTER SAUCE
1-2 TBSP. HOT CHILI FLAKES
2 TSP. LIME JUICE
1-2 TSP. GINGER PASTE OR FINELY MINCED GINGER.
Slice your beef with the grain/along the grain into 1/8th to anywhere up to 1/4 inch.
Freeze the beef for 30 to 45 minutes to make it easier to cut.
In a mixing bowl combine all of your spices and herbs and mix them together well by hand to get them really well combined.
Then add sesame seed oil, fish sauce and oyster sauce to make the mixture sticky to stick to the beef.
Let the sauce mixture stand for about 30 mins to let the flavors marry.
Coat all of your slices and put on plate or in a bowl.
Marinate for 4 hours minimum or overnight. I like overnight.
Take from the fridge and dip each slice of meat in the sauce mix then place your slices in your dehydrator at 150-160 and let dry for at least 2 hours and then turn the slices over to the other side and rotate your levels going top becomes bottom and bottom becomes top. This is for consistent drying.
Allow to dry for another hour and check your slices. You don't want them to be really dry you want them to have some moisture and you want them to be chewy not hard. All in all dry time should be maybe 4 hours each dehydrator will be a bit different so watch your slices. When done then enjoy!

1-2 TBSP. HOT CHILI FLAKES
2 TSP. LIME JUICE
1-2 TSP. GINGER PASTE OR FINELY MINCED GINGER.
Slice your beef with the grain/along the grain into 1/8th to anywhere up to 1/4 inch.
Freeze the beef for 30 to 45 minutes to make it easier to cut.
In a mixing bowl combine all of your spices and herbs and mix them together well by hand to get them really well combined.
Then add sesame seed oil, fish sauce and oyster sauce to make the mixture sticky to stick to the beef.
Let the sauce mixture stand for about 30 mins to let the flavors marry.
Coat all of your slices and put on plate or in a bowl.
Marinate for 4 hours minimum or overnight. I like overnight.
Take from the fridge and dip each slice of meat in the sauce mix then place your slices in your dehydrator at 150-160 and let dry for at least 2 hours and then turn the slices over to the other side and rotate your levels going top becomes bottom and bottom becomes top. This is for consistent drying.
Allow to dry for another hour and check your slices. You don't want them to be really dry you want them to have some moisture and you want them to be chewy not hard. All in all dry time should be maybe 4 hours each dehydrator will be a bit different so watch your slices. When done then enjoy!

I first need to start off by saying that Ethiopians love to eat, and their food is incredibly delicious. I knew I loved Ethiopian food before I ever visited the country, but when I was there, I was amazed at just how incredible the food was everywhere I ate. Here's another thing about Ethiopian food, there is plenty of vegetarian food available (http://migrationology.com/2013/11/ethiopian-vegetarian-vegan-food/), and many people who follow the Ethiopian Orthodox faith normally fast (this means not eating any animals products on Wednesdays and Fridays, and during lent). That being said, meat is loved in Ethiopia, and one of the most famous and most loved dishes is minced raw beef known as kitfo (ክትፎ).
Now it can be a bold statement to say that a certain food is the most beloved dish of a country, but the only reason I say that is because just about every Ethiopian I know, friends in Kenya, USA, and from watching people in Ethiopia, I really think that it's one of the dishes that's most loved by Ethiopians. Kitfo (ክትፎ) is a special food, it's not something that's eaten on a daily basis, it's eaten more during celebrations.
Before going to Ethiopia, I had eaten kitfo (ክትፎ) on numerous occasions at restaurants, so it was a dish I knew I wanted to eat when I was in Addis Ababa. I decided to go to a restaurant known as Yohannes Kitfo - this is a kitfo house, in other words, you come to this restaurant to eat one dish only: kitfo. The restaurant is actually pretty nice, tucked back in the quiet neighborhood and in a nice peaceful place to dine. There are two different methods of kitfo (ክትፎ), the "leb leb" version is slightly cooked, and the other version is served completely raw. I decided to go completely raw in an effort to taste the truest taste of the beef, but the leb leb version might be a little bit of a safer option when it comes to bacteria. But that being said, they use only the freshest meat so that the beef is high quality and excellent to eat raw.
What exactly is Kitfo (ክትፎ)? It's minced raw beef that's mixed with a mitmita, a blend of Ethiopian spices, and then some Ethiopian butter known as nitter kibbeh is mixed into the meat. The spices and butter give the minced beef some extreme delicious flavor. The meat is served with injera, the staple, and also some extra pieces of hard bread known as kocho - this was my first ever time to sample this bread made from ensete (similar to a banana) flour. The kitfo (ክትፎ) was served in a bowl, with gomen (collard greens) and a couple of different cheese on the side. I was so excited to dig in for my first bite as soon as it arrived, it was a huge pile of meat! That first bite was absolutely sensational, I could hardly contain how good it actually was! The meat was so well seasoned and it really just melted in my mouth. The kitfo went extremely well with the injera and also the kocho bread.

Ingredients :

- Salted Black Beans : 1 tbsp (wash before used)
- Minced meat : 100 grams
- Mixed vegetables : 50 grams
- Minced garlic (5 cloves)
- BBQ sauce : 2 tbsp
- Cooking oil : 1 tbsp
- Chili oil : 1 tbsp
- Raw cane sugar : 1 tsp
- Water : 1 cup
- Tapioca starch (or corn flour) - (1 tbsp of flour mix with 3 tbsp of water)
Cooking method :
(1) Heat up wok with 1 tbsp of cooking oil, saute minced garlic until fragrant, add in black bean, again stir fry until fragrant.
(2) Add in minced meat, BBQ sauce, chili oil, stir fry and mix all ingredients.
(3) Add in mixed vegetables , a table spoon of cane sugar and 1 cup of water, stir and mix all ingredients. When the sauce boils, slowly and lightly add in tofu, simmer until it boils again, slowly stream in tapioca starch, lightly mix them until the sauce thicken.

Ingredients for 4 people:

Method:
To make the Dressing:
Finely slice the chilli.
Finely chop the coriander.
Mix all the dressing ingredients together and adjust to taste.
To make the Beef'n'Pork:
Deseed the chillies.
Peel and finely chop the ginger, chillies and garlic.
Finely slice the spring onions.
Separate the gem lettuce into leaves.
Heat a large frying pan and add the olive oil. Mix the minced beef and pork together. Season with salt and pepper and mix well to ensure the seasoning is evenly distributed. Fry the mince in the hot pan for 5-7 minutes until crisp and brown and broken down to a fine consistency. Drain the crisped mince in a sieve - this will help it stay crispy. Set aside.
Wipe out the pan and add the sesame oil. Add the garlic, ginger and chilli. Fry with a pinch of salt and the sugar for 2 minutes. Add the drained mince and stir to mix.
Add the fish sauce and heat through. Stir in the lime zest and juice, then add the spring onions, stirring for 30 seconds. Turn off the heat.
To serve, spoon some of the mince mixture into the lettuce leaves, drizzle with a little dressing and serve.

3/4 pound Beef Sirloin Steak -- sliced in 1/8-inch strips
1/8 cup olive oil
3 cloves garlic -- smashed
1 large organic onion -- sliced in 1/4-inch strips
1/4 pound mixed wild mushrooms -- trimmed and cut into strips
1/2 pound broccoli -- cut into bite-size pieces
2 cups Bok Choy -- cut into 1/2-inch slices
1/8 cup beef stock
In a non-reactive bowl, add ½ cup teriyaki sauce to beef strips and toss well. Cover and set aside to marinate (best if allowed to marinate at least 15 minutes). Heat oil in a wok or heavy pan over medium heat, add garlic and cook until fragrant. Remove garlic and turn heat to high. Add onion, quickly sauté for 2-3 minutes, stirring constantly. Drain beef strips (discard marinade) and add to pan, sauté 2-3 minutes. Add broccoli and mushrooms, sauté 2-3 minutes. Add bok choy, sauté 1-2 minutes. Add beef stock and ¼ cup teriyaki sauce. Bring to a boil and reduce heat to medium. Cook for 1-2 minutes to blend flavors.

2 tsp Black Pepper, Freshly Ground
Also Needed:
Crusty White Rolls, To To Serve
Mustard, To Serve
Tomato Ketchup, To Serve
Olive Oil, For Frying
Method:
Dice the red peppers and the cheese.
Peel the onion.
Preheat your oven to 180 degrees celsius.
Add the meats and the onion to a food processor and blitz until completely smooth.
While processing your meat, add a couple of ice cubes to the meat every now and then to keep it cold.
Transfer the meat paste to a bowl, add the red pepper, cheese and marjoram.
Season to taste with salt and black pepper and mix well.
Transfer the meat paste to a loaf tin and bake for 1 - 1 1/2 hours. Leave to cool completely.
To serve, cut the meatloaf into thick slices, heat some oil in a frying pan and fry the meat slices on both sides until golden brown. Cut a crusty white roll horizontally, place the meat on the bottom half of the roll, drizzle with mustard and ketchup and place the top part of the roll on top.

My jerky process starts with selecting the meat. For me that’s lean muscles from the deer or cuts of beef with little to no fat. Roasts like London Broil, Eye of Round or Bottom Round work great for smoked jerky
.
It helps to have the deer and beef semi-froze when you’re cutting it into jerky strips so take it out of the freezer the day before and let it thaw in the refrigerator. Use a good knife and cut the roasts into 1/8” strips across the grain.
The first flavor I'm using is a store bought seasoning called Legg’s Old Plantation Jerky Blend.
I’ve found the easiest way to marinate jerky is to use zip lock bags. You can weigh the bag and calculate exactly how much seasoning you need. Here is what I used for my jerky.
Legg’s Old Plantation Jerky Blend
- 2oz Legg’s Jerky Seasoning
- ¾ teaspoon Pink Salt (6.25%)
- 2 cups water.
In a mixing bowl combine the jerky seasoning, pink salt, and water. Stir to combine and pour over the sliced meat. Work the marinade around the meat and store in the refrigerator overnight.
The next flavor I want to share is an Asian inspired marinade. I also use 4lbs of meat for this recipe, so you can adjust the quantities for how much you are preparing.
Asian Style Jerky
- 12oz Soy Sauce
- 1/4 cup Honey
- 2 Tablespoons Cilantro
- 1 Tablespoon Sesame Oil
- 4 cloves Fresh Garlic Minced
- 2 Tablespoons Fresh Ginger Minced
- 1 Tablespoons Red Chili Paste
- 1 teaspoon Crushed Red Pepper flakes
Combine the above ingredients in a mixing bowl and whisk. Pour the marinade over 4lbs of sliced jerky meat in a zip lock bag. Work the marinade around the meat and refrigerate overnight.
The final recipe is for a Sweet and Spicy Sriracha flavored marinade. This is one of my personal favorites and you can get it as spicy (or mild) as you like. Just adjust the amount of Sriracha that you use, also any hot sauce can be substituted for the Sriracha sauce.
Sweet & Spicy Sriracha Jerky
- 1 cup Worcestershire Sauce

- 1 Tablespoon Crushed Red Pepper Flakes

- 1 teaspoon Ground Black Pepper

Combine the above ingredients in a mixing bowl and whisk. Pour the marinade over 4lbs of sliced jerky meat in a zip lock bag. Work the marinade around the meat and refrigerate overnight.
Once you have all the jerky in the refrigerator let it set for at least 12 hours. The next day take the meat out of the bags and let the majority of the moisture drain. I use several of my pork racks when making jerky to make things easier. Spray each rack with cooking spray so the meat doesn’t stick and arrange the slices in one layer on the racks. You don ‘t want to crowd the racks so air can flow around the meat.
Now it’s time for the smoker. Today I’m using my Ole Hickory Smoker to dry out the jerky. I’m running very little coal, about 2 handfuls, and a couple chunks of seasoned hickory wood. Any smoker can be set up for jerky as long as you keep the temps low. I want to see 140-160 degrees for the first part of the cook. It’s going to take somewhere between 6-8 hours for this load of jerky to dry and it’s not exact, so be patient and check on it along the way.
After 4 hours take a look at the jerky and check for moisture. It should still be soft at this stage and it’s a good time to rotate the racks. As the meat dries some of it may need to come off.
Some of my racks came off at the 6 hour mark and the bigger slices took a couple more hours.
Let the racks sit out on the counter for a little while to cool. Once the jerky is completely room temps it’s time to bag it up.

My jerky process starts with selecting the meat. For me that’s lean muscles from the deer or cuts of beef with little to no fat. Roasts like London Broil, Eye of Round or Bottom Round work great for smoked jerky
.
It helps to have the deer and beef semi-froze when you’re cutting it into jerky strips so take it out of the freezer the day before and let it thaw in the refrigerator. Use a good knife and cut the roasts into 1/8” strips across the grain.
The first flavor I'm using is a store bought seasoning called Legg’s Old Plantation Jerky Blend.
I’ve found the easiest way to marinate jerky is to use zip lock bags. You can weigh the bag and calculate exactly how much seasoning you need. Here is what I used for my jerky.
Legg’s Old Plantation Jerky Blend
- 2oz Legg’s Jerky Seasoning
- ¾ teaspoon Pink Salt (6.25%)
- 2 cups water.
In a mixing bowl combine the jerky seasoning, pink salt, and water. Stir to combine and pour over the sliced meat. Work the marinade around the meat and store in the refrigerator overnight.
The next flavor I want to share is an Asian inspired marinade. I also use 4lbs of meat for this recipe, so you can adjust the quantities for how much you are preparing.
Asian Style Jerky
- 12oz Soy Sauce
- 1/4 cup Honey
- 2 Tablespoons Cilantro
- 1 Tablespoon Sesame Oil
- 4 cloves Fresh Garlic Minced
- 2 Tablespoons Fresh Ginger Minced
- 1 Tablespoons Red Chili Paste
- 1 teaspoon Crushed Red Pepper flakes
Combine the above ingredients in a mixing bowl and whisk. Pour the marinade over 4lbs of sliced jerky meat in a zip lock bag. Work the marinade around the meat and refrigerate overnight.
The final recipe is for a Sweet and Spicy Sriracha flavored marinade. This is one of my personal favorites and you can get it as spicy (or mild) as you like. Just adjust the amount of Sriracha that you use, also any hot sauce can be substituted for the Sriracha sauce.

Bolognese Sauce:
750g Lean Minced Beef
1 Large Onion (chopped)
1 & 1/2 Can Chopped Tomatoes
1 Small Can of Tomato Purée
3 Garlic Cloves (crushed)
Some Mixed Herbs (to taste)
2 Teaspoons of Sugar
1 Beef Stock Cube
A Little Olive Oil for the pan
Heat oil in pan
Add onions, and fry
Add the mince and brown.
Add the crushed garlic
Add the beef stock cube, mixed herbs, can of tomatoes, can of tomato purée, sugar and bring to the boil.
Reduce heat and simmer approx 15 - 20 mins
White Sauce:
For the amount I need I use approx:
100g (4 oz) butter
100g (4 oz) flour
650ml Warm Whole milk
2 generous handfuls of cheddar cheese
Salt and black pepper to taste
Melt butter
Sieve flour gradually into the butter whisking in between.
Keep whisking until smooth.
Gradually add milk while you are whisking and keep whisking until you get a smooth and thick sauce similar the the consistency of freshly made mayonnaise.
Add the cheese and whisk until melted
Salt & pepper to taste
Assemble your lasagne (don't forget to top your lasagne off with as much cheese as you like).

Method:
Making the buns:
Add all ingredients (except the olive oil) to a large bowl. Using an electric handmixer, knead for 15-20 minutes, until your dough is nice and elastic. Drizzle with the olive oil, making sure the complete dough is oiled. Cover the bowl with clingfilm and set aside until the dough has doubled in size (which takes about 1-2 hours).
After the dough has doubled in size, divide into 6 equal pieces, shape into a bun and place on a baking tray lined with baking paper. Cover with a towel and allow to double in size again, about 45 minutes.
Preheat the oven to 200 degrees celsius and add an oven proof dish with water to the oven.
Brush the buns with milk and bake the buns for 15 minutes. Transfer to a plate and immediately cover with a plastic back, to keep them soft.
Making the seasoning:
Add all ingredients for the seasoning to a bowl and whisk until well combined. Set aside until needed.
Making the Patties:
Divide the minced beef into 4 equal pieces and shape to a patty. Each patty should be a little bigger than the buns, as they will shrink during the frying process. Season each patty with the seasoning on each side.
Heat up the oil in a frying pan and fry the patties to your liking, about 3-4 minutes.
After the first side has been fried to your liking, turn them over, place a cheddar cheese slice on top of each pattie and cover the pan with a lid which will help to melt the cheese. Fry for another 3-4 minutes.
To make the Jalapeno-Discs:
Add the pickled Jalapenos to the flour, and mix until well coated. Then transfer to the beaten egg. Let any excess egg drip off, then transfer to the Panko breadcrumbs. Heat the deep fat fryer to 180 degrees celsius. Fry the Jalapeno discs until golden brown. Transfer to a plate lined with baking paper to get rid of any excess oil. Set aside until needed.
To make the Jalapeno-Poppers and the Bacon:
Preaheat the oven to 180 degrees celsius.
Add the bacon to a bacon tray lined with baking paper. Bake for 8-10 minutes until crispy. Transfer to a plate lined with baking paper to get rid of any excess fat.
Make a T-Shaped cut into your Jalapenos and remove the seeds and membranes. Fill the Jalapenos with your 4 cheese-mix. Then add the Jalapenos to the flour, and mix until well coated. Then transfer to the beaten egg. Let any excess egg drip off, then transfer to the breadcrumbs. Then back to the egg and then into the breadcrumbs again. Heat the deep fat fryer to 180 degrees celsius. Fry the Jalapeno until golden brown. Transfer to the oven and bake for 8-10 minutes. Set aside until needed.
To assemble the Burger:
Wash your lettuce and tomatoes.
Slice the tomatoes.
Open up your bun, place the panko-crusted Jalapeno-Discs on the bottom bun, then the first pattie, followed by the second pattie, bacon slices, lettuce and tomato slices.
Spread some mayonnaise on the top part of the bun, as well as some ketchup. Place on top of your burger. Serve immediately with Jalapono-Poppers on the side.
