There are loads of different recipes for Shakshouka out there, but this is how I like to do mine and for £4 a portion it ain't too bad! SHAKSHOUKA
Ingredients
½ medium red bell pepper, chopped
½ medium yellow bell pepper, chopped
½ medium green capsicum, chopped
2 tablespoons oil
1 medium onion, finely chopped
1 tablespoon chopped garlic
1 medium tomato, finely chopped
1 teaspoon red chilli powder
2 teaspoons cumin powder
Salt to taste
4 eggs
½ cup crumbled feta cheese
Chopped fresh coriander leaves for garnishing
Method
1. Heat oil in a non-stick pan. Add onion, mix and sauté till golden. Add garlic and mix well.
2. Reduce the heat, add tomato and mix well. Add some water and cook for a minute.
3. Add the red bell pepper, yellow bell pepper, green capsicum and some water, mix and cook for 4-5 minutes.
4. Add chilli powder and cumin powder, mix and cook on low heat. Add salt and mix well.
5. Create some space in the pan. Add eggs in the centre and let them poach them. Cover and cook on low heat for 5-7 minutes.
6. Garnish with feta cheese and chopped coriander leaves and serve hot.
Preparation Time: 5-10 minutes
Cooking Time: 12-15 minutes

Shakshouka
Shakshouka or shakshuka (Tunisian Arabic: شكشوكة; Hebrew: שקשוקה) is a dish of eggs poached in a sauce of tomatoes, chili peppers, and onions, often spiced with cumin. It is believed to have a Tunisian origin.
Etymology
Shakshouka means "a mixture" in Tunisian Arabic or other Maghrebi Arabic dialects. It is likely that it was first known as chakchouka, a Berber word meaning a vegetable ragout, although "shakshek" means "to shake", in Tunisian Arabic, Berber and Hebrew, giving a possible punic origin to the name of the dish.
Chakchouk is also a very common surname in Tunisia
History
Shakshouka is a staple of Tunisian, Libyan, Algerian, Moroccan, and Egyptian cuisines, traditionally served in a cast iron pan or tajine with bread to mop up the sauce. It is also popular in Israel, where it was introduced by Tunisian Jews and Maghrebi Jews, hundreds of thousands of whom immigrated to Israel during the 1950s.
According to food writer Claudia Roden, Tunisian cooks added artichoke hearts, potatoes and broad beans to the dish. Because eggs are the main ingredient, it is often on breakfast menus, but in Israel, it is also a popular evening meal. It has been said to challenge hummus and falafel as a national favourite, especially in the winter. According to some food historians, the dish was invented in the Ottoman Empire, spreading throughout the Middle East and Spain, where it is often served with spicy sausage. Another belief is that it hails from Yemen, where it is served with zhug, a hot green paste. Some versions include salty cheeses but traditional recipes are very basic, consisting merely of crushed tomatoes, hot peppers, garlic, salt, paprika, olive oil and poached eggs.

½ medium red bell pepper, chopped

SHAKSHOUKA
Ingredients
½ medium red bell pepper, chopped
½ medium yellow bell pepper, chopped
½ medium green capsicum, chopped
2 tablespoons oil
1 medium onion, finely chopped
1 tablespoon chopped garlic
1 medium tomato, finely chopped
1 teaspoon red chilli powder
2 teaspoons cumin powder
Salt to taste
4 eggs
½ cup crumbled feta cheese
Chopped fresh coriander leaves for garnishing
Method
1. Heat oil in a non-stick pan. Add onion, mix and sauté till golden. Add garlic and mix well.
2. Reduce the heat, add tomato and mix well. Add some water and cook for a minute.
3. Add the red bell pepper, yellow bell pepper, green capsicum and some water, mix and cook for 4-5 minutes.
4. Add chilli powder and cumin powder, mix and cook on low heat. Add salt and mix well.
5. Create some space in the pan. Add eggs in the centre and let them poach them. Cover and cook on low heat for 5-7 minutes.
6. Garnish with feta cheese and chopped coriander leaves and serve hot.
Preparation Time: 5-10 minutes
Cooking Time: 12-15 minutes
