Sayward Farm Bread
Sayward Farm Bread
On our farm in Saanich, B.C. we have had many WWOOFers who have asked us for our bread recipe. We have been making this version of our bread and have not bought a loaf of bread for over five years now. Recipe: For 2 loaves: 4 cups of stone ground whole wheat flour (currently we are grinding Metchosin grown Red Fife) 3 cups unbleached white flour ½ tsp Traditional yeast (keep jar in freezer) 2 tsps salt In a large ceramic or glass bowl, combine all of these dry ingredients and mix thoroughly. Then add 3 1/2 cups of lukewarm water ( add 2 Tbsp of lemon juice to further break down the Phytic acid) and mix with a wooden spoon. When it is mostly mixed, dump onto a floured counter top and begin to mix by hand. Keep some white flour handy and sprinkle onto mix when it begins to get sticky. Knead for a couple of minutes and then return to bowl. Cover the bowl and let it sit in a warm place for 17-30 hours. We usually wait 18-24 hours. After 18-24 hours, lightly oil two pans with covers. We use small blue enamel roasting pans. Then lightly oil a wooden spoon and use it to turn the dough over until it is completely punched down. Again, dump onto a floured counter top and knead for a few minutes adding sprinkled flour when sticky. Cut the dough in half and knead each half for a couple of minutes and then pour each half into the two baking pans and cover. Let these sit for about 4 hours (until the loaves have risen to almost touch the lids) and then place into a pre-heated 400 degree oven. Just before we put into the oven, we usually sprinkle some sesame seeds or rolled oats onto the tops of the loaves. Bake for 30 minutes with the lids on and then 18 minutes with the lids off. Turn out onto a drying rack. Fresh, warm bread out of the oven with lots of creamy butter is one of God's great gifts and the smell of baking bread is heavenly!
