A fast casual restaurant is a type of restaurant that does not offer full table service, but promises a higher quality of food and atmosphere than a fast food restaurant. In the US, it is a relatively new and growing concept positioned between fast food and casual dining. The typical cost per meal is in the US$8–$15 range.
The concept did not become a popular and common one for restaurants until the early to mid 1990s, and did not truly become mainstream until the beginning of the 2010s.
During the economic downturn beginning in 2007, fast casual dining saw an uptick in sales from the 18–34 demographic. Customers with limited discretionary meal spending tend to use it on dining perceived as healthier.
Counter service accompanied by handmade food (often visible via an open kitchen) is typical. Alcohol may be served. Dishes like steak may be offered. The menu is usually limited to an extended over-counter display, and options in the way the food is prepared are emphasized. Health-conscious items have a larger-than-normal portion of the menu. Some restaurants may emphasize high quality ingredients like free range chicken and freshly made salsas. While full table service is not offered, conveniences like non-plastic utensils and plates are common.

Miles says the mediterranean family meals it launched in the third quarter are very popular and he says they’ll continue to ‘build that out’ and that customers will likely ‘see more kabobs and new humus’ on the menu. In addition to opening new outlets in existing markets, Miles says he hopes Zoes will be able to open a couple of locations in Kansas City in 2015. Zoes Kitchen CEO Kevin Miles says the four-fold growth in the fast casual dining space compared to full and quick service establishments in 2014 will continue in 2015 as consumers look for a better dining experience without having to tip. Miles says the fresh ingredients Zoes' uses, along with being able to have a glass of wine or a bottle of beer, are just a few reasons why customers visit its outlets. Shake Shack vs. Chick-Fil-A: Which Fried Chicken Sandwich Is Better?
NEW YORK (TheStreet) --Is the fried chicken sandwich ready to have its moment in the deep fryer?
A headline in the flood blog Eater proclaimed in July, Why It's Finally Time for a Fast-Casual Fried Chicken Explosion. The post goes on to detail an effort from a wildly successful new restaurant chain to upgrade a classic, the fried chicken sandwich.
Established chicken chain Chick-Fil-A claims to have invented the fried chicken sandwich in the 1960s. It started selling the treat in 1964 on a steamed bun with pickles. It now has 1,900 locations and makes about $6 billion annually. That's a lot of chicken.

Upstart fast-casual burger joint Shake Shack (SHAK) has taken notice. Danny Meyer's IPO-fueled enterprise filed a trademark application for "Chicken Shack" earlier this year (sparking speculation of a sister chain to the flagship brand). This summer, Shake Shack has been testing a fried chicken sandwich at its three Brooklyn locations.
Like with its primary innovation -- better ingredients and preparation methods -- Shake Shack is aiming toward food habits of the future: While burger sales still eclipse chicken sales at fast-food restaurants, according to research firm NPD Group ($7.9 billion vs. $5.4 billion in the year ending March 2015), chicken is growing at a faster clip, up 3% in the same period, versus 1% for burgers.
So, we at TheStreet decided to see how the two chicken sandwiches stacked up. I went to a Shake Shack location in the hip Dumbo neighborhood in Brooklyn to pick up a dozen Chicken Shack sandwiches (along with a small fries and a vanilla milkshake -- it is 'Shake' Shack, after all). Meanwhile, a colleague of mine scooped up a sack of sandwiches from the Chick-Fil-A Express at New York University's food court at 5 University Place in Manhattan (it's the only location open in New York currently, though the company is currently building a large shop in midtown that is scheduled to open this fall).
Six lucky sandwich testers were selected among other staffers at TheStreet and we used the highly scientific "plate method" to determine a winner. After eating the sandwiches, which were left unwrapped, one on each plate so as to obscure their true origin, they each handed me the plate of the sandwich they preferred. I also voted (though, in the spirit of full disclosure, I knew which sandwich was which; I pledge here on the graves of the delicious chickens we consumed that I chose the sandwich I enjoyed best).
Both sandwiches had their advocates. Without knowing which was which, the testers praised the more premium appearance of the Shake Shack sandwich and what they perceived as a higher quality of chicken. Others thought that the Chick-Fil-A offering was moister, despite having no sauce, and, in its simplicity, just tasted better.

In the end, the vote -- again, using the precise plate method -- was extremely close, with Chick-Fil-A taking it four to three. In a less scientific survey, when extra sandwiches were passed around the office for those lucky enough to get one, the "smile" count was a tie for both products.

Nghi Nguyen is founder and operator of Velo Restaurant, a single unit fast casual restaurant concept. It’s located on London’s Tooley Street, right near the big skyscraper called the Shard.
Nghi spends a lot of time out of the shop, and keeps in touch via email, Google Hangouts and the Logitech CCTV system.
He started in food service in April 2008 developing the restaurant system he uses today. Coming from a background in investment banking, Nghi embraced technology from day 1.
His advice to his 20-year old self is trust your instincts, be curious, and work very hard.
He has discovered there’s no universal formula when working with people – there’s luck involved in finding the right manager who can look after your interests when you are not in the store.
There’s two things he would like to automate – the quality of service, and the quality of the food. Feedback and monitoring mechanisms would come in handy here!
Nghi uses Wunderlist extensively for checklists and tracking tasks.
He had two worst moments:
losing £20k in Value Added Tax then winning a case with the HMRC to get it back
ordering an 81sq ft pane of glass and having no one on hand to fit it
Nghi uses Coniq which is a marketing platform with built-in tracking of redemptions. Coniq allows him to send an email out to his database and track who comes in and redeems the offer. Nghi has grown his database using Coniq from 800 to 6000 people and it’s his single most important marketing tool.
Next up is scaling the business through catering. Nghi has identified an opportunity to use the kitchen out of hours and put together a catering business.
Nghi is most excited about the fast casual concept, the bringing together of food and people – which there will always be a need for.
He loves The Caterer magazine for industry information.

On Foodable Weekly: Can Quick-Service Brands Make the Shift into Fast Casual?
In this episode of On Foodable Weekly, brought to you by the Foodable WebTV Network, show host Paul Barron and QSR Magazine editor, Sam Oches, chime in on the attempts of quick-service chain restaurants to enter the fast casual sphere. What are these big guys doing right and what are they doing wrong? Is it even possible for QSRs to make the jump or will they plummet into profitless pits?
“It’s an interesting move. I think in the last couple of years, a lot of QSR concepts have been exploring that idea of upgrading to fast casual. And you know, it’s worked to some degree for some,” Oches said. “But on the other hand, I think there’s a lot of evidence for why some of these bigger legacy QSR brands should probably just stick with QSR.”
The approaches QSRs have been taking vary. Wendy’s has been steadily adding fast casual components to its menu without full-out embracing the movement, while KFC jumped headfirst into fast-casual with its KFC Eleven concept, yet it ultimately failed. Why are these brands doing what they do?
Barron and Oches first discuss Del Taco and Rubio’s, two brands whose menus are primarily fresh mex. In a decade, Rubio’s has gone from going toe-to-toe with Taco Bell to successfully elevating itself to fast casual, yet Del Taco, which is attempting to do the same thing, may struggle. This could be due in part to the fact Del Taco has already been established for 50 years, whereas Rubio’s has a younger history, Oches said. As a legacy consumer chain with a loyal customer base who has an expectation with their visit, it would be challenging to make that leap and requires a huge investment in the supply chain and equipment of the franchise.
The next two brands Barron and Oches explore are Sonic and McDonald’s. Both brands have been around for nearly as long as the other and have the same brand trademarks, yet, Barron reveals according to the Restaurant Social Media Index, Sonic has increased its score from 73.5 to 88.8 in consumer sentiment, whereas McDonald’s has fallen from an 80.82 to 67 in the last four quarters.
Why?
“Sonic is very much a middle-class brand…that really resonates in the Midwest and in the South, and it’s something that is kind of a down-home brand, and I don’t think they try to pretend they’re much more than that,” Oches said. “Whereas McDonald’s wants to assert itself as the leader in limited-service restaurants. And if that means upgrading the menu, if that means upgrading its restaurants, it’s going to try to do that. I don’t think Sonic is much going to try to play that ballgame.”
Yet, Oches doesn’t count McDonald’s out of the running.
“I would never bet against McDonald’s. When you look back at the last 20 to 30 years, you actually see McDonald’s go through this a couple of times,” he said.
He believes the company should aim for the millennial demographic, which is now at the cusp of starting families, in an authentic way. By winning back this generation and having them bring their children to get Happy Meals, McDonald’s will win the next generation as well. Zoes Kitchen CEO Kevin Miles says the four-fold growth in the fast casual dining space compared to full and quick service establishments in 2014 will continue in 2015 as consumers look for a better dining experience without having to tip. Miles says the fresh ingredients Zoes' uses, along with being able to have a glass of wine or a bottle of beer, are just a few reasons why customers visit its outlets. Miles says the mediterranean family meals it launched in the third quarter are very popular and he says they’ll continue to ‘build that out’ and that customers will likely ‘see more kabobs and new humus’ on the menu. In addition to opening new outlets in existing markets, Miles says he hopes Zoes will be able to open a couple of locations in Kansas City in 2015. Right now, Zoes has more than 125 locations in 15 states and believes it has the potential to open 1,600 outlets across the country. TheStreet’s Ruben Ramirez reports from Orlando.

A headline in the flood blog Eater proclaimed in July, Why It's Finally Time for a Fast-Casual Fried Chicken Explosion. The post goes on to detail an effort from a wildly successful new restaurant chain to upgrade a classic, the fried chicken sandwich.
Established chicken chain Chick-Fil-A claims to have invented the fried chicken sandwich in the 1960s. It started selling the treat in 1964 on a steamed bun with pickles. It now has 1,900 locations and makes about $6 billion annually. That's a lot of chicken.

Upstart fast-casual burger joint Shake Shack (SHAK) has taken notice. Danny Meyer's IPO-fueled enterprise filed a trademark application for "Chicken Shack" earlier this year (sparking speculation of a sister chain to the flagship brand). This summer, Shake Shack has been testing a fried chicken sandwich at its three Brooklyn locations.
Like with its primary innovation -- better ingredients and preparation methods -- Shake Shack is aiming toward food habits of the future: While burger sales still eclipse chicken sales at fast-food restaurants, according to research firm NPD Group ($7.9 billion vs. $5.4 billion in the year ending March 2015), chicken is growing at a faster clip, up 3% in the same period, versus 1% for burgers.
So, we at TheStreet decided to see how the two chicken sandwiches stacked up. I went to a Shake Shack location in the hip Dumbo neighborhood in Brooklyn to pick up a dozen Chicken Shack sandwiches (along with a small fries and a vanilla milkshake -- it is 'Shake' Shack, after all). Meanwhile, a colleague of mine scooped up a sack of sandwiches from the Chick-Fil-A Express at New York University's food court at 5 University Place in Manhattan (it's the only location open in New York currently, though the company is currently building a large shop in midtown that is scheduled to open this fall).
Six lucky sandwich testers were selected among other staffers at TheStreet and we used the highly scientific "plate method" to determine a winner. After eating the sandwiches, which were left unwrapped, one on each plate so as to obscure their true origin, they each handed me the plate of the sandwich they preferred. I also voted (though, in the spirit of full disclosure, I knew which sandwich was which; I pledge here on the graves of the delicious chickens we consumed that I chose the sandwich I enjoyed best).
Both sandwiches had their advocates. Without knowing which was which, the testers praised the more premium appearance of the Shake Shack sandwich and what they perceived as a higher quality of chicken. Others thought that the Chick-Fil-A offering was moister, despite having no sauce, and, in its simplicity, just tasted better.

In the end, the vote -- again, using the precise plate method -- was extremely close, with Chick-Fil-A taking it four to three. In a less scientific survey, when extra sandwiches were passed around the office for those lucky enough to get one, the "smile" count was a tie for both products.

Nghi Nguyen is founder and operator of Velo Restaurant, a single unit fast casual restaurant concept. It’s located on London’s Tooley Street, right near the big skyscraper called the Shard.
Nghi spends a lot of time out of the shop, and keeps in touch via email, Google Hangouts and the Logitech CCTV system.
He started in food service in April 2008 developing the restaurant system he uses today. Coming from a background in investment banking, Nghi embraced technology from day 1.
His advice to his 20-year old self is trust your instincts, be curious, and work very hard.
He has discovered there’s no universal formula when working with people – there’s luck involved in finding the right manager who can look after your interests when you are not in the store.
There’s two things he would like to automate – the quality of service, and the quality of the food. Feedback and monitoring mechanisms would come in handy here!
Nghi uses Wunderlist extensively for checklists and tracking tasks.
He had two worst moments:
losing £20k in Value Added Tax then winning a case with the HMRC to get it back
ordering an 81sq ft pane of glass and having no one on hand to fit it
Nghi uses Coniq which is a marketing platform with built-in tracking of redemptions. Coniq allows him to send an email out to his database and track who comes in and redeems the offer. Nghi has grown his database using Coniq from 800 to 6000 people and it’s his single most important marketing tool.
Next up is scaling the business through catering. Nghi has identified an opportunity to use the kitchen out of hours and put together a catering business.
Nghi is most excited about the fast casual concept, the bringing together of food and people – which there will always be a need for.
