Nanaimo Bar Recipe:

Nanaimo Bars : A favourite Canadian dessert
Nanaimo bars are considered to be a Canadian invented recipe. These are included in almost all dessert trays that are served at any kind of party or function here. They are sweet, rich and very very good!
Because of the required chilling time for each layer they are time consuming but sooooo worth it!
Bottom Layer:
1/2 cup butter,
1/4 cup granulated white sugar
1/3 cup unsweetened coco

3/4 cup butter, melted

2 1/2 cups graham cracker crumbs

Nanaimo Bar Recipe:
Bottom Layer
• ½ cup butter

Second Layer
½ cup unsalted butter
• 2 Tbsp. and 2 Tsp. cream
• 2 Tbsp. vanilla custard powder
• 2 cups icing sugar
• Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.
Third Layer
• 4 squares semi-sweet chocolate (1 oz. each)
• 2 Tbsp. unsalted butter
• Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.

Nanaimo bars are considered to be a Canadian invented recipe. These are included in almost all dessert trays that are served at any kind of party or function here. They are sweet, rich and very very good!
Because of the required chilling time for each layer they are time consuming but sooooo worth it!
Bottom Layer:
1/2 cup butter,
1/4 cup granulated white sugar
1/3 cup unsweetened cocoa powder
1 large egg, beaten
1 teaspoon pure vanilla extract
2 cups graham cracker crumbs
1 cup coconut (either sweetened or unsweetened)
1/2 cup walnuts or pecans, coarsely chopped
Middle Layer:
1/4 cup butter
2 - 3 milk or cream
2 tablespoons vanilla custard powder (Bird's) or instant vanilla pudding powder
1/2 teaspoon pure vanilla extract
2 cups powdered sugar (confectioners or icing) sugar
Top Layer:
4 ounces semisweet chocolate, chopped (or chocolate chips, 3 tablespoons of chocolate chips equals a one once square of chocolate
1 tablespoon butter
Nanaimo Bars: Butter or spray a 9 x 9 inch (23 x 23 cm) pan with a non stick vegetable spray. Or line with tin foil and spray the tin foil with cooking spray.
Bottom Layer: In a saucepan over low heat, melt the butter. Stir in the sugar and cocoa powder and then gradually whisk in the beaten egg. Cook, stirring constantly, until the mixture thickens (1 - 2 minutes). Remove from heat and stir in the vanilla extract, graham cracker crumbs, coconut, and chopped nuts. Press the mixture evenly onto the bottom of the prepared pan. Cover and refrigerate until firm (about an hour).
Middle Layer: In your electric mixer, or with a hand mixer, beat the butter until smooth and creamy. Add the remaining ingredients and beat until the mixture is smooth. If the mixture is too thick to spread, add a little more milk. Spread the filling over the bottom layer, cover, and refrigerate until firm (about 30 minutes).
Top Layer: Melt the chocolate and butter in the microwave. Spread the melted chocolate evenly over the filling and refrigerate until the chocolate has set.

Nanaimo has been dubbed the "Bathtub Racing Capital of the World" and "Harbour City". It is also fondly known as the "Hub, Tub, and Pub City" because of its association with bathtub racing and numerous "watering holes" in Old Nanaimo.
The Bastion is an historic octagonal shaped bastion or fortification located at 98 Front Street in Nanaimo. The Hudson's Bay Company (HBC), which then held a royal lease on all of what was then the Colony of Vancouver Island, built it between 1853 and 1855 to defend its coal mining operations in Nanaimo. It is the oldest free-standing HBC fort in North America.
Square logs were used for the walls of the three-storey building whose third floor extends out over the lower floors. It has been called "Nanaimo's premier landmark", because of its shape and its "high visibility from both land and sea." In 1891 and again in 1979 it was moved a short distance for historic preservation purposes.
On December 12, 1985, the city of Nanaimo designated it a local heritage site.

Peanut Butter Nanaimo Bars- with yoyomax12

Base layer:
3/4 cup butter, melted
1/3 cup granulated sugar
2 beaten eggs
2 1/2 cups graham cracker crumbs
3/4 cup shredded sweetened coconut
3/4 cup finely chopped roasted peanuts
1/3 cup cocoa powder
Combine the base layer ingredients and press them into the bottom of a 9x13" pan that has been lined with a piece of parchment paper. Grease the parchment and leave some long pieces hanging over the edge of the pan to use as handles to remove the square from the pan.
Bake at 350F for about 12-15 minutes until firm and no longer shiny. I find that it takes an extra 6-8 minutes of baking with a glass pan.
Allow to cool.
Top with filling (below)
Filling (middle) layer:
1 1/4 cups smooth peanut butter
1/3 cup butter
3 cups icing sugar
1/3 cup milk
Melt the peanut butter and butter in a bowl in the microwave or on the stovetop on low. Cook until butter is melted and peanut butter is runny. Stir well and pour into a large bowl.
Add the icing sugar and the milk and blend until smooth.
Spread over cooled base layer.
Top layer:
8 oz semisweet chocolate
2 tbsp butter
Melt the butter and chocolate together on the stove or microwave.
Spread evenly over the filling layer.
Cool in the refrigerator until chocolate is almost set.
Score the chocolate with a sharp knife and then allow to cool completely.
Remove from pan using parchment handles and cut into squares.
Store at room temperature or in the fridge.
Can be frozen.

Having now visited Quebec City in both the summer and winter I'm officially naming it our favorite city in Canada. I've never visited a city where I felt such a radical difference between seasons. Coming back here in the winter felt like falling in love and rediscovering Quebec City all over again. We bundled up early on a Sunday morning to wander around the Old City before the masses converged. We ended up walking (or should I say sliding/skating) down Petit Champlain marveling at all of the festive and Christmas decorations before warming up next to a fire and then grabbing a hot chocolate, Nanaimo bar and cookies. Later we wandered down to the Saint Lawrence where we could see massive chunks of ice floating down the river. Finally, we checked out a few different vantage points where we could admire some of the best city views and snap photos of the Château Frontenac.

And how is the ice princess this morning?
Doing very well. This morning we are heading in to the Old City. We're going to do a bit of a walking tour on our own. Let's head into town and check it out.
We are about to enter the old city.
There are real benefits to waking up early on a Sunday morning. We've practically got the old part of the city to ourselves. And what a different feel. In the summer it had a totally different vibe and now in the winter it's like an entirely new city to explore.
So I just noticed there are railings all along the street and I think it is because it is so steep and it gets so icy in the wintertime that if they didn't have these babies people would just be sliding all the way down. Well, we've been sliding a lot anyways. Yes.
So it is kind of cool being here in the winter because even though it is February it still feels like Christmas never left. Like we still have Christmas trees, Christmas lights, lots of red. So it feels very festive. Absolutely.
We found a little place where to warm up. There is a little outdoor fireplace. It is our own personal fire place.
And we really need it after all that walking. Put your legs up by the fire.
It's a dragon! It's a snow dragon! A fire breathing dragon.
Alright, it is time to warm up. Let's go for a hot chocolate and maybe even a cupcake. Yum yum. Lead the way.

I'm not surprised you would go for that. You're always looking for fudge wherever we go. I don't have anything to say - it's just pure bliss.
Now if you can believe it we were bonkers enough to be doing ice canoeing out in the Saint Lawrence with those massive chunks of ice. It was just one of the craziest things we've ever done. We can't wait to show you that video as well.
So now we're working our way up to the Chateau Frontenac. That means climbing a lot of steps. I'm already out of breath. We still have a few more to go.

Having now visited Quebec City in both the summer and winter I'm officially naming it our favorite city in Canada. I've never visited a city where I felt such a radical difference between seasons. Coming back here in the winter felt like falling in love and rediscovering Quebec City all over again. We bundled up early on a Sunday morning to wander around the Old City before the masses converged. We ended up walking (or should I say sliding/skating) down Petit Champlain marveling at all of the festive and Christmas decorations before warming up next to a fire and then grabbing a hot chocolate, Nanaimo bar and cookies. Later we wandered down to the Saint Lawrence where we could see massive chunks of ice floating down the river. Finally, we checked out a few different vantage points where we could admire some of the best city views and snap photos of the Château Frontenac.

Faster, horses! Faster!
And how is the ice princess this morning?
Doing very well. This morning we are heading in to the Old City. We're going to do a bit of a walking tour on our own. Let's head into town and check it out.
We are about to enter the old city.
There are real benefits to waking up early on a Sunday morning. We've practically got the old part of the city to ourselves. And what a different feel. In the summer it had a totally different vibe and now in the winter it's like an entirely new city to explore.
So I just noticed there are railings all along the street and I think it is because it is so steep and it gets so icy in the wintertime that if they didn't have these babies people would just be sliding all the way down. Well, we've been sliding a lot anyways. Yes.
So it is kind of cool being here in the winter because even though it is February it still feels like Christmas never left. Like we still have Christmas trees, Christmas lights, lots of red. So it feels very festive. Absolutely.
We found a little place where to warm up. There is a little outdoor fireplace. It is our own personal fire place.
And we really need it after all that walking. Put your legs up by the fire.
It's a dragon! It's a snow dragon! A fire breathing dragon.
Alright, it is time to warm up. Let's go for a hot chocolate and maybe even a cupcake. Yum yum. Lead the way.
How is that hot chocolate? Mmmm. That is so good after that really really cold walk. Alright, it's time to lick your lips. You've got cream all over your face. There you go.

The Vancouver Island Exploration Guide is like a portable, interactive travel guide that fits in your pocket.
Filters allow you to sort by type of activity, region, cost or distance. Because it uses I-Phone technology, a GPS works out where you are and what's around you.
Moore wrote the content - she left the design of the app to a well known app publisher.
The relatively new technology is changing the way the tourism industry markets itself and savvy users explore regions.
Since launching the app two weeks ago, Moore says she has already sold the software in 9 different countries

A mid-island travel writer has come up with an "app" that helps visitors and locals get the most out of exploring the island.
The Vancouver Island Exploration Guide is like a portable, interactive travel guide that fits in your pocket.
Filters allow you to sort by type of activity, region, cost or distance. Because it uses I-Phone technology, a GPS works out where you are and what's around you.
Moore wrote the content - she left the design of the app to a well known app publisher.
The relatively new technology is changing the way the tourism industry markets itself and savvy users explore regions.
Since launching the app two weeks ago, Moore says she has already sold the software in 9 different countries

We safely towed our 25ft travel trailer with a Jeep Grand Cherokee and drove it right onto the ship. These massive ferries are like cruise ships with plenty of amenities and lots of space to explore.

NANAIMO - Canada Day is all about backyard parties, fireworks and flag waving, but the Provincial Government isn't ready to let weekend revellers forget the some times tragic side of the national holiday. British Columbia's Ministry of Justice says over the past five year an average of two people have been killed on roads or highways each Canada Day, and over 150 are injured. Vancouver Island averages 92 collisions resulting in 23 injuries of varying seriousness.
" We want people to be very vigilant," said Nanaimo RCMP traffic Cprl. Norman Smith, "of the fact that there may be more impaired drivers out there." Ministry of Justice officials says the number one cause of the mass amount of vehicle collisions on Canada Day are due to alcohol impairment. Nanaimo RCMP is echoing the provinces warning to driver to stay sober, and slow down this weekend, and say they will significantly beef up enforcement on Sunday.
