Skirt steak is a cut of beef steak from the plate. It is long, flat, and prized for its flavor rather than tenderness. It is not to be confused with flank steak, a generally similar adjacent cut nearer the animal's rear quarter.
Both the inside and outside skirt steak are the trimmed, boneless portion of the diaphragm muscle attached to the 6th through 12th ribs on the underside of the short plate. This steak is covered in a tough membrane that should be removed before cooking.
The inside skirt steak is often confused with the flank steak, which is the tail of the porter house and t-bone steaks of the short loin found on the flank. It has similar cooking properties.
In the United States, the NAMP (North American Meat Processors Association) classifies all skirts steaks NAMP 121. NAMP 121 is further subdivided into the outer (outside) skirt steak (NAMP 121C) and the inner (inside) skirt steak (NAMP 121D). The Beef Flank Steak (NAMP 193) is adjacent to the skirt nearer the animal's rear quarter.
A steak is a meat generally sliced perpendicular to the muscle fibers, potentially including a bone. Exceptions, in which the meat is sliced parallel to the fibers, include the skirt steak that is cut from the plate, the flank steak that is cut from the abdominal muscles, and the Silverfinger steak that is cut from the loin and includes three rib bones. When the word "steak" is used without qualification, it generally refers to a beef steak. In a larger sense, there are also fish steaks, ground meat steaks, pork steak and many more varieties.
As a "top-quality ingredient", beef steaks "are perfect if properly grilled", but they can be pan-fried, or broiled. Steak is often grilled in an attempt to replicate the flavor of steak cooked over the glowing coals of an open fire. Steak can also be cooked in sauce, such as in steak and kidney pie, or minced and formed into patties, such as hamburgers.
"Steaks" are also cut from grazing animals, usually farmed, other than cattle, including bison, camel, goat, horse, kangaroo,sheep, ostrich, pigs, reindeer, turkey and deer, as well as various types of fish, especially salmon. Some cured meat, such as gammon, is commonly served as steak.
A skirt is a tube- or cone-shaped garment that hangs from the waist or hips and covers all or part of the legs.
The hemline of skirts can vary from micro to floor-length and can vary according to cultural conceptions of modesty and aesthetics as well as the wearer's personal taste, which can be influenced by such factors as fashion and social context. Most skirts are self-standing garments, but some skirt-looking panels may be part of another garment such as leggings, shorts, and swimsuits.
In the western world, skirts are more commonly worn by women; with some exceptions such as the izaar which is worn by Muslim cultures and the kilt which is a traditional men's garment in Scotland and Ireland. Some fashion designers, such as Jean Paul Gaultier, have shown men's skirts. Other cultures traditionally wear skirts.
At its simplest, a skirt can be a draped garment made out of a single piece of material (such as pareos), but most skirts are fitted to the body at the waist or hips and fuller below, with the fullness introduced by means of darts, gores, pleats, or panels. Modern skirts are usually made of light to mid-weight fabrics, such as denim, jersey, worsted, or poplin. Skirts of thin or clingy fabrics are often worn with slips to make the material of the skirt drape better and for modesty.

James Trevor "Jamie" Oliver, MBE (born 27 May 1975) is an English celebrity chef, restaurateur, and media personality known for his food-focused television shows, cookbooks and more recently his global campaign for better food education.
Oliver was born and raised in the village of Clavering. His parents ran a pub/restaurant, The Cricketers, where he practiced cooking in the kitchen with his parents. He was educated at Newport Free Grammar School.
Oliver left school at age sixteen with two GCSE qualifications in Art and Geology and went on to attend Westminster Technical College now Westminster Kingsway College. He then earned a City & Guilds National Vocational Qualification (NVQ) in home economics.
His first job was a pastry chef at Antonio Carluccio's Neal Street restaurant, where he first gained experience with preparing Italian cuisine, and developed a relationship with his mentor Gennaro Contaldo. (Later in his career, Oliver employed Contaldo to help run his successful collection of high street restaurants, Jamie's Italian), Oliver moved to The River Café, Fulham, as a sous chef. It was there that he was noticed by the BBC in 1997, after making an unscripted appearance in a documentary about the restaurant, Christmas at the River Cafe.

Skirt Steak is what I call one of the "character" cuts. It doesn't have the glamor or showmanship of Filet Mignon, Ribeye, or New York Strip, but it also doesn't have the cost. What it does have, is some great flavor, and when treated right, a great texture and tenderness. It's also one of my favorite cuts of steak to marinate - which is exactly what I do here. It's a very simple marinade with just a few ingredients: Mustard Balsamic Vinegar Worcestershire Sauce A bit of Maple Syrup or honey And some garlic If you let the skirt steak sit on that marinade for a few hours, the flavors infuse with the meat, and make it a bit more tender. HONEY BALSAMIC SKIRT STEAK and GORGONZOLA WEDGE WITH HOMEMADE RANCH DRESSING 1 skirt steak ¼ cup balsamic 2 teaspoons Worcestershire 1-2 Tbl honey 2 tsp ground mustard 1 Tbl brown sugar In a small bowl, whisk together the marinade. Pour over the skirt steak in a zip top bag. Allow to marinate for 30 minutes. Remove the steak from the marinade, pat dry, and grill for about 5 minutes per side on a preheated grill. Cover with foil and allow to rest for 10 minutes before slicing against the grain. I heat vegetable oil in cast iron pan and then added the puree so it could start reducing. I added the tenderized Skirt Steak and made the magic happen.
